Stopped in yesterday by accident, it was crazy busy, so it was kind of hard to navigate. Everything in the fish and meat dept was new and fresh, got some lovely halibut steaks. I don't know quite how to say this, but the staff seemed less hipster/slacker than some other WFs. I think people who live on that side of town will be pleased. I'd go back if the turnover keeps the fish fresh.

Favorite Restaurant to bring out-of-town guests?

As a former visitor to Minneapolis, I enjoyed Piccolo the most, it is really one of a kind. And I loved the gestalt of Gasthaus Gemutlichkeit, nothing like it in Tokyo or Los Angeles. A special mention for Tin Fish, my friend took me there straight from the airport on a hot summer day, and I somehow got the idea I wanted to live here, so be careful who you take there.

When I lived in Tokyo, there was a retail shop that sold green unroasted coffee beans that they would roast to your specifications. Is there anyplace like this in Minneapolis? Southwest is best for me, but open to any suggestions.

Don't know if this will win him back to the beet side, but I just made a beet salad that made me pretty happy. Boiled a couple of beets, let them cool, peeled and shredded them (with a mandoline but a cheese grater would work) added mayonnaise, a little minced garlic, black pepper and a little kosher salt.

I found a nice bone-in lamb shoulder (frozen) at Bills imported foods for 3.99 a pound

Went to Bill's and got a big American lamb shoulder for 3.99 a pound and a leg of lamb for 4.99. Now we can get on with the prep for Mongolian New Year. Thanks everybody for teaching me about Minneapolis. Next up a trip to Wedge and Everetts.

Thanks for the lead on Holy Land docfood. galewskj I saw Bills the other day and will have to check that out too. Keven47 maybe it wasn't clear, but there is no problem in finding quality grass fed beef here, it has been available everywhere I've shopped so far. I'm just looking for some affordable stuff like regular chuck for soup and stews, inside and outside skirt steak, and maybe short ribs that don't come with sticker shock. And the prices I saw for lamb were just silly, like more expensive than Japan. On the bright side, the variety of reasonably priced produce even in the middle of winter has been a real joy and not having to worry about radioactive contamination (a big problem in Japan, my former home) is a relief.

I just moved to Minneapolis, super premium grass fed beef abounds at premium prices and I just saw a top half leg of lamb for 50 dollars at Lunds. .Is there anywhere to get reasonably priced lamb shoulder for example? What about the Halal markets or Latino markets, any ideas?

The Ginza Lion is said to be the oldest beer hall in Tokyo. it has an amazing sort of fascist/heimat mosaic. Also Bar Lupin in ginza where Osamu Dasai and other writers drank themselves into stupors in the early post war era.

Can't help you in Vancouver but I just discovered these things on Sunday (in Tokyo at Seijo Ishi) and i just want to roll in them. These are Heindl Mozartkugeln we are talking about? They are so good. Good luck on finding them.

Tamis or Tamises?

I always use a stainless one with fairly fine mesh. Also use it for sifting flour and stuff. The one I have is only about 8 inches across, you'd probably want a bigger one to make a large batch of mashed potatoes.

Papaya salad

Ethnic Laos in Isaan, Thailand, crush whole salted paddy crabs into som tom/tam bak hung. But they always asked me first, and some say the paddy crabs have parasites etc., but I don't know for sure about that.

Best Japanese restaurants in the world, or delusion?

"Yes, I'm sure he does a better peaches and clams than anyone around." Great line Silverjay, think that pretty much sums it up for me. It's seems as though Americans like the idea of Japanese food, but they think it needs a little jazzing up, and the whole thing gets passed on third hand minus the sensibility, attention to detail, and simplicity that makes the cuisine so great.

Figs, Always a Problem for Us...

Broiled figs with melted butter are good. Sometimes I sautee some with shiitake mushrooms and make a sauce with a splash of sake and a bit of soy sauce, finished with cream, goes well with chicken.

Just not using quality ingredients and poorly executed, rice was not prepared well and so on. Really it was like the stuff they sell in supermarkets in L.A. A nice space though.

I ate at Rainbow Roll Sushi several years ago (not long after it opened) and was shocked at how bad it was. The food was on the level of California supermarket sushi. Don't feel the need to ever go back to RR.

Yeah, there are a lot of happening restaurants in MSP, but good restaurants can be found around the globe. The thing that exists only in MSP is the State Fair (Aug 25--) A truly amazing world of every kind of food on a stick imaginable and less imaginable things like Swedish egg coffee set against a panoramic backdrop of the diversity of Minnesotan animal and human existence.Oh and don't miss the butterheads.

What is the best sauce/condiment you've ever made?

I don't know if this is the best, but it was really surprisingly good and easy to make; I just mixed some powdered Japanese green tea with mayonnaise and a jot of lemon juice. It went well with fried calamari rings
