Dried Beans - What's is the trick?
I do just the opposite. I hard boil my hocks for an hr, taste the water for saltiness, then add my dried, never soaked beans. ( they have been picked over and rinsed in a collander) I cook them for approx 4 hrs, then turn off the pot. I then let them sit in all that glorious hamhock and meld.
TDH likes large limas and my fav are red beans. We switch off, red beans, lima's, etc.. Beans, greens and cornbread is one of our fav meals during the winter.
Surprisingly, it seems to take the same amount of time to cook the lima's as it takes to cook the much smaller red beans. Perhaps my step of letting the beans hang out with the hocks does the trick because after I let the pot sit for a couple hrs, then bring it to a boil to serve, the beans regardless of their size, are cooked perfectly. Pasta is wonderful al dente. Beans aren't :-)

I really dropped the ball on this one. I completely misunderstood this :" but wiped it with a wet paper towel, then dried it." I assumed that the OP meant after they had already tried washing it with soapy water and still couldn't get the fish funk out of it.. Because of course one would assume that after cooking fish in a cast iron skillet that soapy water would follow. I truly missed the "(wet ) paper towel" cleaning. I assumed, again, that this was a paper towel used to dry the pan before lightly coating with oil.
I should never post late at night when insomnia is driving me crazy. Appologies.

That is why I have 3 cast iron skillets, pots. A deep chicken fryer, reg old bacon and egg, sausauge gravy and biscuit skillet, and a 10 inch skillet for baked corn bread.

The OP asked how to remove an odor from her cast iron skillet. I answered with a solution that has worked many times in my experience. I never suggested that this is a way to put up a cast iron skillet on a regular basis.
Just wiping with a paper towel and putting it up would "skeeve?" me too.

I don't add oil to my cast iron skillets after use and cleaning, either.
The OP wanted to get rid of a smell and because my method of cleaning was abrasive, oil as a last step is called for.
If this is a well seasoned skillet to begin with, the salt and lemon trick will work, and wiping the skillet with a bit of oil won't stand on the top coat and leave a sticky substance.

I love asparagus in every way, shape or form. I love to open a can of Jolly Green Giant asparagus spears, reach in and grab some right out of the can. And I am not ashamed :-)

Table salt and Lemon will do the trick.
Pour a few T of salt into the pan. Cut a lemon in half and use the halved lemon to scrub the pan while squeezing the juice out of the lemon. Use both halves, then let it sit for about 5 mins. Dont let it sit too long, it will draw too much of the oils used when it was seasoned.
If you are not up to re-seasoning again, wipe the salt and lemon with a paper towel and follow with a coat of oil.

I am confused by that as well.
I also have a problem with Paula Deen and her reluctance to take responsability or admit that what she has been telling folks to eat may have been a bit extreme in terms of the fat content in her food. Instead, she gets the gig for her kid to have a lower fat show. Because of course you can't change HER show. If that happened, then it would look like she was wrong!
Another thing, jmo, I don't think that her son's show wants to cover low carb/diabetic friendly reciepes, or even mention them for that matter.. For the same reason I stated above. Her brand is everything and other than that million dollar check from the drug company, she doesn't want an itty bitty thing like diabetes to come between the fans and her brand.And she certainly doesn't want to remind them about the D Word.For someone with such a big mouth and loud personality, she sure has went to meek mode in interviews.

I forgot the bacon! This is it! I may bump it up a bit from 2 TB brown sugar, may depend on dark brown or light. All the ingredients are here, though.

Sunshine and Smartie, I am from the south too, and have never liked canned peas. BTW, we call them sweet peas in my family to distinguish from the many other peas that grow here. They are truly little burst's of sugar right off the vine. Anyway, back to cold canned pea's and/or mayo. I attended a weekend that eventually became my first family get together with my husband's side of the family. While everyone was busy in the kitchen, I was asked if I minded making the "Pea Salad".( I was a newbie, they gave me easy work back then) COLD Peas?! I already started getting scared. Then they pointed towards the canned peas, Mayo, hard boiled eggs, and an onion. Oh, and don't forget the sugar, vinegar and S&P... Cold peas and mayo? With boiled eggs?! and onions?! Oh God, nothing good could come from this. Are they pulling a prank to see how I react? How could this even taste good? Well, it does. Of course I had to taste as I made it. I didn't know what it was supposed to taste like, but for some reason all of those funky ingredient's came together. It is one of those recipe's that look terrible on paper but manage to taste pretty good. TC, Robin

We have a silly little ritual at my house when it comes to beans. For example, I love red beans with leftover meat from a cooked ham. Mr. R prefers big limas with smoked hocks. So we alternate. The meal always includes rice, cornbread (sweet) and chopped or sliced onions.
I prefer great northerns for bean soup.
I love a bean thread too because I can ask my same worn out question again. Does anyone have a recipe for baked Lima Beans like the Amish make? It is almost like a barbq taste but is sweet. There is also bacon in it. The limas are large limas.

Many folks are saying "give her a break!, she is making up for it now"! It is black or white to me. Either she is making up for something or she isn't. Her fans can't say that she did nothing wrong for the past 3 yrs and then say that she is doing a superb job of making it up to people with new recipes and new shows.. No gray area. In my opinion.

I don't know you at all. But if you mentioned here that you were taking a medication and I had taken the med and had serious side effects, I would warn you. I am not the FDA, your doctor or a television cook. I would do it because I would want you to be aware. I am afraid that Paula Deen would drop dead before she admitted that anything was wrong in her bank accou..brand..world. And she will feed you deep friend butter while you are having a heart attack "Y'all" and say you died happy.
After all, she has been puttiing burgers on donuts and encouraging, promoting everyone to indulge. All the while she is in contact with a pharm co. to promote a healthy eating along with med approach. BUT! can't let the cat out of the bag yet! We have to make $ in the meantime! pffft

This kind of campaign with the drug company didn't happen overnight. This proccess more than likely (IMO) started soon after she was DX.

Again, this didn't happen overnight. So, did Deen hide this from her publicist? I find that highly unlikely but I could be wrong ; and the publicist isn't just hightailing it out of there out of shame for allowing this publicity nightmare to percolate behind the scenes for 3 yrs, and then allowed it to be presented to the public in such a distasteful way.

She has managed to perform a circus act with food all this time. The elephant swims? Lets see if he can walk on a wedge of deep fried macaroni and cheese.. The dog barks the ABC's? Let's see if he can do it with a stick of butter in his mouth...
I have never been fond of her or her take on southern cooking.. My opinion has always been that she doesn't even care about true southern cooking because she was too busy trying to change it. As if FAT alone is representative of the way folks in the south cook. It is insulting to anyone that knows better.
She also wasn't destitute and needed rent money when she sent her kids out to shill for her either, back in the day. It looks good on paper, but this wasn't the rags to riches story some folks seem to want to hold on to.

That is what has always bothered me about her food. She just piles on excess fat like it is a circus act.

It seemed to me that she was trying her best to make things that were already loaded with fat even fattier because she couldn't come up with new recipes. Then calls it southern cooking.

Well, she did have an affair with a married man for many yrs. ( not telling tales out of school, this is in HER book )
So I can only conclude from that and this recent situation that maybe she doesn't have a care in the world or feels any responsabilty for her actions, as long as she is getting what she wants.

I agree. Regardless of the timing of the meal, it seemed like they all just wanted to dine and dash and didn't seem interested in the rest of the niceties, drinking ,having coffee, conversation.
Having something to snack on while dinner is being prepared is always a good thing. But, if folks just want to eat and get out of there, there is no amount of crab toast or appologies for the lateness of the dinner that will keep the dashers from staying past the entree.
Especially those babysitter people. Some have a babysitter for a reason and your dinner is only part of it. See, they eat at your house, then immediately after the entree they are headed for drinks because they have a babysitter..
The longer that you take for dinner, the less time they have to go out afterwards and you are are to blame for this due to poor timing.
Squishing potato chips in your sandwich...anyone else do this?
This was my fav sandwich 40 yrs ago and I eat it from time to time. I think I will hit the deli for some bologna this weekend. Unfortunately we don't get Wonder Bread down here, so I will have to forgo the wonderful "sqiushy" part that Wonder Bread provides There is nothing like that bread if you just want a white bread sandwich. My sis travels alot and uses my house as a home base sometimes. I cannot tell you how excited I get when she arrives with homemade scrapple and Wonder Bread !

I wish that you had asked before you went. I would have told you to expect exactly what you got. It is never any good. Never has been. It is a tourist trap with terrible food.
I enjoyed her books so much as a young person and was thrilled when we moved to the area 18 yrs ago. The restaurant aside, her homestead and the MKR Park are lovely and worth the visit. Take a picnic lunch and enjoy!
I have eaten there, I had just moved to the area and had to try it. It was bad back then. This was also before everybody told me that it was a terrible place to eat. MKR books had alot of simple recipes in her writings..none of them are included in the grease fest that is Cross Creek's menu. I expected at least a few of those dishes. Or at least regional dishes done well.

Unexpected guests at a dinner party?
I posted a bit upthread about bringing "Mom" as an extra to a wedding. I find it facinating that some folks feel bringing Mom is less rude then, say, bringing a friend. In my situation she also brought her husband..but I digress.
"Somebody's Mom" has to be the #1 uninvited guest to any wedding, per my own informal poll after somebody's Mom crashed my own wedding.
