Make Hand-Held Meals in a Muffin Pan

I make mini meat loaves in muffin pans. Also line bottom and sides of muffin cups with shredded hash browns and bake until lightly browned. Top with chile and grated cheddar; return to oven to heat through. Remove and garnish with fresh slivered onion and serrano chile.

Help! I am trying to like beets but struggling. Healthy ideas?

Gio said it- roasting does it, but start with organically grown as they have neither the cardboard nor the dirt flavor most people associate with this under appreciated crop. Diced roasted beets paired with diced Golden Delicious apples and chopped walnuts make a great salad. Dress with a couple Tbsp. balsamic vinegar, a splash of orange juice, a Tbsp. honey, and a dash of nutmeg. If your Farmers Market has heirloom veg growers, be sure to check for the striped beet 'Chioggia' It has rings of white & red and is the sweetest and prettiest. Sage-focused recipes?

Coarsely chop, place in sterilized canning jar, fill jar with good quality olive oil to cover quarter inch above sage, close tightly and store cool& dark. (I keep in fridge) Keeps this way for months and retains fresh flavor & texture. Makes great grilled cheese, good as saute oil, and is good drizzled over lightly steamed vegs.

Your Single Favorite Thing In Your Kitchen

You did what no one else can- made me jealous! (I rent from a crabby man) Guess I have to say my molcajete, as salsa is a necessity in my kitchen & I prefer the texture ground to blender pureed. Love 2 see fotos tambien!

Camarones a la Diabla Suggestion?

We tried Dona Marias pipian and found the soy-peanut flavor overpowering. Are there others you use that don't feature that combo. some of these nights, I could stand a shortcut product, but now I'm really gunshy.

if you can lay your hands on the mexican pumpkin seed (pipian), you may be closer to the "nut" influence you're seeking. this semilla quite resembles an eye when unhulled-white with silvery green edge. Not the same flavor as the one we normally see. Here in Christmas tree country, I have had a la diabla in a local restaurant and the homes of a couple of our local mexican families. Each is a little different, but I have yet to encounter one made with peanut butter. You might experiment with toasted hulled pipian, toasted sesame seed, and corn tortilla-torn & browned in lightly greased griddle. There is also a group here who throw in a handful of animal crackers. These all add flavor, but are also important to thickening the sauce.
