Freezer Hoarding

I too freezer hoard :-| Sometimes its better, like when my markers have not been absconded with. I like wet erase for plastics, sharpies for foil/freezer paper and dry erase for the inventory tallied on the freezer door. Works great in theory and at least occasionally in practice :-> I am learning that as my kids have become teens single prepared servings are the way to go and Corning is my friend. I'm still learning.

When my Gran passed unexpectedly, those hoarded up freezers were the last we would ever taste of Gran's love and expertise. Thankfully she hadn't frozen any tansies or there might have been one of those horrible blood feuds you often hear of. As it was there was enough for all of us to eat during the little over two weeks it took to finish the house and as many nights of memories to go with. So hoarding can have its positives.

When you first started cooking away from home, what were some of your disasters?

Why brine poultry and pork but not beef?

Strangely these are some of my favorite deli meats but that wasn't what I was/am thinking. I'm thinking roast. We brine and roast turkeys, chickens and pork shoulders/chops then have them for dinner but I've never seen the same with beef. I currently have a rib roast that I'm going to play with but I was really contemplating a tougher cut like a cross rib roast or a top or bottom round roast. Thanks all for your replies. I guess its time to do some experimenting :-)

Why brine poultry and pork but not beef?

Does anyone brine beef? If so, how and with what results? If not, why not? There may be recipes out there, but I haven't seen them. With such great results brining poultry and pork its got me looking at my rib roast and wondering what could be. Any suggestions?

Christmas time with a broken oven

Roasters are great to have. I use ours all the time now, even for pies and cookies as our oven is not working also :-( The OP might be able to pick one up at the local thrift store for cheap, I'd call ahead and see if they have any. Although the meats should be delicious grilled, I'd use the roaster or a crockpot if you have one for the egg dish. Good luck.

ideas for appetizer using leftover smoked ham?

Potted ham aka deviled ham is very good and easy to make. The old recipes call for mustard, cayenne and ground mace, no mayo, then ground and baked. Delicious on crackers or in celery. I have also mashed the deviled ham w/cooked egg yolks and a bit of mayo, then spooned into the egg white for deviled ham and eggs.

Doesn't everyone worship you ghg? How could one not!? You *are* after all *the* goodhealthgourmet! Providing gourmet, healthful and sometimes obscure but always tasty info from the envied (at least by me, kinda) environs of the SoCal Coast. You do rock ghg - always good advice ;->

That reminds me of when my son was in kindergarten, he attended a Waldorff charter school. Every Thursday all the children would knead there own personal mini loaf of bread ( I think they helped make the dough too) anyway they were then taken to the cafeteria for chilling and the next day brought back to the class room for baking. On Friday each child brought a vegetable and they made soup and baked bread. Man that was an awesome school! Maybe that's where his idea to have a party like this really came from :-) Thanks for the memory. _M

Actually that sounds pretty good. Reminds me of an apple pie w/sharp cheddar cheat. I love recipes like this because they make me think crazy things! Extra bonus points for being a found, handwritten recipe, love, love love those! Recently I found a note in a cookbook to allow a child to get off the school bus at a friends house, dated 1962. Love it!

Actually I like your broccoli w/garlic. I think it would work if the OP used a good frozen broccoli they trusted and then just made the sauce. Either toss the still frozen broccoli into the pan sauce for a minute before placing in a microwave safe container or just pour the sauce on the frozen broccoli in the microwave safe container. Its a thought anyway . Maybe check out what is available on the frozen isle for inspiration. If the OP has time, I'd try this out in advance and see how I like it.

As a side how about green beans sauteed simply with some shallot or ginger and garlic, perhaps a little soy or sesame oil and deglazed with orange juice?

Potluck Neophyte - how to cook/hold entree for a four hour wait before serving?

First I'd ask the hosts opinion of which would be easiest for them to handle. If you prebake it tonight and let it chill overnight you can reheat it in an oven or microwave. Like lasagna it always seems to cut and taste so much better the second day.

If the crockpot looks like the way to go and its not already assembled I'd assemble it tonight and cook it in the oven (yes crocks are fine in the oven) chill and then reheat tomorrow. If its already assembled in your 9x13 I would definitely bake it tonight and chill it. Then you can cut pieces out to fit into the crock and cover with more cream of what not and green chiles if you've got it or sour cream and salsa and then cheese maybe with crumbled corn chips on top. Or if I were peeved, I'd probably go the cat sick route and cover it with the aforementioned sauce(s) and plenty of cheese. Its all good :-)

I had never considered that someone would not know the story of Stone Soup! I guess I should have provided a link. (Thanks paulj! ) I was raised on the starving soldiers coming back in winter and eventually conning a community into a communal meal.

My son is 17 and rather typically guy, so I was surprised when he asked if he could have this get together and host (his first time). It should be interesting and I hope a lot of fun.

Enchilada casserole made w/anything from roasted veg and/or black beans to tvp or lentils, serve w/refried beans and spanish rice if they need it.

Thanks, this is a great tip. My mothers snowball recipe just might make it if I shipped them packed in powdered sugar.
