Manual ice shaver??

So this weather has me craving some of that amazing New Orleans style shaved ice. Has anyone seen one of those old style ice shavers that you scrape along a big block of ice? It kind of looks like a tool I used back in high school wood shop and I'd love to find one in town...

No Knead nitwit

I am determined to make a quality no knead loaf but I am running into some problems. I am working with about a 80% hydration and using fresh milled wheat. I've been preheating the dutch oven to 500 for 20 minutes, putting the loaf in and dropping the temperature to 450 baking for 20 minutes covered then 20 minutes uncovered.

I've been measuring the internal temperature of the loaf ensuring it's above 200 after pulling it from the oven and allowing it to come to room temperature prior to slicing.

The result is a beautiful shaped loaf with a nice crust but the crumb is just a little raw...

What about a simple stainless loaf pan? I've seen lots of aluminum, and aluminized steel, but where are the straight up stainless?

bread flour

I have been milling my own flour for a little over a year now. My recommendation is to stop before you get into it... after you taste bread made with fresh milled flour you will never go back. But if you insist on making the best tasting (and arguably most nutritious) bread ever, I would check out the little bakery on (I think) esplanade and (definitely) bernard --I can't for the life of me remember the name.

I am looking to get a decent (i.e. over 1000 watts) portable electric single burner. Has anyone seen any around? I looked at the 'usual suspects' (Canadian Tire, Walmart, Sears) but haven't found any that seem 'right'.

Local source for large, widemouthed jars or crocks?

I have looked and looked for ceramic 'pickle' crocks and have had absolutely zero luck. I found a couple of old ceramic cookie jars at the St. Michel flea market but nothing a whole lot better. If you do find a place please please post your source. Shipping those damned this is expensive!

Hard Spring Wheat in bulk (i.e. I want a big sac of grain)

... been looking for a good local source for hard spring wheat in bulk. It's been a long while since I've bought any bread (I think I'm coming up on my two year anniversary) but I just got a flour mill and I've been dieing to get it into play. All I've found are these little 500g bags in the various 'hippie food' stores that seem to be really really overpriced.

any hounds with a snoot for whole grains?

Green coffee????

In my opinion, getting into roasting your own coffee is a lot like brewing your own beer (I.e. it;s only worthwhile if you want to end up with something better than is readily commercially available for a fraction of the cost). I do it because I am extremely particular about certain aspects of my 'food'.

I roast in my small apartment size convection oven (really a toaster oven on steroids) and regularly have people happen to 'drop by' for a coffee....

I talked to Toi, Moi, et cafe: no go. Santropol will not either. Being relatively new to Montreal can anyone make some suggestions of places that roast their own FTO coffee that might sell me some greenies?
