Gaetanos is usually pretty reliable but we had an off meal there Friday. Service slow and the food was rather...indifferent. My Bride's 'veal milanese' was simply a couple of dessicated veal cutlets plopped on a mound of greens and my tilapia livornese had a bland unctuous sauce that had no pop of caper or kalamata. I'd go to Red too.

At the Salt Creek for a party that size I imagine you'd get the private room they have downstairs which opens out on to the river if the weather is nice. I know a few folks who have been pleased by functions there.

The weather looks nice for Saturday, so there are a bunch of decent places within a 5 minute walk of the Count Basie. If you want booze I'd suggest Red for good "modern american" food, Basil T's for excellent beer (they brew it), good Italian fare and burgers (also order the calamari 'buffalo' style-really yum), Dublin House for decent pub grub and beer (nice dingy atmosphere too).
Buena Sera is right next door to Basie but I've never been very impressed with their food: very loud and the dishes have always seemed to me to be, well, 'watery'; is the only way I can describe it; they just never get the sauces right. Pazzo is advertised on the Basie's website but it's just awful in my opinion. I haven't been to the Murphy Style Grill in a long time; it used to be fairly decent for the price.
There are lots of BYOBs in town as well. Juanito's is quite good Mexican out near the train station, and one block farther down North of The Border is an excellent (and very authentic) hole-in-the-wall mexican place with really little space to sit down and eat again, depends what you're in the mood for. Lots of other places in town that a quick search here will show you.

Yeah, there's really not much in RB that would cover that, unfortunately. Different places may have cajun-esque dishes from time to time.

Depending upon the budget you could also try something like a show at the State Theater in New Brunswick followed or preceded by dinner at Stage Left.

Maybe they could use the heads in a bouquet garni style bag and then remove them before they get to the table to add the flavor you are seeking, but as tommy alludes they're ain't enough people around joisey who want to deal with heads and shells (or have the 'experience') to keep a restaurant profitable.

But then again I'm just a middle-aged self-proclaimed moron from Middletown who lacks your innate yet refreshingly humble erudition.
It's time to reassess the Red Bank dining scene.
I agree Pazzo is just awful.
I also agree that Red is consistently good.
Our default is Basil's: excellent beer (my mug gets a lot of use), the homemade pastas are often outstanding and their scarpariello is the best I've ever had.
A place that we've really grown to like on the byob front is Gaetanos (on Wallace Street). Every meal we've had there has been quite good.

For the Sussex Franklin maybe you want to try one of the restaurants at the golf resort nearby? That may be the best, although probably very over priced, option.
