Decent Food at O'Hare Airport

Yes. I was just going to mention this. I tried this not too long ago. I thought the price a little high, but the tortas was really good. The ingredients were all fresh and tasted wonderful. This will probably be my go to place for good fresh food while going through O'hare.

How about a chocolate souffle with espresso Crème Anglaise for "cowboy coffee dessert" since you could stand a spoon up in it.

Spiced Tonic Water

The champagne yeast will digest the sugar and create alcohol and CO2. So you could create your syrup, add distilled water, mix and inoculate the bottle with a small portion of bloomed champagne yeast. Allow a couple days for fermentation and bingo. Carbonated bevy.
I just did my own ginger beer using the same method. Works great. I used the Chow ginger beer recipe the first time, but substituted american ale yeast instead of creating a wild bug:

2nd time I went bigger scale and did a carboy of ginger beer with a little add of ginger, allspice, star anise and limes. Had to switch to using the champagne yeast, as the limes acidity seemed not to work with the ale yeast but worked fine with the champagne yeast.

What's the Best Way to Dispose of Cooking Grease?

I usually reserve it in a covered glass dish.

I have also used this rendered grease and newspaper as a fire starter for my charcoal chimney. You just wipe the newspaper in the grease and ball up the paper and stick it under the chimney. This way you don't have to use lighter fluid.

How do you prepare your zucchini?

I needed a recipe today, thanks for all the good tips. I think I'm going to try a little combo of some of them.

I'm going to roast some stuffed zucchini tonight. I'll split and scoop out the zucchini seeds, then season liberally with salt, pepper. I'll give it a little olive oil, to coat. The stuffing will be shataki mushrooms, onion, breadcrumb, lemon thyme, and a Parmesan-like cheese (local hard cheese I need to use up). I'll serve it with a quick little thick tomato sauce from tomato paste with basil, oregano, and red pepper flake.

Non-Chain Recommendations in Champaign-Urbana, IL

Great list - As some have noted, the list is a little dated. Some other places of note:

When I was still working in Champaign, nary a week went by without a stop for my egg roll and Panang Curry fix.

I've hit this a couple of times and had some good meals. Sushi, as everyone suggests isn't really the best option for corn country, but they do alright.

El Toro has exploded into Champaign and now even surrounding communities. Great service, good food and super fast. A good lunch option for those close to one.
