Talk about knives

All this talk of cutlery makes me angry, queasy and sad. I recently had my entire knife case stolen. Several thousand dollars of knives that have to be replaced along with various microplanes, digital thermometer and little black books, etc. The knives that were gifts from my wife are the ones that are the hardest to replace. Karma; please act swiftly.

repulsive texture; heavenly taste?

I absolutely hate wet cooked okra. My Grandmother used to reserve a special batch of her gumbo without okra just for me. It's the one slimy food that I've never been able to get past the consistency with. Now fried okra, that's another story....love it!

Reading about the quails egg makes me want to do a quail egg shooter. Chilled sake, a bit of ponzu, shaved scallions, raw quail egg and a pinch of togarashi, mmmmm.

What's the best thing to put ketchup on?

I love to mix berbere(spice blend from Ethiopia) and tamarind into ketchup as a great glaze for my meatloaf. I also love it on scrambled eggs, a plain ol' burger, fries and spicy tater tots.

There are numerous options here...

*mini chile rellenos stuffed with queso fresco and cilantro
*a spicy bad ass salsa or guacamole (don't use the whole # obviously)
*pickle them with sliced, slightly blanched carrots
*string them up in a dry, well ventilated room and dry them for later use
*grind them up and rub them in the eyes of your enemies/rivals
*send them to me
*jalapeno cornbread

When you order a T-Bone Steak at a steakhouse ...

Slightly off topic, but this reminds me of a trip to Costa Rica where I ordered a t-bone and recieved a butterflied NY Strip cut to resemble a t-bone. My wife said, "there's no bone in your t-bone." I laughed and wondered why I even ordered it, but in truth it was cooked perfectly and delicious.

People don't go to Costa Rica for the food. Although Gallo Pinto is fantastic after a long night drinking with the locals.

What is the best tool for dismembering a chicken?

Well, it all depends on the size of the bird. For me personally, I prefer the Messermeister Meridian Elite 5" stiff boning knife. Short enough so you can control it around all those nooks and crannys...especially the oyster. To me using a long boning knife is like trying to write a note with a 12" pencil...in the end it should be the knife your most comfortable handling. I knock out a 40# case of wogs in 20 minutes using a combination of stiff boning and cleaver.

Wooden Sheath for 9 1/2" Masahiro MV 240mm

This is my favorite knife to use when preparing sushi. I've used this knife for years now and have never been able to find a wooden sheath for it. Any hounds know of a place to find one online?
