Dominique Ansel After Four Visits

I had the Kouign Amman only once and though crispy and buttery, it was too thin and had not the soft consistence in the center if compared with Laduree's. And how much are they? 5.25$? I have to admire Ansel that he can get away with it, earning 5.05$ with each... The canelé was not crispy outside and therefore also better to avoid. The almond croissant was the best choice and also offered the best value for money.

I was wrong in regard of a split size, i thought it is half a bottle. But at 15$ a bottle (+ tax) maybe you can afford half bottles, which offer the content for two nice sized glasses of bubbly...

This answer is a bit delayed, but nevertheless I did not want to leave it unanswered...
Yes, I have eaten at Gilt under all chefs, also frequently with the current third chef at the stoves. And I am happy, that they deservedly received again a Michelin 2 Star rating recently.
At Gilt all comes together: A splendid room, excellent food and fine service. It is one of my favourites and a must for all out-of-towners, because there is no other dining room in town which compares, meaning in the sumptuous mansion build by a railway baron, yet intriguingly modernized by the modern furnishings.

What old fine restaurants left in the USA?

Yes, I am aware of that conundrum. Oftentimes there is no evolution in the restaurant and eventually the clients are getting tired of it or dying off and finally the restaurant closes... But iI am certain, that there are many places which evolved yet kept their standards and some of their classic dishes.

Once you had grass fed beef in Argentina you will not eat anything else.

Cows cannot digest corn and would never eat it if they had a choice. But corn is cheap, government subsidized fodder, so the cows get it together with medication which helps with the digestion. I do not want these drugs in my food even if they are considered safe.

What old fine restaurants left in the USA?

I wonder which of the old, "legendary" restaurants in the US are left and still following their original "mission"?

In New York, there is La Grenouille, more than 40 years in business in the same location and by now the last of the old guard of fine French places with La Cote Basque, Le Pavillon, etc. gone....

Then there is Le Cirque, also rather long in business, but in changing locations.

Le Bec Fin in Philadelphia comes to mind, but I read, that the restaurant will be redone and reopen on a much more casual level, so the original mission of fine food in an exquisite ambiance with fine service seems over....

I do not know, if the Russian Tea Room would qualify?

New Orleans has possibly several and Boston as well, but I wonder which of these are actually very upscale as opposed to "just" good restaurants?

Definetely not the lounge at Daniel! It is noisy and hectic and since prices are identical to the restaurant, it should be avoided.

Gilt has the most sumptuous dining room in town and the food and service are well worth the two Michelin stars they just received again.

Corton is indeed a good choice as well, but possibly a bit far from Feinstein's?

They just got one star from Michelin. I went about 4 times and liked it every time. But I am very familiar with Austrian food and maybe that helps?

Go to Gilt!
It is the last palatial dining room left in this city (after Daniel choose to change to an "upscale-corporate" look), and the food and service are excellent. Plus, the pastry chef is one of the best in town as well.
Daniel, Veritas, Corton, JeanGeorges and Aureole have all fine food, but the setting does not compare. If you want fine food and a romantic/festive room, there is only Gilt.
