The truth about pork rinds ... scratchings, chicharron, etc
in German it's called 'krustenbraten'' (= crispy pork with crackling) and the cold cut that shares the same name.
anddddddddd..... Vietnamese pork rind shreds called "bi". in rice paper rolls or with rice (i am not a big fan of rice but this rice dish with pork rind shreds is fantastic.

i spent 4 days in Dresden last week... didn't look up any specific places to eat because i normally prefer to eat and drink at (brew)pubs where traditional German food is served. i do try at least once to eat something Asian but it's a disappointment every time.
i did have goose breast at lovely Brauhaus am Waldschlösschen (Dresden).

i'm rarely home at christmas/new year/birthday. escaping (quite literally) to east Germany this year and Leipzig is where i will be on new year's eve. plan to drink as much Gose as possible, then sleep. peace and quiet, no people, no noise.
New world wine in the old world?
usually in wine producing countries people drink their own. i used to know some such people who would never touch anything else. and why not, it's cheaper and closer.
yes, new world wines are _also_ popular in some (western) European countries. (North) American wines are very unpopular here.
how delighted i was to see wine menus in Chile, they categorise the wine by valley/region/area. only Chilean wine. they don't even want to drink their neighbour's or anyone else's wine!
i drink them all, but it comes down to the location. wherever i go i try my best to drink what that country produces. (the most painful was 3 trips to China :) )

at home i always use proper glassware but when travelling i often have no choice but drink wine and beer out of flimsy disposable plastic cups...
Where to repair Gaggia Classic espresso machine?
indeed. it's not so hard to fix it on your own. my other half took my beloved Gaggia Classic apart and repaired it for me. even decalcified it thoroughly as well. works perfect again. now i have to decalcify it a lot more often to prevent calcium build-up.

i think it's more like breakfast (food) around the world. some photos are okay, some are probably made with a cell phone.
typical Argentinian breakfast: real coffee and many medialunas! they are very small and coated with a sweet buttery glaze.

in Taiwan i saw some people eat braised pork knuckles for brekkie

it's a soft flour which is not suitable for baking breads but ideal for making biscuits and waffles etc. if you can find flour from some place by the sea then use that. otherwise you can just use normal flour but your cookies will be stiff/hard(er).

How adventourous are you?
don't worry. China is quite easy to travel around and eat. get someone at the hotel to write down for you things such as addresses of restaurants, you can't eat this or that, you're a vegetarian etc.
i always get someone to write down for me names of local dishes, show the waitress and choose. but most of the time if i see some busy restaurant i just walk right up to people eating and point at something that looks good.
and what it's like to be in Peking on your own? it's fine. the gawking is hilarious! stare back a lot :D some will turn red lol. now give a kind smile.

Merken (Chilean Spice Blend) ?
Merkén smells gorgeous! it was hard enough for me to find the smoked version already as soon as i left southern Chile (where i hit the Merkén 'jackpot'). good luck with your search!
at first i also collected all the supermarket packages but quickly found out the quality was far inferior to artesanal smoked version. i came home with 4kg of Merkén all from different places i passed through!

Food on a Stick
skewered grilled mackerels are a speciality in Munich during Oktoberfest. look to south east Asian or Taiwanese street food for inspiration. tofu skewers, blood cake skewers, whole squid skewers, intestine skewers... use your imagination... the Taiwanese have already thought of it.
my favourite are the lowly chicken wings threaded on 2 skewers for easy turning, young small potatoes. (and souvlaki of course!)

i too have tried many kinds but only like Vietnamese beef jerky. i could eat it by the lorry load!
Trip to Chilean Wine Region(s)
i visited some vineyards in Colchagua valley in April. spectacular!!! i'm not ashamed to admit i'm a new world wine lover! there are many wine producing areas in Chile but i chose Colchagua first and am glad i did.

maybe it was a potato spread? in German it's called "Erdäpfelkas".
i love 'snack time' ('brotzeit'/'vesper') in southern Germany. i remember these common bits on a platter (some you've already mentioned):
smoked ham, (schinken)wurst, brawn (both white and red kinds if possible), course pate^, obazda (a mixed cheese).

How do you like your coffee?
i like my coffee to taste like proper coffee: double espresso. strong, thick, and black.
same with my tea. very strong and nothing added. must be leaf tea and pure (as in not blended/floor sweepings).

yes, i would, according to the way you put it. why would it be different from eating intensively reared pork/chicken etc?
i saw (from my bus window) many dog and cat restaurants in northern Vietnam. really a lot of dog and cat restaurants i've ever seen on one street. the most gut wrenching sights however are all in (usually small towns) China. i did want to try but my companion was distraught to the point of tears i had to forgo my dog dindin. i once posted butchered dog photos on some photo storage sites but they deleted them.

beef noodle soup is a must, but i found out i quite enjoyed other kinds of noodle soup as well.
here comes the smell...... stinky tofu is no big deal, actually i like it more than oyster omelet thingie.
i really love sliced goose in Taiwan. found these places only by chance and in small alleyways.
(just got back from Taipei a couple of hours ago and am missing the fantastic food! :( )

to OP, stay away from Warsteiner, 'der -echte- Koenig unter den bieren' lol ... Munich will be your most fabulous beer stop on this trip. drink as much Augustiner beer as you can, on top of all the beers recommended so far even if that means you come home a drunk for a while.
and if you ever see Jever, make sure you do not miss the chance to drink this lovely beer.

yes, always.
short term (i'll be in Taipei shortly for a week): eat as much beef noodle soup and anything that looks good, and try to visit a tea house a day.
hopefully next summer (my heart is set on Longyearbyen/Svalbard): arctic food
