Help! Need ideas for Christmas Eve side dishes

My pleasure. This is definitely a once in awhile recipe, but, if you love parmesan, its an "OMG...." :) Enjoy!

2 onions (coarsely chopped)
1/4 cup unsalted butter
1/2 pound parmesan (sliced)
1 quart chicken stock
2 quarts cream
1 quart milk
1/3 cup bacon (finely chopped)
10 branches of chives (finely chopped)
1 shallot (finely chopped)
2 tbsp croutons
Salt and pepper (for seasoning)

Coarsely chop the onions. Melt the butter in a large pot, add the onions and fry on a low heat for 10 minutes.
Add 6 oz of sliced parmesan, chicken stock, milk and cream. Simmer on a low heat for 45 minutes.
Meanwhile, chop finely the bacon. Fry for 5 minutes until crispy. Seta side. Finely chop the chives, shallots (as fine as possible). Set aside.
When the soup is ready, add the remaining sliced parmesan. Simmer for a further 10 minutes. Mix in a food processor, and strain through a sieve. Season with salt and pepper. Keep the soup warm.
Place the shallots, chives, croûtons and bacon in a soup dish, serve soup immediately.

Help! Need ideas for Christmas Eve side dishes

Originally, I was going to have a fairly large Christmas Eve dinner, but it is now down to only three of us. I am making a very rich parmesan soup so I am trying to keep the rest of the dinner fairly light. My entrée is going to be a beef tenderloin with a chocolate rosemary sauce. Does anyone have any great vegetable dishes that are not too rich to go with this? I was going to serve just some plain steamed veggies, but that seems a little boring...

What is the most fool proof lasagne recipe that you have ever tried? I love lasagne, but it can be so inconsistent sometimes...a little too watery, the pasta not the right texture, etc. I would love to hear about what works best for you.

Ideas for food gifts - long shelf life and both sweet and savory

I have a few people in my life that are impossible to buy for. They live in small condos, so I hate to buy "things" that will just take up space, so I usually end up with some kind of food. I would like to do something more personal and make things myself, but I really dont have a lot of ideas. I was thinking of things like, apple butter, spiced nuts, seasoning mixes, flavored oils, liquers, etc.

Does anyone have any great ideas or, even better...recipes?

Favorite regular cookbooks for a Primal diet?

I LOVE this new board! I am such a foodie, but I have found that my health is much better when I follow something between Mark Sisson's Primal and the Perfect Health Diet by the Jaminets. I suffer periodically from gout and feel awful eating wheat, but I still love to cook. I am wondering if you have any favorite "normal" cookbooks that, for the most part, fall well into this kind of diet. I am really looking lots of veggies and healthy fats and smaller amounts of animal protein. I have found The Garden of Eating, Karen Barnaby's Low Carb Gourmet and Cuisine for Whole Health that are pretty good. Any other ideas? Thanks in advance!

The meal that I am making for Christmas is very heavy - a lobster bisque, risotto and beef tenderloin. I wanted to make cheesecake for dessert, but the dinner itself is so rich I think it would be too much. Anyone have an idea for a lighter dessert? I thought about a mousse, but that is still pretty rich....

I want to make polenta for a dinner party and I thought about topping it with short ribs or stew. But I have never made any of Marcella's stews (I have all of her books). Favorite recipes from Radically Simple

I am having some colleagues from out of town to my house for dinner and it is on a weeknight after work. I was trying to come up with a really quick and easy menu that I could do easily and have ready within 2 hours. I love Rozanne Gold and especially her Radically Simple. Ideas for a Chocolate Cake with Vodka and Coffee drink

I have a friend that love Whynotte Whippets which are basically shots of Pinnacle Whipped Cream Vodka and Whynotte (a coffee flavored energy drink). I was trying to think about how to make this into a bundt cake, but I am not sure how the alcohol would affect things. I'm not sure if it would be better to put it in the cake or just make a glaze from the two ingredients.

Any ideas?
