chocolate tart recipe
Joy of cooking has a dark chocolate tart that I use all the time. They may be calling it a torte. The recipe is for a 9" torte so you may have a bit extra. Very quick and easy. Shortbread crust is typically the way I go. Good luck and enjoy. CC
vanilla infused simple syrup - cocktail ideas?
I usually get a quart of raspberries and cover them with vodka and let them sit for a month. The end product is outstanding with ice cubes and seltzer. I am sure vanilla syrup would be a nice touch.
I love coffee and cognac. Vanilla syrup would work there too.

The last few seasons the blowfish population seems to be on the uptick. I have never made them for myself but always order them when the opportunity presents itself. My local fish market has plenty. Does anyone have a simple and tasty method for fried puffers? Thanks, CC.

Greetings aficionados! Done some research, which is another way to say drinking. Prunier VS is very tasty, great value also. Under $30! Would love to try the VSOP. The Chalfonte that I enjoyed now seems quite sweet. I am going to treat myself to the Hine in the future. Will report back. CC

A lot of practice. They are a bit messy. I have not mastered the art but I'm getting better. Saute your veggies first the place in a strainer to get rid of extra juice. That also helps with the splattering of the hot oil.
Tip: Don't overfill. That will help them be consistent

Make sure the contents are a consistent size. I use cabbage, carrots, sprouts, garlic, ginger, scallion, mushrooms, ground chicken. I pre cook the meat.

I doubt I'll get a pressure cooker. One more thing to crowd the cabinets. I remember our neighbors next door, Mildred and Walter, always used theirs. I still can recall the hiss of the train whistle coming over the hedges.

Treated Shrimp
Are all shrimp treated with sodium metabisulfite? My local market listed their shrimp as treated with the following preservative. Is it that bad? Am I naive? I know they are ultra perishable. Are some retailers not being forthright? What's your perspective?

Why do they take forever? I have soaked them overnight and simmered them but they take hours! Is there a trick to speeding up the process? Is it my water? They are not exotic, just black beans or kidney types. Any tips out there?

You are a good diplomat. You're right, it is a personal taste which needs to develop.
I live in eastern Suffolk County. There are fine shops in the area. Shelf space is being dedicated to bourbon these days. There are many I would like to try. Aged rum is making a market push also.

Great start! As far as what I have already tried, not too many. Price range? Under a $100. The local shops usually have a limited selection that tends to be dominated by the bigger names.
Here is a good question. Which of the big brands are worth trying? Which should be avoided?

E+J - yuck. I know people that call it 'Easy Jesus.' What does that mean? I'm not sure but drink enough and maybe you will talk to him.
There is not a lot of value in the brandy section. Beware or the cheap stuff!
Cognac Recommendations
Looking for some new Cognacs to try. I like to sample the small producers and usually gravitate toward the softer styles. I don't like heavy oak or sweet tasting Cognac. I have a bottle of Axel Gay that I'm enjoying. Chalfonte is another good one. Value is preferable but is not going to limit my purchase. Any help would be greatly appreciated.

Shad Roe
The market had some boned shad! Baked it with lemon and S+P. Verdict? Loved it. Reminded me of a young bluefish. Will do that dish again.
No whole shad on hand. Would like to try a whole fish over charcoal with a few herbs and lemon.
Early will take on a new meaning this year. Strange weather indeed.
Do You Have A Butcher?
I try hard to avoid the warehouse types like BJ's, Sam's and Costco for food. They are great for soap and paper products and even gas but not meat.
I know their price is unbeatable on many things but they represent the opposite of local.
I do have a butcher at the local market, costs a bit more but they know my name and they make the sausage daily and run out of things by mid day.
lime curd -- zest or no?
I am not obsessed with zest like the rest of the western world, so I say no. Also citrus can be waxed and sprayed so if you do zest, scrub first.
I would rather have dark chocolate grated on my curd.

These are teenagers so I rounded up a bit. When I was 16, two plates of food was a minimum.

You are brave. Since there will be bread, salad and meat I would say 1/3 pound per hungry student. So about 20 pounds.
