Black-Eyed Pea Vegan Burgers

pretty good.. definitely had trouble keeping them together. if i make them again i will add something binding like flax seeds or egg replacer.

added lemon juice, agave and cumin to bump up the flavor. they got pretty dark while cooking but that turned out to be the best part. very tasty!

Chole (Chana) Masala

very good. ive made this twice now. the second time i took some of madmaya's wonderful suggestions and added butter to the oil, and cilantro and lemon at the end. forgot the cream but i will try that next time.

save yourself a step or two and just crush the tomatoes with your hands on the way in.. all that draining and cutting is a waste of time and clean dishes.

served with brown rice (i know), an indian spinach and lentil dish, pea-lafels, and some yogurt mixed with mint and salt.

Grilled Salmon

i used about 1/2 the syrup and it still tasted too sweet when i tried it on its own, but added to the fish, everything balanced out.

Baked Quinoa Adobado

this was very good.. i used two of the peppers out of the can instead of one. i didnt add any extra sauce out of the can. i used a little white cheddar because i was out of queso fresco.. the dish is so flavorful, it really didnt need much cheese.

Curried Cauliflower, Chickpeas, and Tofu

This was very good! I had to cook the tofu in 2 batches so not to overcrowd the pan, which means next time I will start that first. I will probably also omit the flour. Took about an hour from beginning to end, and I am relatively slow.
