Fresh Thai Lime Leave Recipes

Hello all,
I was sooooo lucky today at the farmer's market to buy fresh Thai Lime Leaves. I did a bit of a search for Thai recipes (and I have a book), but I thought I would turn to my Chowhound peeps to see if anyone has used these wonderful leaves for any recipes that are their favorites. I bought quite a few so I'm sure one dish won't use them all, so if anyone has any other suggestions for their use I'm all ears, really eyes I guess :)

Your tried and true Cook's illustrated Best recipes.

I'm a little late in responding to this, but I have many many years issues of Cooks Illustrated and there are several recipes I make each year:
- The Roast Turkey (original fecipe where you cook it breast side down, then flip to a wing, other wing then breast side up at a high temp) - best turkey ever
- The Cornbread Stuffing recipe - for me labor intensive, so I make a double batch. Highly fattening, but my husband requests it every Thanksgiving - so I make a double batch so it can be freezed for Christmas. .
- The stuffed peppers recipe is fabulous. Again I make a double batch. I do not like green pepper, but this recipe uses orange and red or yellow - very colorful.
- Brining - I didn't even know about brining until I read about it in CI. Now all my friend's brine their meats after tasting my chicken, pork or shrimp dishes.

Seasoning a Wok

Thanks maybe I'll try the lard method on medium heat. I really don't want a lot of smoke - it's a pain trying to get our smoke alarm off - once when we were having our tile removed there was so much dust that it went off and we couldn't figure out how to turn it off and ended up taking a baseball bat to it - cost a bit to get it fixed :-)

Seasoning a Wok

Hi all,
I believe this is an old post, but it came up when I did a search on 'seasoning a wok'. I just purchased a carbon steel wok from an Asian Market and would like to perform the oven method of seasoning. that is in this post. I have a few questions though.
Can the wok be seasoned with sesame oil?
I have an electric oven (gas stovetop) will the oven method cause a lot of smoke? I just want to be prepared, as we have had our fire alarm go off several times due to cooking/smoking .
Is there a method of seasoning a wok over a charcoal grill - like a Weber grilll? I'm sure a gas grill would be optimal, but we don't have one. I would prefer to do this outside if there is a lot of smoke involved in seasoning.

I know this has probably been discussed 50 million times but can someone suggest what I should look for (obviously anodized aluminum) to ensure I purchase cookware that does not have any unhealthy attributes? Or send links that I can review?

Love the wok, that I definitely will get. The Demeyere products look fabulous but they are out of my price range at this time. Same witht he iittala - but love looking at them.

Hi All,
New to this forum. I have circulon cookware and a couple of cuisinart stockpots and saute pan. I'm looking to slowly replace the circulon cookware piece by piece. My two pieces that I would like to first replace is a two handled circulon pan that I used extensively similar to this

but mine is around 12 " and no cover. The other is just probably a 2 quart saucepan (just recently let it boil dry with just water in and then it burnt - never done that before....now I know what they mean when they say 'can't even boil water' - well I can and then some :-)
I would like to locate these two items, plus a wok and would like to ensure they are healthy. I looked a bit on the acronyms PTFE and PFOA and would like items that do not contain these. I have a gas stove top and electric oven. I also hand wash all my cookware. I would appreciate any suggestions. Price point - I have no idea - just starting to look. I will probably use the internet for my shopping since I am in a very small city.
