Exactly what we were wondering. My mom has her butcher trim most of the fat. My theory was that meat is being raised leaner, so I wanted to try a more "marbled" cut - if there is such a thing with brisket. Others were saying there was too much fat trimmed off and that was the problem. I'll give your technique a shot. Thank you!

I'm looking for a good meat market or butcher near Elmhurst. In particular, I'd like a brisket the way I remember it in my childhood - when it cooks down to shreds. The way I've had it the last few years is more like leather. I'd like to try a better cut to see if it makes a difference. Any recommendations?

Farmers' Markets and CSA

I'll second lulubelle on Angelic Organics for a CSA. They practice biodynamic farming to great success - their veggies are amazing! The owner of the farm is John Petersen, who is the subject of a popular documentary "The Real Dirt on Farmer John". Angelic has also developed the CSA Learning Center, which teaches folks how to be farmers and conducts several socially responsible programs. It's a perfect example of an organic farm/CSA that started out small and has made the most of its resources on several planes. I've been a member on and off for years - only because my particular drop-off is very difficult for me to get to.

indian vegetarian restaurant for anniversary

Thank you both. I have heard good things about Shree as well - they specialize in dosas. Taj Mahal in Bloomingdale was noted for the food, not much on decor, but I'll definitely be checking it out soon. For the anniversary, it's looking like India House, also recommended, perhaps the Oak Brook location, though we may end up close to Schaumburg. I love the idea of an evening buffet - on Saturday's, too?

Ramen in the Loop

Tompopo would make anyone want to eat authentic ramen. I have never found such a place, and even the less than ethereal places in the movie were inspirational for seeking out the real thing. Noone in Chicago offers this?!!!

Best fries in Chicago

Mine does have the crinkle cut, but when they are cooked well enough they're beautifully crispy on the outside, fluffy and soft on the inside, and full of potato flavor. I'm not entirely convinced they're frozen, either.

who makes wild oats brand cheese?

Not sure if this is the correct info, but here goes: 05027-01 Jack (this is jack cheese). The only other info on the label is the sku, which btw, repeats 05027 (and begins with 80991). It reads "made for and distributed by Wild Oats Market, Inc., Boulder, CO. The front of the label has the Wisconsin Cheese logo, with the arm holding a chunk of cheese. Cost was somewhere around $4-$4.99 for 8 oz. Sorry this was so long in coming - thank you!

who makes wild oats brand cheese?

As my Wild Oats store slowly becomes Whole Foods, I am desperately searching for the producer of Wild Oats brand cheeses. Whole Foods will no longer carry this cheese, the biggest mistake they've made thus far. Types like Monterey Jack and Colby are raw milk, rgbh-free, with a creamy texture and beautiful tang. Please help me find where I can find this cheese, or who makes it so I can contact them! Thank you.

weekend recommendations

Hi. Looking for recommendations the first weekend in Feb. for the following: Friday night dinner (around 6pm) and Sunday Brunch. Also Sat. tea, but Peninsula seems to be most recommended. We're staying near north, but can get around if need be, to west loop, etc. Any exciting new places for dinner - well-crafted food, but not off-the-chart prices if possible? Thank you!
