Quick question: how is the noise level at these 5 restaurants?

1 is comfortably quiet but active, 2 slightly less so, 3, 4, and 5 are lately fairly empty.

Good lunch spot near 7th and 37th?

If you like Korean Food, Cho Dang Gol on 35th is excellent. Also in the neighborhood is Keen's Chop House, 36th just off 6th Ave.

Boqueria on 19th St has great Tapas-you can defntitely make a full meal of it, Flat Iron Lounge just a few doors east of it for Cocktails.

Yes, They are staffed and begin training next week. Scott Carney (Gotham, The Tonic) is in charge, and haa is correct, the Chef is Gary Robins, formerly of Biltmore Room.

Salmon - Wine Pairing for wine newbie

White Burgundy is the classic pairing, but I think carswell nailed it: Pinot Noir from alsace or other cooler regions (not Sonoma or Central Coast). Trimbach makes a Pinot that would be a great pairing for your salmon.

How about Osteria del Sole in the West Village? I attended a wedding rehearsal dinner there, they took over most of the dining room. It was delicious, Family style and not crazy expensive.

What's the Most Time Consuming Thing You Have Ever Cooked?

We Roasted a whole pig in a Caja China Box. Estimates for cooking time were 5 hours at 30lbs, but it was more like 7. If you count the brining and marinating, about 30 hours total. Well worth it; the poor bugger's cheeks blew up like Dizzy Gillespie-Mmmmmmmmmm...

need new roasting pan

I like my all clad- it has a non-stick calphalon-like surface so it's an easy clean, and it's very heavy so it doesn't warp. I was using a Le Creuset before that, and liked it as well, but it was harder to clean, although I see the new Creusts are black inside, so the enamel won't show staining.

Danny Meyer is great to his team-so all of his restaurants are closed on Thanksgiving. I would Call the Concierge at the Waldorf. If you're not interested in Peacock Alley, they can give you a list of what's open that day in NYC.

Risotto came out mushy-1st time

You can't stir risotto too much, but you can stir it too hard. It helps if you have a pot designed for risotto (rounded not squared off where the walls hit the bottom) and I like to use a Flat wooden spoon/spatula.

I really like Fleur de Sel at 5 W 20th Street. It's a lovely room without being stuffy or formal, and Cyril Renaud the Chef/ Owner has got a great touch for modern twists on the classics.

Daniel or Aureole?

Wow eve, you sure love Aureole! Dante is definitely a pro- was running Nobu Milan before Aureole, but he's no Charlie Palmer, and he's definitely no Daniel Boulud.
As for Service, I'm sorry you feel that way about Daniel's staff, I've never had anything but perfect service there.

Daniel or Aureole?

Charlie Palmer is a great man and a great Chef, but with an ever expanding Empire including the 400 million dollar Palmer Hotel in Las Vegas, I'm not sure how much time he has for Aureole.
Daniel is superior in every way.

Need a meal to go with a 99 Brunello

I think it might overpower rabbit, unless the preparation is a civet-style braise. In Tuscany, two beautiful pairings for the Brunello would be a pasta with a ragout di Cinghale (wild Boar), or a simple Bistecca Fiorentino.
Although the wine may benefit from a few more years, it will drink quite well right now.

Not much to choose from in this neighborhood. There's always Cafe Luxembourg for reliable (if unremarkable) bistro fare, or Picholine, a bit more upscale but may be closed for renovations.

Best lesser-known beer bars in NYC

Don't know in Brooklyn, but when in Manhatten Try d.b.a. on 1st Avenue between 2nd and 3rd Streets. Strong Belgian list and one of the only places for hand-drawn, cask conditioned English Ales.

Is Purple Heart wood poisonous?

I'd be more concerned with the seams between the oak and purple heart than Toxicity. Since the woods have different hardness and densities, they will expand and contract differently under changes in temperature and humidity.
You may want to do all purple heart, I've never heard of it being toxic, and it is very dense and resists scoring.
