Mom Mom's Red Velvet Cake/Butter Cream Icing

Kate,

I agree, I have never had RVC with cream cheese frosting! Love it on Carrot Cake, but would NEVER dream of serving it on the RVC!!

Mom Mom's Red Velvet Cake/Butter Cream Icing

Hey JavaGurl, I've baked it in a sheet pan, and it's just fine, but my Grandmother ALWAYS baked in two layers then split them to make a 4 layer cake, my Mom always made a heart shaped RVC for Valentines day, LOL and for my Dad's birthday!!

Food of the 70's, 80's and 90's

Hey Rweater,
The 90's were a strange time for food and consumer products, I don't know why but EVERYTHING lost it's color, Not just Pepsi...LOL I guess it had something to do with artificial coloring, but they were making clear dish washing liquid, sodas, handlotions, liquid hand soaps, LOL even Kool-aid!!

Julia Child autobiography

Yes I am a diehard Julia fan! I can remember watching The French Chef on PBS. I even would stay up late to catch it on Food Network some time ago when the were showing the originals. I LOVED the book, and could almost hear her distinctive voice in my head while reading...LOL Starting on a re-read now. Would love it if they would release the original series of shows on DVD.

Mom Mom's Red Velvet Cake/Butter Cream Icing

Hey Dana,
As my Grandmother would say, "ya gotta beat the hell out of it" LOL. I always tell anyone that I've given the recipe to that don't be afraid at first it will look like it's "curdled" but just keep beating it and in no time it will look like dense whipped cream. May be just me but have tried margarine for thye frosting and wasn't happy with the results, but then again I use butter for the cake too.

Red Velvet Cake and question about Sprinkles cupcake mix

Hey Making Sense,

I happen to like RVC and ALWAYS use the cooked frosting, would never use cream cheese frosting, LOL except on carrot cake! As for red food coloring I think as long as RVC cake isn't a major food group for you, shouldn't be a problem. My Grandmother would also make a green one for St. Patty's Day, LOL talk about going "green".

Chicken past the sell-by date: OK?

I would not use a chicken that is a week out of date. I have used chicken out of date a day, two tops, making sure to cook throughly, with not ill effects but a week I feel is pushing your luck.

Paper, plastic or BYOB?

I have been using reusable bags for some time, however I do use the plastic bags provided at the meat counter, to contain any juices that may leak out of meat packages. I guess I worry too much about cross contamanation.

Where to buy Honeycrisp apples

Hey Bentley,

Had never heard of Honeycrisps before I saw a display of them at my local Weis Markets. I usually buy my apples at one of the local orchards but decided to give them a try. They were just that sweet and crisp, not bad but I prefer a more tart apple. Try Weis they still had them at the end of last week.

Best storebought gingersnap cookie? (moved from Home Cooking board)

Hey Uncle Ira,
I haven't seen the Ginger Altoids lately, but I did find Newman's Own Organic Ginger Mints and Cinnnamon Mints, both are really good, found in the Organic/Health Foods section of grocery store. Come in little metal tins just like Altoids.

Recipes You've Never Heard of Outside Your Family

Hey BeeBee,
Grew up eating Egg & Olive sandwiches on white bread. LOL have a jar of olives in fridge right now to make a batch. Another thing was Lebanon Bologna Gravy, made like chipped beef gravy, except using Lebanon Bologna (NOT Sweet). And the last one was Porcupines, a type of meatballs made with ground beef and a box of rice-a-roni...YUM

Where can I get Schweppes Bitter Lemon?

Hey Carole,
They changed Coke long before "New" Coke, itt was when there was a so called sugar shortage and prices on sugar went sky high, beverage companies swithed to HF cornsyrup because it was so much cheaper and when sugar prices stabilized they didn't go back. As for Coke with sugar, look for Kosher Coke, available around Passover and Hanakuh, store like Target etc. carry then. I hadn't thought of Bitter Lemon in a long time, in my younger days, drink of choice was Gin & Bitter Lemon, very refreshing in the Summer.

The nit-picky cook/baker: what shortcuts do you take, and what shortcuts make you cringe?

Hey MaggieRSN,
Just to let you know, I've been buying Droste at of all places, The Dollar Tree Store!!!! The have pastilles, and several types of bars, but it is alittle hit or miss. Years ago the only place I could find them was is the Gourmet Shop at John Wanamakers.

The nit-picky cook/baker: what shortcuts do you take, and what shortcuts make you cringe?

Maggie,
I tend to agree, what's not famliar does take on an exotic quality. I live near Hershey PA, and have evn worked inthe area, it's amazing in the morning near the plant, the whole town smells like chocolate chip cookies baking. I think kisses are good if common, LOVE Ghiradelli, and would fight for Droste LOL. Guess I'm just a chocoholic!!! Another chocolate I really loved was Maribou, sold by Hershey but imported, haven't seen those in years.

Entirely unsweetened hot chocolate - made with chocolate not cocoa

Hey Seattledebs,

The new line of baking chocolate from Nestle' called Chocolatier has an unsweetened baking chocolate. I've also had Lindt's 90% dark chocolate, contains sugar, LOL not that you would notice! I love dark chocolate, but that was alittle too intense to eat straight, but might work in hot chocolate.

What is Your Favorite Non-Foodie Thanksgiving Dish?

Would not be Thanksgiving (or Christmas) without my Grandmother's Cranberry Relish, she made every year, and I could eat it by the bowlful! I still make (Grandmother's been gone now 17 years) Take bag of fresh cranberries, 1 orange (I chop finely in food processor, she used food grinder) mix with 1 cup of sugar. Take 1 box any red flavor jell-o (small size) prepare according to package instructions, chill until thickened, then stir in cranberry/orange mixture. One bite and I'm 8 years old back in Grandmom's kitchen.

What is Your Favorite Non-Foodie Thanksgiving Dish?

Hey Mtleahy,
Being born and raised in Hanover (York County, PA), I know all about the joys of Lebanon Bologna, one thing my Mom would make was "bologney gravy", basically chipped beef gravy, using Lebanon Bologna in place of the dried beef. MMMMM a plate of white bread smothered in bologney gravy....And I have to add you have not tasted an Utz potato chips until you have purchased them at the factory in metal cans, I don't even eat the ones in bags @ supermarket.

Is Food Still Too Cheap?

Ethanol is in the development stages, currently takes as much energy to produce as it provides. With advances, it will become more efficient to produce. Also they have now found that it can be produced from non-food sources. Yes there is still plenty of oil, but we are in the stranglehold of large oil companies. All these things continue to have adverse effect on ALL products and services we need, food, clothing, shelter, and ttransportation. As for food being "too cheap", what does that mean???? We should be paying more for food, for what reason??

Cost of Thanksgiving Dinner

I agree with alanbarnes, Thanksgiving, while alot about the food, seems to me should be at least as much about the people we choose to share it with. I will spend the day cooking with loved ones, sharing stories and gossip and recipes. The turkey will be a Butterball (partner's 82 year old mother will NOT cook anything else..lol). And while I love to cook and try new recipes, there's no way I would try to mess with tradition and try to convince her to cook an organic turkey raised on hand-picked imported baby acorns...lol. I will be counting my many blessing that I will be surrounded by friends and family, eating a great meal prepared with love. Hope you all are as blessed......Tim
