These are all good suggestions, though at Lamai's it's recommended you go there for the buffet.
If you love Udon or Bubble Tea, I highly recommend the Udon Sushi Bakery which is behind the Harrison Road House at Michigan Ave / Hagadorn. The owner is from Korea and his wife from Hong Kong. Not really much Sushi, but I love their food. Clientele is usually about 80% Asian.

I know the spot you're talking about. The guys that have a little trailer right on Michigan Ave, just west of Frandor. Open all year round. Totally agree, they serve up the real deal.
The only other place in town that serves up quality authentic Mexican is Pablo's in Old Town.

If you've had Pizza outside of Lansing, you'd know that DeLuca's isn't that amazing. Lansing is pretty awful for a quality slice. Leo's Outpost does a fair pie as does Frank's Press Box on the west side. Pizza House is decent though also a bit overrated.

I find the best and affordable meat department in the area is at Apple Market on Saginaw, just west of the Frandor area. It's a small Spartan store, but they do have their own department and I'm often surprised at the quality and value they offer. If you're looking for Buffalo, Rabbit, or other, then Goodrich's is your bet. If you're looking for Steaks, Ribs, Pork, Chicken, etc. Check out Apple Market.
Jewish Deli in Grand Ledge, MI?
I ordered a Reuben at Amici's and watched them grill the toast and put the Meat in a microwave to warm it up. Stay far away from this place. I've yet to find a good deli sandwich in the Lansing area, but haven't tried State Side Deli yet.
Some people like Lou and Harry's which now has a location by Frandor just off Saginaw in the same building as the Biggby's [Beaners]. I thought their stuff was just "okay".
If you're heading to the Detroit area, I can highly recommend a Deli in downtown Farmington Hills called Dagwoods. Used to eat there often when I lived in the area, one of the best around.
