Can a baker give me some insight into my cake experience just now?
Sugar would coagulate the yolks if left to sit for an hour. I'm not sure about agave, as it is more liquid. Was the remaining half of the sugar in there too? There is no reason it would be unsafe to eat , but if it is not too late, I might add an extra yolk. The texture may be slightly off.
Why do you continue shopping at CostCo? I am underwhelmed. What do you appreciate about the warehouse store?

Even if the beets are cooked separately and added to the salad, the pink will bleed and intensify as it sits. I think I'll make that for lunch today.

I'm with Gretchen and Caitlin on this, both because of recipe language, and because strawberries frequently come in 8 oz or one pound containers.

Nothing, but there is a difference between 1 cup flour, sifted and 1 cup sifted flour. That is why weight is more accurate.

Since she switching from soda to water, the additions may be just the ticket. Mint and cucumber water may be a good thing too. Don't know why I'm not drinking that at home. So many options here!

This is a great link. Thank you! Also -- though she hasn't had it, there is gout in the family, so I'm now aware of the need for backing off of juicing. We don't yet know for sure what her complete treatment will consist of -- this helps me be prepared for different scenarios as well as the possibility we will need to rethink things.

Easier than juicing, we're going to try variations of green smoothies to balance out the sugars with fiber. That way she can add nuts or protein powder if necessary. The addition of ginger is a great idea. I need to check in her neighborhood for juicing places. They might be a refreshing treat.

My sister was recently diagnosed with breast cancer. Her diet tends to be a little sketchy, and I'm trying to help her move to a diet more conducive to recovery. The first step was getting her off the diet sodas, sugar, red meat, and processed stuff. Now I'm looking for solid resources for appropriate diet recommendations. I don't know that I can get her to go veg, -- organic whole foods may be the best I can do. Can anyone recommend any good books or websites for some solid information?

I think the problem is the technique -- you aren't cooking it long enough. For "pudding" consistency, you need to cook it for 2 minutes while whisking constantly once you bring it to a simmer. It helps to develop the flavor and cooks off the starchy taste. Haven't check if it is available on line, but Jacques Torres' is excellent
How Do You Make Popcorn?
I use an air popper so i can add fat of choice later. DH can have his butter and salt, I have olive oil, salt and crushed red pepper. It is a little loud, but fast. Clean up is a snap.

You can blend avocado, adding liquid and herbs. If you can have non-lemon citrus, grapefruit and oranges make nice dressings.
Smoked Easter dinner?
We made smoked ribs one Easter and it was dang delicious! It was a fun and tasty departure from the usual Easter fare. Tradition is what you make it -- this sounds like a good one to start.

I would sift together dry ingredients. Cream butter and sugar, add eggs, then vanilla. Add dry ingredients, barely incorporating. Fold in nuts and chocolate.
But the milk -- I'm very suspicious of the milk. It's an unusual addition and the quantity seems quite high. If you trust this is correct, I would alternate adding the milk and flour (f,m,f,m,f) mixing until barely incorporated before next addition.
Did you make this and get a poor result, or are you just unclear on the directions? If it didn't work out, I would zero in on that milk. At most, I think a couple tablespoons might be needed, but I'm no biscotti expert. If it is 2T, you obviously wouldn't need to alternate it with the flour.

gluten free meal for new mom
Following Milklady's suggestion, I would stick closer to naturally gluten free. I think braised meats, hearty soups and stews -- braised chicken thighs, short ribs, chili, etc, or something like a bag of roasted, shredded pork, roasted, shredded chicken, and corn tortilla-based taco fixings ( as recently featured on TheKitchn) Arrowroot powder or cornstarch can be used if meat needs to be floured, but many times it does not.
what height cake pans to buy?
I'm with Hank on this one. 2" height is the way to go. I have sets is a variety of sizes from 6" to 14 ", all 2" tall, and they cover just about every possibility.
Unlike Hank, I go for the lighter colored pans as I prefer a lighter crust. That is all about preference.
Making a layer cake without enough pans, help!
To clarify -- what size pans do you have available? That may get you a better answer. If your only option is that one very high pan you will need to reduce the temperature (from 350 F to 320ish for example) and increase the cooking time. The time will depend on your pan size and volume of batter. You will need to test the center with a long skewer. The excess height of the pan may have a negative impact on how the cake bakes. The longer baking time may also result in a heavier crust. Other options include baking it on a sheet pan or in a roasting pan, and stacking three rectangular layers cut from that.
