Pepper and Egg Sandwich

Growing up in Boston, we always had "peppas and eggs". Always made with green peppers, and never with garlic. We ate it as a frittata, sometimes with a salad, but always served with Italian bread. I can taste it now!

Looking for a San Diego breakfast meeting space for 5 people- 9AM -10:15AM on Aug 28

If you aren't looking for anything fancy, Panera might work. There are a number of them in the San Diego area, and they open early. I met a group of women there for breakfast before an early movie, and once we got our food, no one bothered us. We sat and chatted for an hour or so. And, as a bonus, I think they have free wi-fi.

Watermelon love

I just got a mini yellow watermelon today at Trader Joe's after three of their staff mentioned how fantastic they were. I'm in L.A., and for $1.99, thought I'd take a chance. I served it after dinner tonight, and was indeed fabulous. Like your idea of wrapping spears with prosciutto. We are doing brunch next week, and that sounds perfect with a glass of Prosecco. Fresh tomato ideas

Ina Garten has a delicious recipe for scalloped tomatoes. I generally make it with Romas, but used heirlooms once and it came out more soupy. You may need to add more bread if your tomatoes are very juicy.

Star-themed hors d'oeuvres

Small open-faced or regular tea sandwiches, done on thinly sliced sturdy bread, such as rye or pumpernickel. Cut the bread with star shaped cutter, top with smoked salmon, creme fraiche and dill sprig, or pate, or pesto chicken salad, or curried egg.

Best store bought mozzarella for caprese

I've been using Trader Joe's burrata for caprese lately. It's very creamy, so I just break it apart, and scatter it over the tomatoes, rustic style, with home grown basil...yum.

Informal dinner challenges

How about something made with rice noodles? Like a cold sesame/peanut noodle dish with slivered crunchy raw veggies (pea pods, carrots, peppers, red cabbage), served with cubed, grilled boneless breast of chicken on the side...fits all the requirements. You can also make some spring rolls with shrimp or just veggies. Lentil salads, cold rice salads, or a big platter of beautiful grilled vegetables, including thick slices of sweet potatoes. I generally nuke the potatoes, slice, baste with olive oil, dried oregano, s&p, and grill till warm and marked. Baked stuffed shells with ricotta and spinach are easy to serve for a crowd, but not vegan. Cheese enchiladas made with corn tortillas and a mild green sauce are tasty and veg friendly. I like to add fresh corn and sliced green onions into the filling. Serve Spanish rice and a fresh mango, pineapple salsa along side, and you have a complete meal. Enjoy the reunion!

You can make small croquettes and serve as an appetizer, make hash and top with poached eggs, or mix with some spinach and mushrooms to fill crepes.

Ricotta and cottage cheese free lasagna?

Check the Internet for a vegetable lasagna recipe. I use Barilla No Cook Lasagna Sheets and make a filling with sautéed zucchini, eggplant, garlic, mushrooms and spinach. It is bound with a beschamel sauce and grated Parmesan. I believe Barilla may have a similar recipe on their website. You can also make one with a red sauce.

Will this work? Salmon pie with hot water crust

I like to make tasty mini salmon cakes (I use jfood's recipe for salmon croquettes, found here on the Home Cooking Board), and serve as sliders, on small buns. I generally serve them warm, but have also eaten them room temp with no problem. BTW, these are fine made with canned salmon.

Birthday Party planning - help needed with the menu

I second the taco caterer - less stress, less work. I'd keep the black bean dip, the chicken dip, and cheese and crackers. With the tacos, I might serve several salsas, including one made of fresh pineapple, mango, diced jalepeno peppers, red onion, green onion, red and green bell peppers, and dressed with fresh lime juice and cilantro. I'd serve beer with lime wedges and big pitchers of sangria with lemon, lime and orange slices. For a fabulous birthday toast, serve a tequila shooter. Sounds like a party to me!

Can I Freeze Potato-Leek Soup (non-dairy)?

Since you have a bit left over that you are planning to use tonight or tomorrow for the family, just take a small quantity and freeze it. Defrost in a few days, taste, and you'll have your solution. It only takes a mouthful or two to determine texture issues.

Shishito Peppers

One thing that makes them even tastier is a dipping sauce served along side. I like a mix of soy sauce, sugar, sesame oil, and a bit of rice vinegar. Season the sauce with some freshly grated ginger and finely chopped cilantro. I've just planted some in my garden and can hardly wait to harvest. I did buy some at Sprouts last week, and found them tasting a bit green and immature.

Vintage LA diners with great food

No one has mentioned Beeps, on the corner of Woodley and Sherman Way, in Van Nuys. It's been there since the '50s.

Throwing a party with no oven...suggestions?

How about a taco/burrito bar? You can make everything stovetop - chili meat or shredded beef/pork/chicken, Spanish rice, beans, grated cheeses, shredded lettuce, chopped tomatoes, salsas, sour cream, guacamole, taco shells, flour and corn tortillas. The hot foods can be served in crock pots, the rest in bowls - simple and delicious.

Steaming--can you flavor things?

When I steam baby red jacket potatoes, I always add salt and a few dried bay leaves to the water. In my opinion, it " perfumes" the steam, and imparts a bit of flavor to the potatoes (which are then buttered and tossed with fresh chives and finely minced parsley).

Can you suggest easy dinners for a stressful month?

When I make dinner, I usually cook enough for two meals. Then I have that meal on night #1, and again on night #3. I follow that plan several nights a week, freeing up a lot of food prep hours. If I make soup, or a braise (something which benefits from sitting for a few days), I will serve it on night #1 and #4. Or, I will use the main ingredient as a component for another dish, thereby avoiding the utterance of, "leftovers again?".

What cooked veggie to add to this entree?

Sautéed broccoli with garlic, or carrots with brown sugar, or cubed butternut squash, or cauliflower. But personally, I'd go with rice, mixed with a very fine dice of onion, cilantro, and some lime juice.

Google "Wacky Cake". It's even easier, and uses the same size pan. You can probably substitute coffee for the water in this recipe, as well.
