ISO "Red" Chicken Chili Recipe

I am looking (utterly in vain) for a lovely ground chicken chili recipe that contains tomatoes (there seem to be many white chicken chili recipes, but few with ground chicken and tomatoes). Anyone have any leads?

Great Eats in Maui

Seafront Fish Market in the south St. Lawrence Market sells panko - a big plastic container full for $2 - best deal on it that I can find.

fozen pearl onions

They are the best deal in town! A HUGE bag for about $5.

Pusateri's also sells them by the 500mLish container - $2.99 - best (read: only?!) deal in there. :)

Ontario Wild Leeks (aka Ramps)

I bought some last year from the produce seller whose stand is right outside the TD Green Machine kiosk at the north St. Lawrence Market. They were gorgeous - we had them with salmon. I do hope they are available this weekend or next at market!

Prego Della Piazza - As Good As Ever

I love the location and ambiance, but had the worst risotto of my life there! The rice was crunchy - at least a good 15 minutes away from al dente - and when the waiter came with the bill (which was the next time he came to the table after serving our dishes), I mentioned that the risotto had been virtually inedible. He retorted with, "Well, you should have said something sooner so we could have fixed the problem. It's too late now!" No apologies or offers to remove the dish from the bill. That was the last time we ate there. Too bad; it's a lovely patio.

Restaurant cookbooks

I fervently second Les Halles! Fabulous!

I also rely on the Balthazar and Union Square Cafe cookbooks. Tons of favourite recipes from those books: french onion soup, duck shepherd's pie, short ribs from Balthazar and bar nuts, mashed taters, scallops from USC.

Request for unusual dessert to impress

What about cornbread pound cake with sugared rosemary and accompanying rosemary syrup? We made it for American Thanksgiving to rave reviews. You could do a chocolate drizzle or a rosemary-infused chocolate sauce instead of a syrup if you really want the chocolate element.

French Onion soup in Toronto

I'm not crazy about Le Papillon - seems to be stuck in the 80's. That said, the best French Onion soup that I've had in Toronto is at Jacque's Bistro du Parc in Yorkville. Real old school decor but gorgeous soup! Gruyere cheese, crisp bread, silky onions, maybe a splash of port? Just fab.

Cava or Trevor's Kitchen

I much preferred my experience at Cava, but I'm a Chris MacDonald fan and hate basements.

The wait staff were wonderfully accomodating to my barrage of questions about charcuterie (eager home cook), and even brought me back to the kitchen for a tour of their homemade sausages. Besides, who would possibly turn down chipotle caramel corn?!

That said, pate's right - they are very different experiences. I'd say check out both menus online and go for the one that appeals. Neither disappoint!

Best foie gras in city?

White House Meats at the market has fabulous foie gras, but they only sell it whole, so you're looking at a good pound of it - when I bought a piece last month, it cost me about $75. Steep, but Scheffler's at the market sells small slivers for 4x the price, so it's definitely one to buy in larger quantities if you can swing it. Hope that helps!

Edible flowers

If you're feeling rather hard-core, you can dip them in meringue powder and water and then sugar them. I did this with some over Christmas, and now I have two jars of gorgeous decorations for cupcakes and the like.

Mussels - what's your favorite way to cook them?

I prefer hot chorizo, garlic, shallots, white wine, tomatoes with fresh minced parsley and coriander.

Marcella Hazan's Spaghetti Carbonara recipe

Thanks for highlighting this recipe! I'd never had a carbonara until last night, and my DH proclaimed upon eating it that it was definitely something to add to the regular rotation. I used a combo of pancetta and bacon (because I didn't have enough pancetta) and all parmesan, and it was lovely. It reinforces the need for super-fresh ingredients, though. We had been to a friend's farm over the weekend, and had been given fresh eggs, so it was perfect. Thanks, 'Hounds! I don't think it would have hit my radar without you!

Funky Salad Recipe??

My favourite all-season salad: oven-roasted slices of yam artfully arranged on the plate around a mound of warm sauteed spinach and garlic with sauteed whole button mushrooms on top, drizzled with a balsamic reduction and topped with goat cheese or crumbled feta cheese. Really easy to make ahead, can be a starter or an entire meal. Absolutely fabulous flavours together!

Carbonnade de Boeuf

Smoked pimenton...nice touch! I agree about the dark beer - the sugar makes it a bit sweet and the lighter beers don't cut it enough.

Raw Flavourful Steaks. Where to go, North York or anywhere in GTA, I will drive if it's worth it.

pearlD, I get my skirt steak at Whitehouse Meats at the St. L. Market. You have to ask for it, but it's awesome and usually very cheap ($7.99/lb).

All the replies above sound amazing. I personally adore fresh peas with mint with my lamb. Oh, and what about a jerusalem artichoke side, either sliced and sauteed or pureed? That would be delish!

Need Dessert that doubleserves as Breakfast

My quick go-to torte recipe is the plum torte recipe from the NY Times in the 70's. I use any kind of fruit on top (peaches, figs, berries, etc.), and the recipe doubles or triples beautifully. It's fairly healthy, too! Guests rave, and my DH loves a slice the next day with his morning coffee.

Pepitas

Two ideas:

1) I recently had a pepian hummus (pepitas, sesame oil, garlic, lemon, paprika, s+p) at a restaurant as an amuse that was outstanding.

2) Also, we made curried roasted pepitas for American Thanksgiving from Bon Appetit. They were delicious!
