Union Square Greenmarket Tomorrow

I need to do some serious shopping at the Greenmarket tomorrow, but I have meetings until late. Does anyone know what time the vendors will be up and running in the AM? I know they get there early and tomorrow is probably their biggest day, but do you think they will be selling by 7?

Best weddings in NY?

Make sure the tide is high for any wedding at the World's Fair. The waterfront there is a tidal mud flat that is exposed at low tide and the aroma is like the porta-potty after a Nascar event.

This morning, my wife and I brought our two kids (four and three) into the City for brunch at Alice’s Teacup. There are at least three of these Alice In Wonderland themed places in Manhattan. I think they are trying for the Serendipity 3 vibe.

When we the hostess and asked for a table for four, the manager asked her “Are two of them kids?” When it was clear that the answer was yes, she told us there was a two hour wait for a table. Kinda surprising when there was an open table for four right behind her. I asked about the empty table, and she said it was reserved. Strange, since they only take reservations for parties of six or more. What was even stranger was that they seated four adult tourists with no reservation at the same table three seconds after turning us away.

I'm cooking St Patrick's Day dinner for a very large crowd, and I will need to make the corned beef in shifts.

Any idea how to store it for a couple of hours without it going dry?

I was considering keeping the first wave in a foil covered aluminum lasagna pan in the oven with about an inch of water in the bottom. Any other suggestions would be appreciated.

I put the fresh on the bottom. I also sprinkle a little canola oil on the newspaper.

Large Marble Board

I'm looking to get a large slab of marble to roll dough on. Does anyone know of a stoneyard in Queens or Brooklyn that might have some remnants? Most of the places I see listed online or in the Yellow pages are showrooms, so they don't have the inexpensive remnants that you can get in an actual yard.

how to make the best scrambled eggs and omelet?

For Omlettes, I use Alton Brown's Good Eats method and have gotten great results. One of the keys is to use room temperature eggs. According to AB, the French don't refrigerate their eggs so many French inspired recipes don't translate well, by the time the eggs warm up in the pan, the bottoms are crusty.

I've made them a few times his way and the results were amazing.

Any info on new bakery on Austin St.?

The new place (Martha's Country Bakery) has opened up. I've gotten cupcakes there twice. They're pretty good. I wouldn't travel too far out of my way for them, but they're a nice addition to the neighborhood. I haven't tried their pies, but I overheard a customer raving about one she had bought the day before.

Whole Foods-type store in Queens?

There is construction at the site on Woodhaven Blvd. and Metropolitan Ave. There wers major rumors that it would be a Trader Joe's, but neither Trader Joe's nor Whole Foods has that site listed as a future store.

Recommended Portable Dishwashers?

I don't think there is a truly portable dishwasher that holds 8 place settings. I use a small Heier, but even with two adults and two kids, it's a squeeze.

Simple spaghetti/tomato sauce recipe

I use Mario's recipe as well. I don't use all the juice from the whole tomatoes, probably only half of what is in the can. That cuts down on the wateriness.

Non-trans-fat alternatives to shortening?

I have used the "No Trans Fat" Crisco for frying chicken, it worked fine. Haven't used it for baking yet.

The downside of fried turkey

I watched a guy set his camper on fire while frying a turkey. Would have been funny if he hadn't come within inches of torching his kids at the same time.

Dumb Question...... What is a heirloom vegetable?

One of the reason that heirlooms have become popular is because many of the commercially produced seeds emphasize qualities that make them easier to harvest mechanically, or stay "fresh" (and I use that term loosely), rather than purely for taste.

Uneven Stove

The gas range in my apartment is not installed levelly. This is a major hassle when trying to bake or even to fry on the stovetop.

Does anyone have any suggestions on how to correct this? I live in an apartment and getting a new stove isn't an option.
