Pork Shoulder help!
Guys, thanks for all the advice. Silverhawk- totally went with something similar to your suggestion and it was a hit. I'll post a picture. I don't think I'll cook with the pork shoulder again unless it's for carnitas, the grease was so excessive. That combined with heavy polenta and pancetta for garnish made for a very delicious and fatty evening :)

Thanks guys! I agree with the braise part and I definitely plan on using just a little liquid, I just don't want to go stewy. If I can keep a few chunky pieces to serve on top of the polenta that would be great. Since you all seem to know what you're talking about I have another question. When I brown the pork on the pan I'm going to deglaze with a little white wine. When I serve the pork I was going to top it off with this delicious relish I've done before- fennel, apple, onion, apple cider vinegar and a little pancetta. Do you think the white wine AND the apple cider vinegar will taste good together? I only plan to use a little of both, but I kind of like the idea.

Ugh, wouldn't that be nice? I actually have just two big pieces of shoulder from Whole Foods. I am thinking I could easily cut or slice into 5 portions and then get them done in time. Serving it on top of polenta so stew is not an option tonight.

Hi all,
I've got myself into a bit of a bind tonight. Is it at all possible to get about 3 pounds of pork shoulder (no bone) cooked in 2 hours tonight? I have 5 friends coming over for dinner and was originally going to leave work after lunch, but I'm stuck. What I am thinking is I can add some flour to the pork, put it on the frying pan at med-high heat to get a nice sear on it and actually get it cooking. Then I figure I could cook it until my friends arrive at 325 since it's not a huge piece of meat. Of course my goal is to get it cooked, but I'm worried if it's under cooked it's going to be too tough. Thoughts? Advice? I really appreciate it!

It's fairly easy to walk to all these restaurants from 16th and K, unless you are not a walker.

Sheri. Do any of these places have outside seating? Do you think I might be able to find a menu or call ahead at Cap Johns or Leonards? Would love to be able to find some more information, but plan to take your advice. Thank you :)

Definitely get the spinach chaat(Palak Chaat). Also get the bread basket to soak up all the delicious sauces you'll be having. We had an amazing duck (Narangi Duck) , perfectly spicy. Their vegetarian dishes are really impressive and we ordered a few to go with the bread, rather then just getting two entrees. If you like lentils you must have the Dal Makhani. If you like the Indian style home made cheer, go for Paneer Tawa Masala. I've also heard really good things about the black cod and the fish stew, but have not tried either. Their wine list is one of the best. Enjoy!

I am confused too! It does seem like there are several options 1-2 hours from Dc. That being said, which of these places would you guys choose based on the crabs ( I prefer the biggest) and view (would love to find a deck or be on the water ( it's so much fun getting dirty outside! ) We've done a ton of places in Baltimore and Annapolis, so I'm looking for a cute small town. Mechanicsville? Havre de Grace? Rising Sun? Port Deposit? Would love some expert opinions, thanks guys!

Dinner at Adour was delicious, I was there on valentines day. I had some sort of white fish, maybe halibut, with seared foie gras on top. You MUST go to Corduroy off Mass Ave on 9th street near the convention center. Order scallops. If they are not on the menu the steak and the salmon are impressive. Olives is a decent lunch spot, always stellar but nothing extraordinary. The part of P street that Pappy mentioned is sort of a hidden older gem in the neighborhood. Pizzeria Paradiso, Pesce, Al Tiramisu, and Obelisk or some of my favorites.

My partner and I are taking a short day trip on Sunday on the hunt for the best crabs we can find. I've been to Cantlers and we're not terribly impressed, although it was a fine time. I would love to find an awesome crabcake, but our only real requirement is the BEST crabs we can find and outside seating.
I've heard that Waterman's Crab House is a good option? This is my farther choice since the trip looks to be about 2 hours.
If I was looking for something closer I hear about The Suicide Bridge, Bill's Terrace, Drift Inn? The Mechanicsville area is closer so I'd really love to find something in that area with a view. Am I crazy? I hear it's a small little area near the water, all about the seafood. Can't reallly go wrong there can I?!
