Can capers in vinegar spoil?
Lol I can assure you my jar of capers were not 10 years old. I cannot believe how good fried capers are! It's a great salty crunchy burst of flavour. Even my 2yo liked it.
Can capers in vinegar spoil?
Thanks! I went ahead and made it. The dish was so so but the fried capers as a garnish were divine! http://www.chow.com/recipes/10768-sauteed-brussels-sprouts-with-fried-capers
Something about the salty crunch that was very good in the dish.
Can capers in vinegar spoil?
I had a jar of unopened capers in the fridge (because I ran out of room in my pantry when I bought them). They are Trader Joe's superfine capers in vinegar. I just opened the jar for the first time and found some capers are tinged with pink. Is this normal? I really wanted to try CHOW's sauteed brussel sprouts with fried capers recipe tonight. Can brined anything go bad? I tasted a few pink ones, they tasted fine and I feel fine so far.....
Best Chicken Marinade for the grill
I made this marinade with boneless skinless chicken thighs and it worked out wonderfully! I eye-balled the lime juice (half a lime) and think it could've used a bit more or add a bit of lime zest at the end.
I tried it with firm tofu and the results were not so good. I think I should've used extra-firm tofu because the firm tofu turned out somewhat slimey/wet. I pressed the tofu for about an 1hr before marinating for about 30 minutes. I will have to try it again with extra-firm.
This marinade will be in regular BBQ rotation that's for sure. Thanks 4Snisl!
Best Chicken Marinade for the grill
I agree with Val - this looks awesome. I am definitely going to try this one out this weekend. I'll probably use it to marinade tofu as DH is veggie but will use chicken thighs for us meat eaters.
Soy chorizo at Trader Joe's
I love it too! I really love Rick Bayless' chorizo/soyrizo, potato and mushroom taco filling from Everyday Mexican. It's super quick and considerably less fat than using pork chorizo.
What to put on rice?
Something I like to do with leftover rice (which we always seem to have alot of) is fried rice. Basically stirfry a bunch of veggies with garlic and ginger, add scrambled eggs, cooked rice and soy sauce. If you have any left over grilled meat or roasted meat, chop them up and add it to the mix. You can add a bit of sesame oil at the end and toss in some green scallions. Yum! I like to serve it with sriracha as a condiment.
Does candied ginger go bad?
Thanks for the quick replies everyone! the cookies were delicious!
Does candied ginger go bad?
I may be wrong on this but I think uncrystallized ginger is not as sweet and the ginger is lightly dusted with sugar -- off to make some ginger snaps! :)
Does candied ginger go bad?
I just found an unopened bag of Trader Joe's uncrystaliized candied ginger which has an expiry date of April 2009. I opened it up and it smells like ginger, feels like ginger, tastes like ginger. I now have a craving to make ginger snaps! Does dried candied ginger go bad? I didn't think dried goods ever needed an expiry date.
Fresh ricotta ideas (no sweets, please)
i like to make pizza bianca with ricotta. Instead of using a red sauce, spread ricotta/parmesan/mozzarella mix onto the pizza crust and bake. Once out of the oven, top with arugula that is drizzled with extra virgin olive oil, lemon juice and sprinkled with salt and pepper. MMmmm!
Why didn't my sweet potato fries get crispy??!!
This recipe was recently published in the New York Times. Since then, I've used this technique 3 times with excellent results! the sweet potatoes turned out very crisp. As others have said as well, make sure the pan isn't crowded or else they do turn mushy.

best easy roast chicken method?
Thanks toveggiegirl. My original link included the ")." from my sentence.
best easy roast chicken method?
I like Ina Garten's roast chicken recipe (http://www.foodnetwork.com/recipes/ina-garten/perfect-roast-chicken-recipe/index.html). I've made this recipe twice now with fabulous results. Super easy and satisfying. I don't bother with roasting the vegetables underneath. Instead I make a pan gravy which is delicious.
Favorite Fall Recipes
I make a similar soup but instead of rosemary I add a couple of minced garlic cloves, and some ground cumin and coriander as the seasoning. Simmer for 15 minutes and puree. Then garnish it with a carrot slaw made of grated carrots, lemon juice and chopped parsley. Add a drizzle of extra virgin olive oil right before serving.
The Perfect Grilled Cheese
Like many CHers, I like to try out whatever cheeses or breads I have on hand. But still my favorite is homemade white with cheddar or muenster. When I'm feeling fancy, I make GC with 9 grain bread, extra sharp cheddar, a few thin slices of granny smith apples and a dab of onion chutney.
ISO an eggplant parmesan recipe...
Instead of breading and frying the eggplant, you could try grilling the eggplant. Lightly oil the eggplant with garlic infused olive oil before grilling. I made an grilled eggplant parmesan last week and it was tasty!
What are you making right now?
I made a roast chicken (a la Ina Garten) for dinner and now making some chicken stock in the crockpot. I've made roast chicken a few times before with less than spectacular results to say the least! This time it was delicious.
Overabundance of peaches!
Do you peel them first? or can they be peeled later if you need to?
What do you make for your baby?
I was brought up like that too. I ate what was in front of me. My choice was to eat it or not. Even when I decided to be a vegetarian in my teenage years, my mom didn't make anything special for my self-imposed dietary restrictions!
My girls are now 4 and 1 yo, I think I will try the same approach as you and LulusMom suggest. And in 7 years (I'm hoping for less), maybe she'll be more adventurous with her food!
What do you make for your baby?
The exact thing happened to me! My first born is very picky and eats only plain whole foods. My second will pretty much eat anything. The more flavour the better. We basically fed her the same thing we were eating (but mashed or pureed). I have already fallen into the bad habit of making separate meals for her. :-( Luckily her tastes are very simple so I don't have to put a huge effort into making something extra.
What do you make for your baby?
I make a salmon-avocado mash for my 11 month old and she loves it. I think the first time I made it, I poached the salmon. Lately I've been grilling it and letting her feed herself flaked fish and avocado cubes.
Another favorite is creamy pasta with ham and peas. I toss cooked pasta with parmesan cheese and cream with cubes of ham and green peas. Sometimes I omit the cream and cheese and add chicken stock for a lighter dish.
Overabundance of peaches!
Thanks for all the suggestions and I will do a thorough search before adding a new post! The roast chicken salad with peaches sounds amazing. And I'll definitely freeze a pie/tart or 2 for a taste of summer in the middle of winter.
Overabundance of peaches!
I spent a gorgeous afternoon at a U-Pick peach farm and find myself with 16lbs of peaches. My DH and DD made a delicious peach pie (flavoured with almond and nutmeg). Next I plan on making some cobbler, grilled peaches and peach salsa. Any other ideas?
Thanks CHers!
I bought a can of Irish Oats-now what?
I will definitely have to try toasting the oats! I also make mine overnight. I make this following recipe alot, it's a keeper.
Quick steel cut oats with blueberry compote
Bring 4c water and pinch of salt to a boil
Stir in 1 cup steel cut oats (Irish oats) and large pinch of cinnamon
Turn off heat. Cover and let sit overnight
Next morning, stir well and bring to simmer over medium heat
Cover and cook over low heat until oats are tender (about 5 minutes)
Blueberry compote - place 1 cup blueberries, 1/4c maple syrup and 1 cinnamon stick in a small pot
Bring to simmer and cook over low heat until berries break down (about 5 minutes).
Spoon a little (or alot) compote over a bowl of oatmeal and enjoy!
recipes using brown rice that taste good?
I'm not a huge brown rice fan but one dish did win me over. It was a cheesy rice bake with swiss chard. It was so good I forgot it was even brown rice. I bought it from Three Stone Hearth (community supported kitchen in the Bay Area). If I made it, I'd probably throw in some bacon too :-)
Homemade ginger ale
Oh that's right, it is JG Vongerichten's recipe. I just remembered reading the AG blog posting. I just made another batch of ginger syrup and remembered the bit about the mint from your post. Instead of bruising a few for the drink, I threw in a bunch of minced mint leaves into the pot of ginger syrup. (I'm a bit of a scatterbrain these days). This drink really hits the spot on a hot summer day!
Homemade ginger ale
That's a neat idea. Have you tried the recipe? I wonder if the yeast would cloud the gingerale or if there's any residue at the bottom of the bottle.
Homemade ginger ale
I finally got around to making some home made gingerale this weekend. It was the tastiest, most refreshing drink (aside from sangria) that I've had in a long long time. I didn't use the NYT recipe, instead I followed the one from the Amateur Gourmet blog.
http://www.amateurgourmet.com/2009/06/homemade_ginger.html
I made a quart of ginger syrup and it didn't last for more than a few days! Now I know I won't have to worry about freezing the syrup after all. :-)
