I like canned cranberry sauce! What holiday treates do you like that foodies would shudder at?

It's practically a health food -- it covers five basic needs. It has your veggies, your dairy,and your (highly refined) grains. And of course your fat and salt groups. what else do you need?

For the pre-dinner snacking, I can't get enough of the spinach and water chestnut dip (made with Mrs. Grasses Vegetable Soup Mix) served in a bread bowl.

Please explain this green bean casserole thing

The horror! This dish never crossed my path until I was well in my 30s. It graced the table of some transplanted Pennsylvanians we dined with one year. I found it both repulsive and fascinating (not fascinating enough to actually taste). We had delicious and fresh foods at Thanksgiving, the exception being canned cranberry sauce sliced in rings. I associate Thanksgiving with food lovingly slaved over, not quickly thrown together out of obligation. Every family is different. No remorse for having missed out on this particular treasure, though we had our share of prepared food horrors at other times of the year.

I got it as a gift many years ago -- it isn't a book I would have picked out myself. I've only used a few recipes -- they've been good, just not my style. I love the ham and potatoes!

I don't know it's intention, but growing up we used one for butter cakes that were either glazed (like lemon), or topped with powdered sugar. The pan came with a second flat cheesecake bottom.

Favorite and least favorite halloween candy as a kid.

Ha! Dum Dums as punishment! Good plan. I was always highly embarrassed my mom chose to give them out -- they were cheap, and most kids avoided the house, make them an excellent value! Hate the Dum Dums!

Favorite -- Snickers, followed closely by peanut m&ms

Yes. Unfortunately it can be difficult to change patterns of someone sure that low fat is the healthy way to go, increasing their carbs while rejecting healthy fats -- especially when the health professionals are offering them sugary snacks.

Lemon, rosemary, salt and olive oil

Depends on your situation, but I am able to sub crushed red pepper flakes for paprika (I don't know why this is so). It will not give you the same intensity, but it adds a flavor element. Using a smoked salt with give you the smokiness.

For those of you with dogs

As someone who has an intimidating to some boxer mix, I think this is the best solution. It gives your coworker a chance to feel safe, but also the opportunity to slowly become more comfortable with them. One of the cutest pictures I have is of my tiny, formerly fearful niece sitting next to the dog with her arm around her. She went from terrified to best friends in one afternoon. Not saying this will happen with your colleague so quickly, but over time she may let her guard down enough to at least check them out.

What is the absolute worst cookbook you own. And why do you keep it?

Recipes from the Kitchen of Snap, Crackle Pop! Its recipe for Easy Bean Appetizer: heat a can of fat free refried beans with half a pack taco seasoning and a dash of Tabasco. Stir in a cup of diced Velveeta, stir until melted. Off heat, add 4 c Rice Krispies cereal. Pour in to an 8" x 8" pan. Cool. Cut into squares and serve with salsa. Yum! I keep it because it is slender, has a cute cover, and I might someday forget the recipe for Rice Krispies Treats

I'm not in Ontario, but if cost is an issue, those plastic hamburger/hotdog serving containers do in a pinch and are very inexpensive. Any restaurant supply would have them.

My Katrina-traumatized dog takes puppy Prozac and eats an organic home cooked diet EXCEPT when a guest at another home or kennel, where she eats what is served. And, yes, she lives in California.

Ratio to sub coconut oil for butter?

I am of the sub 80% coconut oil, 20% water. I am often subbing other ingredients, and this keeps the fat ratio close to what is intended.

When did we start calling ingredients "proteins"?

It's a food service term, and comes In to play at home when you start accommodating different diets, as in if you're having a vegetarian over, you will want to include some plant-based protein. Also, usually if you are on some sort of organized dietary program, as chartreauxx mentions, you would be using this as a guideline to keep you nutritionally "balanced" (the balance will vary based on the originator and purpose). I also think the popularity of Paleo-ism, and its focus on protein, has bolstered the use in everyday language.

Deal-Breakers in Salads

While I'm not a fan of raw mushrooms, my big pet peeve is salad that has nothing to do with the rest of the meal. I don't want a Caesar salad with middle eastern food, or a pear, walnut and Stilton salad with enchiladas. It drives me nuts. I wonder what's wrong with these people. And I'm sure they are wondering what the heck is wrong with me.

This is a vegetarian site, but has recipes that are vegan, or could easily become so. Good, fresh, modern ideas that can be easily taken in another direction.

Perhaps too formal, but what about a quarterly cake day, where there is a theme -- Bundt, cakes with fruit, chocolate, spiced, chiffon, boozed-based -- something vague enough to leave plenty of choices, but just enough in common to tie everything loosely together. You can call it The Cakers Dozen

If you carmelize the sugar then add the milk, you can continue to cook it over low heat until the graininess smooths out. Butter adds a mouth and flavor component you won't get from oil. I would just leave additional fat out if you can't use butter.

Recipes needed -many allergies!

When I had to do an extensive rotation and elimination diet, I found it helpful to make lists of foods I could eat, broken down into categories like: animal proteins, fish/shellfish, veg, fruit, dairy, nuts, beans/legumes, fats, herbs/spices. I then could mix and match them in ways that made sense. Also, look at all variations of a food -- so if you can have chicken, you can do whole, parts, ground, livers and so on. A couple easy things that seem to work with your list are mussels steamed with wine; salad of tuna, olives, fennel, oranges and romaine; crab, mango, and avocado salad on jicama; black beans, sweet potato and kale; summer rolls filled veggies and herbs; quinoa salads. Make a list -- it really helps!
