Homemade Bread

Thanks for the replies!

If I make the dough the day before and let it rise once before putting it in the fridge, won't the dough collapse in the fridge? I think I had this experience years ago....but I do not remember the details. Could I really cold fridge make it collapse?

If i do put the dough in the fridge overnight, would it be beneficial to warm it to about 110 degrees before we work with it? I think I can do that in a warm oven.

I am going to be making the dough at home. The lesson with the kids is going to just be on shaping and baking. This is challah, so shaping is a big part of it.

Homemade Bread

I have a bread routine that works, but this week I need to find another way to do it, because instead of cooking bread for myself, I will be making bread with my daughter's preschool class!

I usually put the ingredients for 1 recipe's worth of bread (4c flour) in my bread machine and set it to dough. I check it periodically, but let the kneading and rise happen in the machine. Then I take the bread out, shape it, and let it rise on the counter for an hour before I bake it.

In order to have enough bread for the preschool class, I need to make 4x the recipe, which is 16c flour. This is way to big to fit in my bread machine.

I was thinking that I could make the dough in my kitchenaid. I have the dough arm that I can use to knead it, and I have 2 metal bowls so I can make 2x the recipe in each. But the temperature in my kitchen will be too cold to get a good rise....so what can I do?

Does anyone have any other tips? I know not to let the kids play with the dough TOO much or else it will be flat/hard bread.

Any thoughts on how I can mark each kid's bread so I can tell them apart? Is there any tape that I can write on that can go in the oven?

What Cookware to get?

Thank you everyone! I appreciate the advice to take this piece by piece. I am going to go shopping tomorrow and get maybe 1-2 items, see how I like them, and then go from there. AC is out of my range unless I find a bargain....maybe Cuisinart Multiclad Pro...

What Cookware to get?

I have been wanting to upgrade my cookware for ages. Currently, I am using a non-stick cookware set and it needs to go! I want to replace it with stainless....likely triply or clad....but I have a limited budget so All Clad is out.

I already have a Le Crueset 6.5 Dutch Oven.

To it, I think I would like to add:
10 or 12 inch saute pan
2 qt covered sauce pan
4 qt covered sauce pan

Any recommendations on brand?

Also, I am thinking that maybe I should get a cast iron saute pan instead of a stainless one...?

And, do you think I am missing any pots/pans from the list above? Do I need an everyday pan?

Vegetarian Kreplach?

This post got me thinking- my Bubbie used to make a version of kreplach with blueberries inside (and maybe a little sugar?)....so it was vegetarian. She would fry them in a little butter instead of boiling them.

Has anyone else ever heard of this? I am wondering if it is something she made up...

Check out Trader Joes- they have a lot of low sodium products. I like their Raisin Bran, both low sugar and sodium, which is hard to find in other brands....

Why do we stand for it?

It is because of a lack of options.

We have one kosher Chinese restaurant within an hour of where I live. It has been open for years. The food ranges from average to awful, but it is the only way to get kosher Chinese UNLESS you want to put in the effort to learn how to cook Chinese food and then do it yourself.

So, for regular restaurants, competition keeps the good ones in business and puts the bad ones out of business. For kosher restaurants, some areas are just missing the competition....and when you have a monopoly, you can get away with more....

I personally have no problem cooking my own Chinese food, but when we are part of a group of diners, or when everyone wants to select their own meal (and I am not a short order cook), it is just easier to go out to that one mediocre Chinese place....

Wing Wah Restaurant in Pikesville

I used to love this place when I lived in Pikesville- the duck sauce is as sweet as they get! But everything is VERY oily....pretty standard Americanized Chinese food...

Can't miss vegetarian food for Boston visitors

How about Zaytinya for Turkish/Lebanese tappas? Located off the Gallery Place/China Town stop on the red line, they have PLENTY of vegetarian options.

I have decided that I have a new standard in life- homemade pasta!

It is SO much better than the dried stuff, so why go to restaurants that serve dried pasta, especially when the dishes cost about the same!

I know there must be more restaurants out there that serve fresh pasta. Or are there any places where you can purchase this to make at home?

I live near Rockville, MD, but am often in VA and DC, so please respond with any good restaurants that make their own pasta. These places deserve a shot out anyway!

FYI- the Sour Cream and Pumpkin donuts at KK are the same donut....they just rename the Sour Cream ones to Pumkpin for the holiday season and then switch the name back in January.

That is also why they never sell "both" at the same time ;)

Every once in awhile I find myself in Laurel, MD.

I have been looking for a good place to grab a meal there, but all I can seem to find are lower quality chain restaurants (Silver Diner, Olive Garden, Fridays, and the list goes on).

I was hopeful about Rams Head, but after eating there a few times I realize they are serving inconsistently reheated food.

Are there any good eats in or near Laurel?

Restaurant suggestion

I will be in Philly for the weekend and am looking for places to eat that have a large vegetarian (fish included) selection. Healthier food would also be nice, but I know that can be hard to find.

Dried beans?

Thanks to both of you! I will check out MOMs today and Aphrodite this weekend when I can get to VA. It is a little far, but if I stock up and just go every once in awhile it should not be a big deal ;)

Where can I find a wide variety of dried beans in the DC metro area (MD preferably)?

Most places sell dried beans in plastic bag-like containers and they only sell the usual kinds (black, kidney, chick pea, butter). I am looking for loose beans that are more exotic- heirloom, cranberry, and stuff like that....

Passover in DC area

Moti's Grill in Kosher Mart is open. The food is a bit pricey since it is strictly kosher, but if you need that I believe they are the only game in town for passover.
