The Casserole

Prepare 2 boxes of the Betty Crocker cheese potato kits in a 9x13 baking pan. Follow directions up until the baking stage. Prior to baking the potatoes, season about 7-8 boneless pork loin chops with salt & pepper and place them on top of the unbaked potatoes. Cover pan with tin foil and bake at 400 degrees. I know this isn't "homemade", but it is delicious and easy/quick to make. Oh and kids love it! I suppose if you wanted to go homemade all the way, you could use fresh potaoes in a cheese sauce, but it will take longer to cook. Good Luck!

I use buttermilk in my red velvet cupcakes, corn bread, and I marinate my pork chops & chicken in buttermilk & hot sauce before frying.

Alfredo Sauce Help

I've been making alfredo for quite some time. It's my husbands favorite. Like mbfant said below, alfredo doesn't have olive oil in it. It's cream, butter, a touch of garlic, parm & salt & pepper. I don't have a specific recipe, I cook by sight & taste, but I can tell you that I have made it before with whole milk instead of cream (if you are watching your weight) and it still came out pretty good. Also, I use garlic powder instead of fresh. It only takes a little bit, and I think it's better so that there aren't any "bits" of garlic in it. Alfredo should be very smooth. I normally start with unsalted butter, melted. I add the cream (or milk) next and let it get to a slight boling stage. I then add a small amount of flour, whisking it until it is the consistency of cream sauce. Lastly, the fresh parm (NEVER use the stuff in the green can) and garlic, salt & pepper to taste. Take it completely off of the heat and let the cheese melt. If you leave it on the burner while the cheese is melting, the cheese will possibly burn on the bottom and become lumpy. Hope this helps!

Favorite brand of Ramen

Chicken flavored. Cook the noodles, drain the water, add the packet then load it down with shreaded cheddar cheese & sour cream. Yummy :)

Carvel & Real Soft Serve [split from L.A.]

I also love Carvel. I grew up in south Florida. If we didn't go to Carvel, then we had ice cream from Farm Stores. Farm Stores was great. You pulled up to a little building in your car and you could buy most dairy products. I haven't seen anything like that in YEARS.

What a wonderful day. Took mom to the TPC in Ponte Vedra then came home to a home made meal prepared by my teenage daughters. Tiger Woods & Chicken alfredo. Soooo Good!!

Once and for all -- rice in a burrito -- Yay or nay?

I like cheesy rice in burritos. I don't always prepare them this way, but I do like it. The kids prefer them with rice too.

Ice Cream

I received an ice cream maker for Mother's Day. I made the basic vanilla recipe, it turned out pretty good but I want to make something other than the old standards (Chocolate, vanilla, strawberry, etc). Suggestions?

Rachel Ray on FoodTV

I really cannot stand her. Her voice IS anoying. She doesn't make anything original at all. Just how many different variations of hamburger, salad or "stoup" can she make???? I am SOOOOO glad that her show is cut back to once in the evening. I like the new afternoon/evening line-up.
