What 's the wierdest recipe you have found and would you attempt it?
Strangest I have seen is a hedgehog, covered in clay and baked in a fire. When the hedgehog is done, you crack the baked clay open and rmove it, which removes the spines. My sister had pet hedgehogs, so I can never bring it up around her.

candy the peel and make lemon curd, lemon cake, lemon granita, etc from the juice. The candied peel is fantastic. I made some last week and laid strips of it on some poached seabass with fennel pollen.
Ba Xuyen
The bahn mi dac biet and bahn mi ga at the place on Mott(saigon bakery, in the back of the jewelry store) are fantastic. They have the best barbecued pork in the city. But Ba Xuyen is my local favorite. And the people there are incredibly nice.

Christmas eve was the challenging meal this year, as my brother and sister-in-law were with her family for Christmas night.
Christmas Eve:
sesame-cornmeal-crusted fried squid with mizuna, beets, candied pistachios and sherry-urfa biber-vinegarette
celeriac soup with greek yogurt, vietnamese cilantro, sea salt and white balsamic
forest honey-glazed quail with roasted turnips with nutmeg, roasted cipoline onions and microgreens
pan-cooked sea bass with leek puree, candied meyer lemon peel, and fennel pollen

Christmas was much simpler:
cut-up chicken roasted over red potatoes, carrots, parsnips, onions and prunes with white wine, thyme and shallots
new zealand spinach and green bean salad
no-knead bread with nigella seeds
Guest brought amazing cranberry-apple-nut relish

Okay to roast red potatoes?
Cooking Vidalia onions this much turns them flavorless. Use a regular onion, which will turn sweet from roasting.
Sweet onions do not retain their sweetness if cooked more than a few minutes.

yes, but mayonnaise tastes good and miracle whip does not. And can you make miracle whip at home(without having a collection of chemistry lab equipment)?

Try Grade B maple if you've never had it. Has a depth and intensity that is lacking in A and premium syrups, which to me just taste sweet.
What to put in bread pudding besides/instead of raisins - currants? Something else?
I second crystallized ginger, and add dates. good ricotta is also a good addition. sliced almonds and hazelnuts are also pretty nice.
Cooked down apple cider is a good sweetener.

Tom's Restaurant on Washington Ave in Prospect Heights also makes an excellent egg cream(I have had Hinsch's as well). I am an egg cream snob, and find their's to be my favorite around, though gem spa is still pretty good. But I still make better ones at home, just like grandma did.
