Butcher in Atlanta

I'm desperately looking for a good butcher in Atlanta. Ideally one that carries more than just beef, chicken, and pork. Really looking for lamb that's from somewhere closer than New Zealand.

Drinks before DBGB dinner

Temple Bar just over on Lafayette (btwn Bleecker and Houston) could be nice for a quick cocktail. It's close and they have great drinks.

Definitely need some Manhattan Special. I buy it whenever I see it.

What is a good starch to have with beef short ribs?

One more vote for polenta. Flavor it with some herbs / spices that will complement how you prepare the short ribs.

Meatballs - to brown or not brown 1st?

Definitely brown. A quick sear really brings out the flavor of the meat.

Where can I take a Serious Foodie in UES/Yorkville?

I'll second Flex Muscles. Cheesy name, but they have fantastic (you guessed it) mussels and they do a lot of very interesting preparations. A few pots of mussels, some oysters, some frites, and some beers...Any foodie would be happy with that.

Place to buy ramps in Atlanta?

Anchovies, fresh tomato, a little ricotta, and mustard greens.

What do I do with a fresh ham ROAST

I've never heard of this cut, but sounds like it could be prepared in a similar way to a pork chop? I'd recommend brining then pan-roasting or grilling.

Suggestions for what to cook for Christmas Dinner?

Sounds like you're doing enough work the night before with the prime rib.

What about a more rustic approach? I don't think it always needs to be a large platter of meat in the middle of the table and sides galore. Braise some short ribs and serve them over mushroom polenta.

DBGB tonight--recommendations?

I went on Friday. The fall squash soup was amazing. The sausages are great. I liked the chorizo but the beaujolaise was my favorite (we did a sampler). I wasn't a huge fan of the braised skirt steak I had for my main dish.

Beer wise, they have some awesome selections. If he wants a pale ale, the Ommegang Hennepin is pretty tasty and relatively inexpensive compared to some of the other selections they have on the menu. Get adventurous with the list though. Enjoy!
