Horseradish question
For many years, we used a manual meat grinder for our horseradish. Some years were more pungent than others, but it was always quite hot. One year, we used a food processor and didn't like the smooth texture, and the heat was gone. This year, we bought an electric meat grinder. Hodu la'hashem. Saved us a ton of hard work, the texture was perfect and the heat insane!
The horseradish didn't look any different whole as it did any other year, so I don't know why it was so crazy hot...but we were all happy with it!
any kosher hotels left in the Catskills?
We just spent Passover at the Honor's Haven Resort and Spa...formerly the Fallsview in Ellenville. It has been bought by a Korean group and totally renovated. Everything is clean and well-tended. Beautiful (and silly) sculpture garden. Lobby decor is "interesting," at best, but all in good shape. They are NOT kosher year-round.
There are signs all over Rte 209 welcoming back the Nevele, which closed several years ago. It was also purchased by a conglomerate of some sort, in the hopes that gambling will come to the Catskills. The whole property has been condemned and one is not allowed to step foot on their grounds, to the point where you cannot even cross over to their side of the falls.
During Passover, both the Tamarack Lodge and The Browns burnt down to the ground. Dunno about any of you, but I find the timing and unmitigated success of the fires to be mighty suspicious...
Low Fat Creamy Cottage Cheese for Passover
Crazily enough, I find the Mehadrin brand very creamy. I use that when i eat cottage cheese straight. For lasagne, any brand will do!

Kosher Spare ribs at Costco
The frozen stuffed cabbage is great. Can't testify to the other items as I've never bought them. Why do the spare ribs seem to be attracting people? Buy raw spare ribs, cover with BBQ sauce, cover the pan and bake at 400 til they're falling off the bone. Then uncover for a while to get the crispy edges. YUM. And way cheaper.

Yet some places specifically start baking AFTER Rosh Chodesh. Maybe there'll be another run...

They are a favorite of Martha Stewart. She raises them on her farm in Connecticut. I don't have any connections, but maybe a fellow Chowhounder does.

Thank you. I've always wondered why the horseradish was eyewatering when first grated, and when we'd have it for the seder, it was "eh."
And my family uses black radish for Karpas....married 30 years and my husband still needs his little boiled potato instead!

Pardes Tasting Menu is EXCELLENT
Oh, AdinaA...we didn't know a tasting menu was available! NEXT TIME! So, I'll give my report...we traveled from NJ in torrential rains and crazy winds. Called ahead to say we'd be 1/2 hr late. No problem - our table was waiting. Amuse...little latke with tuna tartare, tartar sauce (LOL), cuke. Delish. Waiter returned to table to tell us that the sweetbreads were sold out. Sad. Hubby ordered the frisee with lamb bacon. Decadent. Too much frisee. I ended up with beef tartare...some type of seed (pumpkin?) in the mix. Very yummy. Side of fresh sweet potato chips. Shared a Pardes Burger. Best burger I've ever had in my life. Hubby then had the Goose 4 ways. He was over the moon. I had the lamb. Absolutely wonderful. The rack was mostly crisped up fat (YAY), but I scraped off the coating, which had a taste I couldn't identify that I didn't like. Pardes fries. YUM. And a glass of rioja. Dessert - we shared the Gianduja plate. Divine.
Two complaints....husband ate his appetizer alone. My tartare arrived after the burger. And the Lubavitch family that arrived AFTER us got served immediately with tons of food and left before we finished our mains. Were they someone special perhaps?
So many other things on the menu I wanted to try...but my stomach was quite full by the end of the evening. So...home to NJ...only 1/2 hr drive home (over an hour there).
