Tei An, Marquee Grill & The Chesterfield
Chsterfield just opened but does a pretty fantastic job. The drinks are just as much the star as the food. Everything made in house.
Marquee is especially good as are the cocktails. Try the 9 course tasting menu to see how this top chef thinks. The regular menu is fairly safe otherwise. Duck 3 ways is one of his signature dishes.

Except for the brandy Christine listed the ingredients for a Manhattan which is 1/4 cup rye whiskey, 2 tablespoons sweet vermouth, 2 dashes Angostura bitters, 1 maraschino cherry. My drink of choice.
Looking for Chef to teach lesson in my home
Could get pricey. I have heard chefs charging $1500 and up for private dinners. I would consider looking at a chef between gigs like Marc Casell. Like twin says, there are some wonderful chefs working at Cordon Bleu that could help like Joel Harloff.
Tacos in Dallas are shameful
+1 The twin speaks wise. There has been more written about great and bountiful tacos in Dallas in 2011 to feed all of Texas.
BLTs
I consider the pork belly BLT at the Commissary the best sandwich I have had in Dallas. Usually not served in the afternoon. The tomato is sous vide.
Help me find a great venue
With that many people you could buy out a restaurant depending on your budget. Have you considered a hotel? The Fairmont has a pretty magical chef.
Good grits in Dallas?
You do realize that if a place serves shrimp and grits you could most likely ask for a side of grits. Anyone serving Homestead Gristmill brand of grits will be superior. Off the top of my head I can think of numerous places that carry their brand (which is ground in Waco from a 100 yr old water run gristmill). Screen Door, Hatties, Neighborhood Services, Bolsa, Victor Tango, Rathbuns, Kathleen's Sky Diner, Parigi, and I believe Smoke to name a few.

Dining recommendation for a girl's wkend
Disagree with fried remark about VT. I do not even recall a fried item on the menu, but its possible they have them. I like the burrata, lamb, hummus and much more. All made sharable.

Dining recommendation for a girl's wkend
Every place you mention sounds fun for your group.
Your Saturday night sounds great, I might recommend Victor tango if you are wanting good food, a fun atmosphere, and a place to be seen a bit.
Also RedFork just opened up on Fitzhugh and is starting to get some of the overflow crowd of Henderson. They have some nice dishes. The chef is from Craft and has a lot of good experience. The cocktail program is fast becoming one of my favorite programs in Dallas. Nothing is overly girly sweet and well balanced. Nice place for a late cocktail off the beaten path, but should have a nice crowd. Last time I was in Tom Colicchio was dining there (he's the Top Chef guy and owner of all the Craft's across the country).
Also on Henderson I like Veritas Wine Bar. You can get a late night cheese board and a great selection of good wines at value prices (plus the high dollar stuff). You may like Bubble Bar, it's new and trendy.
There are plenty of fun places around Park Cities in the Uptown area. I am sure you will have a great weekend.
Zatarain's or Louisiana Fish Fry Crab/Shrimp Boil - Where can I find it?!
Virtually any grocer -- good, bad, large, small or indifferent sell both brands.
I'm looking for a butcher shop / meat market (not a grocer or restaurant).
12am writing not as clear. Was saying that people should use these local guys rather than a large chain or the local vendors vanish as did VonGersteem.
Sodium alginate local source?
You will need to order it. I have a very large container from El Bulli. I can share a bit.
New Trend in Tipping?
I do not think gaucho service demands less of a tip. But if you add an automatic tip to my bill for 2 people I will be Groucho at the gaucho. I imagine that Brazil Brasiliero does this to ensure that all the waiters who pool tips get an equal share.
If I went to the restaurant (and baby that is a HUGE 'if') I would not want to be forced any percentage of tip if it was just a few people dining. Presumptuous on their part.
[DFW]99 Ranch Market is Coming to Plano!
The beef tenderloin not so tender, but I have smoked the tenderloin and it came out just fine. It was fantastic for serviing a large group cheaply (~$35 for whole tenderloin).
New Trend in Tipping?
In making a call to both places mentioned there are a few rules each establishment goes by when it comes to tipping.
First they size you up and if you look like a bad tipper... just kidding.
Seriously, Neo's claims to add a tip to parties of 6 or more -or- when there is a special event. The most recent special event was the Mav's parade. Suppose that won't come along all that often, and they said they cannot remember the last time the 'special event tipping rule' came into play.
Brazil Brasiliero is another matter. They also claim when 6 or more gather they get dinged (expected and an easy way to tip if you ask me). The other time the auto-tip comes to play is during their Rodizio service. Except for lunch when they have a buffet, this place is always doing the Rodizio style of service. It's why people go to the place.
Being one who dines out at least 2 meals a day, I never see an auto-tip for less than 6 people and would say it is not a trend.

Its good. Not what Mr Twin would consider his regular stop (1st Chinese BBQ) but good.

VonGersteem's Butcher Shop closed their doors a few weeks back. Another excellent reason for everyone to shop these butchers and other local concerns. He was an interesting fellow. On the weekends he could be found out on the street giving away ground beef to passerbys because he wanted to sell fresh so the unsold product at the end of the weekend was free for the taking.
Same holds true to the few cheesemongers, the florists and any number of local people selling their goods. Tom Spicer and other local farmers included.
Fort worth BBQ
Eh, maybe an off day. I enjoyed what I had. It's a bit different, but vive la différence. What I had rocked it. I love and respect Daniel but tastes do vary.

Charlie at the Windmill can make said drinks. Call a few days ahead and they can pull in all the props.
