I have really gotten into raw foods lately. I dont plan to go 100% raw but I love experimenting with the tastes and textures. Are there any raw cookbooks or recipes that you just love? Thanks in advance!

HELP - Gluten Free Breakfast Casserole for Christmas Brunch

I am hosting Christmas brunch this year and the easiest thing to do is have a breakfast casserole that you make ahead and then just pop into the oven. The problem is that most of the recipes that I have seen use some sort of bread for filler and I have a wheat allergy.
Does anyone have any great recipes for gluten free breakfast casseroles? Thanks in advance for the help!

NEW ENGLAND SOUP FACTORY COOKBOOK. I live in FL and there are so few months cool enough to make soup and I love it! If you have never made anything from this book you are missing out. Friends used to raid my freezer every time they came over to get the leftover minestrone. Best soup book ever

Favorite easy, healthy, seafood dished

I relocated to Florida last year and, while I love seafood, I haven't been very motivated to cook it at home. I would have it in restaurants instead. Now that I am here with a year round supply of great fish and produce, I decided that I wanted to learn to cook it properly. Do you have any favorite seafood recipes that are not overly complicated (e.g. ok for weeknights) and reasonably healthy? I have a wheat allergy so preferably without any sort of breading. Thanks!

That is really interesting! I don't believe we were necessarily meant to be vegetarians, but we certainly weren't meant to eat as much meat as some people try to push.

That is exactly what I am trying to do. I love meat, but just not in the quantities that some people have taken it. I really don't think it was ever intended to be where it is, but, like all the other diets, someone decided to let you eat all the bacon you want LOL. I am really trying to eat like you describe...do you have any cookbooks that you really love? I know that YumUniverse is coming out in October, but that is about as close as I have come. Thanks!

I love to eat paleo/primal/gluten free and I always feel so much better when I do. My problem is that I don't necessarily agree with the heavy meat focused paleo cookbooks. Has anyone found any cookbooks that focus more on produce and have really delicious recipes?

Help! Need ideas for Christmas Eve side dishes

My pleasure. This is definitely a once in awhile recipe, but, if you love parmesan, its an "OMG...." :) Enjoy!

2 onions (coarsely chopped)
1/4 cup unsalted butter
1/2 pound parmesan (sliced)
1 quart chicken stock
2 quarts cream
1 quart milk
1/3 cup bacon (finely chopped)
10 branches of chives (finely chopped)
1 shallot (finely chopped)
2 tbsp croutons
Salt and pepper (for seasoning)

Coarsely chop the onions. Melt the butter in a large pot, add the onions and fry on a low heat for 10 minutes.
Add 6 oz of sliced parmesan, chicken stock, milk and cream. Simmer on a low heat for 45 minutes.
Meanwhile, chop finely the bacon. Fry for 5 minutes until crispy. Seta side. Finely chop the chives, shallots (as fine as possible). Set aside.
When the soup is ready, add the remaining sliced parmesan. Simmer for a further 10 minutes. Mix in a food processor, and strain through a sieve. Season with salt and pepper. Keep the soup warm.
Place the shallots, chives, croûtons and bacon in a soup dish, serve soup immediately.

Help! Need ideas for Christmas Eve side dishes

Originally, I was going to have a fairly large Christmas Eve dinner, but it is now down to only three of us. I am making a very rich parmesan soup so I am trying to keep the rest of the dinner fairly light. My entrée is going to be a beef tenderloin with a chocolate rosemary sauce. Does anyone have any great vegetable dishes that are not too rich to go with this? I was going to serve just some plain steamed veggies, but that seems a little boring...
