Lamb Ribs?

Thank you, toklas2. I've been fixing RACK of lamb for many years and can find some excellent cuts at several markets; Riblets ... or breast ... is next to impossible to find. I have asked at HEB (Central Market in Plano), at Hirsch's meats, Market Street and Whole Foods. I get a questionable look like I'm speaking a VERY foreign language. Nobody seems to know what I'm talking about. After reading these recent posts, I will definitely have to check it out again.

Wow! I can't believe you took the time to post all of that! I am NOT complaining, though!

I've been out of the Bay Area for almost ten years and still crave that salad. I'm sure people in Texas won't appreciate it (then again, who knows?) but I am definitely going to serve it a few friends. Probably minus the garlic sauce. That must be a new twist (or my memory really is going down with age!).

To iloveflippy: The recipe posted by ChezStacey sounds pretty close. Also (and I haven't looked recently) there's a link to kikkoman.com that indicates it is THE Chef Chu's Chicken Salad (Tao-Tao being a very close second!).

Wow ... good luck, J.R. I have yet to find them in a supermarket/grocery. If you do find them on a menu, please post it. I used to order them in the SF Bay Area in California (though I don't remember what restaurant!) and I absolutely love them!

Are there any *real* Cajun/Creole restaurants in Dallas?

I am no Cajun/Creole expert, but my husband grew up on the stuff. He also likes the Big Easy. Small place, good food, reasonable prices. So far, we haven't been disappointed.

While you're at Asia World picking up the Kaffir lime leaves, check out the fish counter. I personally have not tried it yet, but they have a huge selection and I can't imagine it wouldn't be sushi grade, especially with the turn over they experience.

Asia World has pretty much ANYthing you might be searching for ... my first visit ended in sensory overload!

For a good mail order source for fresh leaves, this is pretty reasonable (especially considering the price includes 2-day shipping):

It may not be humid enough in this area to grow Kaffir. They do generally grow in more humid regions of the world (though I never thought I'd be saying that DFW was not humid enough!). Anyway, good luck. And do try Asia World if you get a chance.

oh, my! I love it fried or crispy, but that tofu sounds really great, ipsedixit! I'm definitely going to have to give it a try (but will first have to order some of that sea salt ... darn!)

Jeez, I really wish people would lighten up ... Air ... because this is NOT a food fight between Texas and California. It is a simple, factual statement: there is no red enchilada sauce in Texas. I agree, there will never be a Cali-Mex restaurant around here, but I am far from myopic in my stance on ANY food! Jjust so you know, one of my benchmarks in Mexican food is Chile Rellano, not enchiladas (I'll even concede that Texas makes a pretty good sour cream chicken enchilada. Still no red sauce, though). And the "too far from Plano" remark was meant a bit sarcastically. I apologize if anyone took it seriously.

Mexican Food in Dallas Metroplex

No where in my statement did I use the word, nor did I even remotely refer to my being an "expert" on Mexican food. I did not say that Mexican food in Texas is "inferior" to Mexican food in California. Everybody has different tastes and every region has a different way of preparing every food imaginable. Heck, people in Maine think the Mexican food they have is wonderful.

What I did say is that you will NOT find a real, red enchilada sauce in a restaurant in Texas.
And i will stick by that statement!

p.s. Of course the vast majority of people here are perfectly happy living with Tex-mex. It's what they grew up with. I'm pretty sure the vast majority of people in California are perfectly happy with the food they have, too. And chances are, if someone opened a real Mexican restaurant in the DFW area, it would not be a success unless they could reach out to all the transplants familiar with the food.

I can guarantee there is NO place in the DFW area that serves REAL Mexican food. I am a native Californian (of 50+ years) transplanted to Plano 5 years ago and I am still looking for a restaurant that can make a decent enchilada!

Some of the taquerias are "OK" but sorry, DallasDude. They don't come close to the taco trucks and taquerias in CA. SoCal or Northern Cal. And trust me, I have been looking for the past 5 years!

But I will not give up! So if you find anything, please post it. I'm willing to go to great lengths to have good Mexican food. In Texas.

(Ok, I'm not willing to travel great lengths, so preferably close to Plano would be nice!)

Good cheese on Peninsula?

It's been a few years since I was there, but Draeger's (San Mateo and Los Altos) used to have a very good cheese selection.

(I just looked at their website ... guess they're also in Menlo Park and Blackhawk now. Oops. That's how long it's been! I'm stuck in Texas. Don't blame me!)

HELP!! Chinese Chicken Salad Recipe - NOT the norm

Does ANYBODY have, have access to, know where to gain access, or know how to find the recipe for the Chinese Chicken Salad made exclusively in the South Bay Area of San Francisco (by South Bay, I mean anywhere between San Carlos to San Jose)?

The salad does not have a "dressing" on it; there is no sweet, peanut sauce; I know it has hot mustard, cilantro, chopped peanuts (Tao-Tao's menu says almonds & cashews but I don't remember that!), plus the chicken, lettuce, and crispy vermicelli, but I'm not sure how it all "goes together" to get that special taste.

Any one who has had it, knows what I'm talking about. Tao-Tao in Santa Clara, Su-Hong in Redwood City, Mings in Palo Alto, China Stix in Santa Clara ... all used to make it. I am living in Texas now and would love to be able to make this salad! Outside of the South Bay, though, I have never seen it on a menu nor have I found a recipe.

Any ideas?

I'm a native Californian now living in Texas. I've been searching for three years trying to find REAL Mexican food around here! What is it with putting chili on everything? I just don't get it!

As for the Chick-Fil-a, as soon as you get your order, open the bag that the sandwich is in. Otherwise, you loose the crunch (found out the hard way).

I agree with the "what's-so-great-about-Whataburger" comments. However, give me an In-n-Out burger ... seriously. PLEASE. GIVE me one! :)

Hunan Home vs. Hunan Garden [Split from Orange Beef thread]

Wow! I went to Hunan Home from the first week it opened (1990? 1991?) until I moved out of the area several years ago! It was always excellent, the staff was wonderful (in fact, my ex and I had our wedding rehearsal dinner there) and I never had any complaints. I'm really disappointed to hear that it isn't the same great place!

Seriously Now -- Which countertop appliances do you leave out on your counter?

Wow, after reading all of these posts, I guess I'm going to have to break out my immersion blender from it's (ORIGINAL) box and start using it! :)

I'm one of the clutter-free people, so the counter top is home to only a toaster, a coffee maker and the mini-Cuisinart. The crock of wooden spoons doesn't count!

Cuisinart Durability?

My first Cuisinart was purchased in 1978 and was still running strong in 2003, with daily use in a small restaurant! Even then, it didn't quit and I never had any buttons break ... I just needed something larger and I gave the original to a friend.

Maybe they've changed the quality or perhaps it's just the particular model you bought. I think I'd try a different model.

Turkey left out overnight

If you had left a raw turkey in the dish overnight, I might be concerned. If the turkey was cooked in the dish and the dish just wasn't washed, any bacteria should be killed with simply hot, soapy water. Definitely do not use bleach as the stoneware will absorb the odor.

Is it too much? Am I obsessive-compulsive?

Color coded? That sounds like an excellent idea ... especially since I have put off "organizing" the thousands of recipes I've either printed from websites or torn from all of the magazines I subscribe to. Trying to decide if something like chicken fettucine should be filed under "Poultry" or "Pasta" has become a major headache!
