I agree with Mikeh. We live in Tallahassee and there are several very good and creative restaurants. Rememer, food always tastes better when you are on vacation.

A La Provence in Tallahassee, an early opinion

I love niman ranch also. Harris ranch is doing a new promotion with one of their ranches and I was lucky to be opening at the right time. Which also means with success comes price increases (not mine, theirs). I had to deal with allen bros, stockyard, buckhead, and niman with new products at great prices and then bamm. Thank goodness there is always a supplier trying to get something new of quality out into the public. I am in communication with a friend in Georgia raising some incredible beef, but it won't be ready for another year.

A La Provence in Tallahassee, an early opinion

I am a little confused about what special means. There are 60 Harris ranch farms in California. They are grass fed not fattened with corrupted corn like most cattle ranches. Harris ranch offers certified angus and prime in addition to choice. In Florida it is only sold in specialty grocery stores and the finest steakhouses.

Hi again. I reread my response and I think I sounded snotty and that is not me. I am opening the restaurant because I love the business. It just seems like there are too many of the same restaurants around. Albert's is gone and I love and respect Albert and A. Provence (I learned so much). Albert has helped a great deal in this venture. I spoke to him yesterday and he said he would stop by this week. He may help a little when he gets back from France in June.
We are doing mostly classic French dishes, and the tastings have been wonderful so far. I just want people to be happy. I love to see smiles

Hello Everyone My name is Bill Bertoncin. The waitress you mentioned at Albert's, Tammy, Is happily married to Mark(former manager of Albert's), and a glowing Mother. She is wonderful.
Aria closed because it was flawed from the start. I am not badmouthing the former owner it is just fact.
The average person that dines out is more educated on cuisine these days. I think it is wonderful. I want a restaurant to reflect that
I was Albert's Manager for a long time, and I hold him in the highest regard. We are opening this restaurant to celebrate the dining experience. It isn't for anyones ego it is for everyone walking through the front door. Scott is a very talented chef and worked for Albert at the Club and Albert's. Honestly the concept isn't new. It is simple food prepared properly.
