Should You Rinse Meat Before Cooking?

This proved to be slightly tough to answer, athuotte, because the USDA doesn't regulate seafood except for farmed catfish. After a bit of, I finally reached the FDA's Center for Food Safety and Applied Nutrition Safe Food Information Line, which told me that rinsing fish is also unnecessary, and once again, cooking will destroy any bacteria on the fish, while the rinsing may introduce the risk of cross-contamination.

Can Cheeto Fried Chicken Redeem Stoner Food?

missmind: that's not a bad idea! I was trying to follow the recipe exactly, though. I hate when people make substitutions/changes to CHOW's recipes and then criticize the recipe. you never TRIED the recipe!

New Kraft product - chocolate-flavored cream cheese

I have to admit to not really being a white chocolate fan...but I AM a fan of these chips. I ate one and thought "Right! This is how it's supposed to taste!" Usually white chocolate is kind of bland and flavorless and crisco-y and leaves a weird film in your mouth. This white chocolate melted so smoothly and just tasted like fresh butter and vanilla. Yum. Sorry we digressed from the cream cheese, everyone!

New Kraft product - chocolate-flavored cream cheese

greygarious, do you live near a Trader Joe's? They sell the cheapest and most delicious white chocolate chips I have ever had. Real cocoa butter, terrific vanilla flavor. If you find them, stock up, because they sometimes don't have them. As for the choco cream cheese, I want to taste this NOW. I spent the 80s making cheesecakes, why haven't I made one lately? They're so easy and so delicious.

Reaction to a Coors Light Iced Tea Announcement

I think Jim is adorable. But I want to straighten those pictures behind you. Sorry! FWIW I like iced tea way better than beer.

"Worst Cooks in America": Extreme TV

I have to admit, I love this show, cause of it's format: no time for fights and drama, only time for the food. So much better than Top Chef!

Do Food Freaks Have Pickier Kids?

Pia: About 18 months to 24 months is when parents often notice pickiness beginning, which tracks directly with the child being able to wander away from Mom and Dad, so it makes sense as an evolutionary tactic, as nuts as it drives us. The "no touching" thing with food is common to many picky kids but not all; I'm not epidemiologist but since I write about both children and food, I do cover this topic quite frequently, and I'd say the tendency to eat "white food" is probably the most common kind of pickiness. No, kids don't know food is "crazy" but they DO know if they are asked to eat a very wide variety of foods, something I don't believe was as common a generation or two ago.

Do Food Freaks Have Pickier Kids?

Blitherypoop: Just about anything "works" in terms of pickiness in that the vast majority of people outgrow it eventually. Unless they don't; witness the survey of adult picky eaters that is picking up steam at Duke.

Pad Thai is noodles, but it can be both spicy and funky/fishy...these are not qualities that are popular with populations of young children!

When You Have a Kid, You Eat Crow

Aramek: Children ruin the idea you have of yourself of being in control, for sure. They also fray your nerves, in different ways as they grow, all the time! But for moments of sheer transcendent joy, I have found nothing more incredible than child-raising. And that's my preachy comment for today.

This is so funny. Lessley, I will now admit that when I read this piece that you wrote while you were pregnant, I thought to myself, oh man, she's going to laugh when she looks at this later. I'm glad you are a good enough sport to let us all laugh along with you. Yep, nothing to humble you like a child, been there!

3 Reasons Not to Start a Food Biz

pieceocake: interesting that you mention that. Every single retailer I talked with discussed packaging, how important it is, and how few artisans do it right. I'll be talking about this in my followup to this story, with advice for the brave entrepreneurs who are determined to make a go of it despite me depressing them.

Why Is Tea at Coffee Bars So Bad?

heart2bake: So why would an yogurt shop OFFER ice cream? Should a restaurant offer things it doesn't believe in or want to serve? I'd far prefer a shop just not offering anything it doesn't do well.

Why Is Tea at Coffee Bars So Bad?

Peter Cuce: You can definitely find good tea in San Francisco, where I live. But usually you have to go to a spot dedicated to tea or one that makes it a specialty. Most decent coffee shops in SF also stock a decent brand of tea (I'm not that picky, really, I'll take Tazo, Stash, Mighty Leaf, even Bigelow is fine), but you just can't get a good cup out of it with that lukewarm water.

Why Is Tea at Coffee Bars So Bad?

sircharlessir: I was with you until you got to the boiling water poured over. I like to let the kettle whistle, turn it off, let it sit for a sec, and then pour it over. I think it's nicer that way. Just off the boil, as they say. Of course I have preheated the teapot with a little hot water before the tea goes in. I mean, of course!

Guerrilla Grafting, a How-To Guide

tonifi: Apples are very commonly grafted -- I wish I lived on your street and could see the results of your experiments! FWIW if you wrap the graft with tape of a nondescript color, there's every chance that no one or not many people will even notice the new branch.

Don't Be a Diet Bore

This is such good advice! And yeah, no one wants you staring at what they're eating. Agree that just in picking the eating-space, you can control a lot of these issues with no fuss from anyone. BTW I would haaaate a coworker who lectured me on much lunch choices...and I might be mean enough to secretly enjoy catching her ordering pasta at this time next year, when she'll probably have put the weight back on, if she's like most people.
