This sounds excellent. FWIW, hing is AKA asafetida. I suppose cumin might be the closest thing to its particular earthiness.
What did he cook for you last night?
He's been experimenting with souffles lately, but he's scared of the cholesterol in eggs. Last night it was a spinach souffle made with that lowfat egg product that comes in cartons. It wasn't bad at all, just a little dry on the outside. He made a creamy sauce with grated carrots to go over it, which was surprisingly tasty.

Amen. Absolut *does* have a flavor: it tastes like rubbing alcohol.
Myself, I like vodka because I'm not a huge fan of gin. I get the whole g&t vibe, but gin just doesn't go with everything, and neither does rum. There's a place for the blank canvas, IMHO.
As for the chocolatini, to us true chocoholics, it's *sacrilege*. IMNSHO.
Ricotta dinner recipes that aren't stuffed shells or lasagna?
Spinach and ricotta make a great sauce over pasta too. With a little garlic and Parmesan, nutmeg, salt and white pepper, and thin it as needed with milk or half and half.
Food that Most People Love and You Don't...
I'm with you on the strawberries, Ol. Can't stand the smell. Likewise (in my case) peaches, pineapple, and most melons (watermelon's OK).
Am I the only one who picks raisins out of my food?
And I dislike anything with a vinegar taste. Sushi's fine if the vinegar was applied with a very cautious hand, but even sushi vinegar is unpleasant if there's too much. I dress my salads with lemon, lime, or wine.
Also, I guess most people like sweet peppers, but I know I'm not the only one who doesn't. Hot peppers are fine, don't ask me why.
Are there things you eat/avoid every day to be healthy?
This sounds like one of those lists of 10 wonder foods that come out periodically on MSN and such sites. Me, I'm in the "drink water and eat a varied diet" camp. I do take a couple of vitamin and mineral supplements because, hey, at 52 my system isn't quite as efficient as it once was, and the numbers have come up short once or twice. Other than that, no particular health regimen, no particular health problems.

I would add tofu to my processed foods list. Not too many more processed than that.

Wiggle is a New England thing. Your mom didn't invent it. It's also done with asparagus instead of canned peas, and rice instead of toast.

1. Dinner in a pan: Fry some sliced onions in butter until they start to brown. Add sliced mushrooms, keep frying until they start to brown. Add shredded cabbage, keep it going until cabbage starts to brown. Add cooked pirogi, fry until -- you guessed it -- it starts to brown. Serve it forth with a dollop of sour cream and a drizzle of hot sauce.
2. A tasty side dish: Heat oil until it starts to smoke. Throw in mustard seeds and cumin seeds, put the lid on fast! Lower the heat, and when the popping noises slow down, add butter, a bit of turmeric, shredded cabbage and salt. Stir that around for a minute or so, then put the lid back on and let it braise until the cabbage is done to your liking.

Last night it was pasta with green beans, leeks, tarragon, white wine & Parmaggiano. Tonight, spouse is planning a miso soup involving choy sum, snow peas and I don't know what else, and some onigiri on the side. Ever since I bought him those onigiri molds, I can't hardly get nuthin' else outta him, but it's not time to complain yet. ;->

I don't get up to Gloucester much, but I like Two Sisters too. I also had a very decent breakfast once at Morning Glory, back when they were down behind the Gloucester House. Don't know if the fare has changed in the newer location.

Best Pizza on North Shore???
Finally made it to Angela's the other day. I'm a coal-fired pizza fan, love both Regina's and Santarpio's, but this wasn't what I was hoping for. Sauce and cheese were decent enough; it was the crust that disappointed. Instead of the random, uneven charring and blistering you get with a Regina's pie, this crust was dry, with just an overall light blackening, and slightly-burnt was the only flavor. I'll go back, but won't go out of my way.
Best Pizza on North Shore???
I had an excellent slice at Dom's Trattoria in Beverly Farms, best I've had in Beverly in 19 years, despite the crunchy crust, which isn't my favorite. (Give me a thin crust, but one that tastes like a baguette.)
My vote for absolute best still goes to Santarpio's, but I have *lots* more research to do ;->

Vancouver Island groceries?
So we'll be touristing around the island in June. We're staying in a housekeeping cottage in Ucluelet for a few days, and naturally (being hounds) would like to eat well. Where in our travels could we be gathering the ingredients? I expect we can get fresh seafood in Ukee. We won't be purchasing saffron or white truffle oil for our few days. I don't eat meat. Other than that, any place special we should stop, either in the area, or on the way from Victoria?

Yes, but I think I know what kolas means; there's this dead area in between. We've stayed in Scarborough a couple of times and been grateful that we chose a housekeeping cottage so we could bring our own food. Any suggestions?
O'Fado Lunch Specials
Hey galleygirl, if it's octopus you're looking for, check out the Azorean in Gloucester. I had it there a month or two ago, and it was stellar. Now I'm wondering if I've ever had octopus properly cooked before. This was hot and tender and flavored with oil and garlic. It was a dinner special, so you might want to call ahead.
What do I toss from the liquor cabinet?
The more alcohol in it, the longer it keeps. I'd toss any opened beer or wine, but anything stronger should be fine, as long as it's been kept closed and reasonably cool. I have 30-year-old liqueurs (the sugar helps too) that are still going strong.

Aw, be brave. Go ahead and scale. If you calculate the 2/3 amounts and write them down first, it shouldn't be an issue. Measuring out 1/3 of a teaspoon may be a bit of a challenge, but you should be fine using a gently rounded 1/4 teaspoon. Baking mixtures are slightly more forgiving than we give them credit for. Extra bonus: if you buy a small carton of heavy cream for this, you'll have 1/3 cup left over for some other use!

Good luck. The stuff has disappeared from my area too (north of Boston), and a Google search turned up a blog entry complaining of the same in, I think, Maryland. Could be they've stopped making it, could be the depressed dollar makes it unprofitable to import it. Maybe it'll be back. Netgrocer.com will sell you Carmel soup *base*, though. Maybe that tastes similar. I also see Croyden House brand on Wegmans.com. Osem brand products are still available here & there. Frontier Coop has a vegetarian "chicken flavored" broth powder as well.

Thanks for reminding me about creamed spinach! That can be soooooooo good, with maybe a little rice or mashed potatoes on the side.
I love my homemade mac 'n' cheese, made with ziti, aged cheddar and creamy American. Too rich for my health-conscious spouse, so that's a solo dish.
I'm also the one who will use up the leftover green veggies. Kale-sadillas, with kale that has been previously sauteed with olive oil and garlic (or just steamed), black beans, and the cheese of your choice (or not). Frittata with whatever green stuff is around plus some onion/garlic/leek plus or minus mushrooms plus Parmesan or Gruyere. Lately I've been groovin' on zucchini and leeks cooked together. The other week I concocted a yummy risotto with those.
He's all about congees and veggie or fish soups lately. Those are good too, and balance out my tendency to make anything I can slather with cheese. Good thing he's home more often than not.

Portland casual eats
Thanks for the tips, browndog888. I'll try to be more specific. I'm looking to eat lunch and dinner in and around downtown Portland. Not interested in pub food. Local specialties (yes, lobster but whatever else is going -- blueberries? peekytoes? anything else), creative but cheap (Duckfat is a good example, thanks), Indian, Japanese, Korean, Italian, Middle Eastern, vegetarian but not ascetic... or anything else outstanding in the $5-12 range (lunch) or $10-22 (dinner).

I haven't been to Brattleboro in a couple of years, but if Korean food appeals to you at all, definitely stop in at Shin-La on Main St. If it's still there, that is.

I hear a lot about the fine dining scene in Portland. But where do you go for something a little less upmarket? Where's the affordable deliciousness?

Chinese food cooking question...what kind of oil?
I use peanut oil, which I buy in large containers at the Super 88 (Boston 99 Ranch equivalent). It's not really expensive if you buy in quantity, and I kind of like the peanutty taste. It is true that it can go rancid if you're not using a lot, but I keep the can in the fridge and decant small amounts into a cruet, and haven't had any trouble. And one of these times, dangit, I'm going to get around to deep-frying.
