When I make sofrito I add lots of culantro then freeze in ice-cube trays. I fry thawed cubes of sofrito in achiote oil before adding the sofrito to the dish I'm cooking. Annatto seeds steeped in warm olive oil is the achiote and cooked with a really good sofrito is far superior to sazon. Over Ripe Plantains? Recipes? Ways to use them up?

In Tonga they make a hot drink with mashed ripe plantains ( a variety called hopa), coconut milk, honey and cinnamon. Very yummy on a cold day. Should New York City Take Soda Away from Poor People?

If you can't buy beer and cigarettes with food stamps then soda pops should be eliminated as well. I don't care to pay for someone else's indulgences. Everyone applying for food stamps should be mandated to attend a class on foods to avoid inorder to prevent diabetes and obesity.

Harissa

1 cup of Spanish paprika makes this very bitter. I prefer dried red chiles with some aji dulces chiles, coriander,cumin,caraway,and a little dried mint.

Need recipe for invert sugar

I was just looking for a recipe for invert sugar and found this one: 3 cups sugar, 1-1/2 cup water, 1/4 tsp. citric acid (or juice of half lemon).. Bring almost to a boil, stirring until sugar dissolves, then simmer lively for 30 min. This is for making candy and I hope it will work for my sorbet. see http://www.chocolatenews.org.

I read also that Golden Syrup could be used. Golden syrup is widely available in NZ, Australia, UK but more difficult to find in USA.
Another source recommends buying invert sugar from cake decorating supply shops.
