We're still ploughing through all the references we can found but it's definitely different to Japanese "white" bread. It doesn't taste "buttery" either so still uncertain.

Thanks Todao - it's completely white but almost flakey in its consistency. It's definitely not a challa or honeyed. We live in London and have occasionally found similar bread at Japan Centre but it is sadly not the same. The quest continues!

Andersen Bakery "English" Bread Recipe Request [Moved from SF Bay Area board]

My Japanese American wife is yearning for a recipe that approximates the "English" bread sold in Andersen Bakeries in and around The Bay area. The white bread is a bit like a cross between a pain de mie and a brioche loaf - flaky and buttery and toasts amazingly. It is impossible to find here in London and we have been unable to source either a supplier or even a recipe. Can anyone help? Please?
