Easy (yet tasty) mid-week birthday dinner ideas

Or, if you can give up the homemade fried chicken idea, consider meatloaf. It's great with gravy and all the sides mentioned - mashed potatoes, potato salad, mac and cheese, green beans, biscuits and gravy. It can be prepped in advanced and baked off when needed. Simpler than frying anything. Take it easy, and have a wonderful birthday!

Salmon loaf!

If you do a Chowhound search for Jfood's salmon croquettes, you'll find a great recipe. I've only done the croquettes, which are excellent, but you may be able to convert it to a loaf. Patties for 100 sounds pretty labor intensive.

I think the taco bar sounds great. If ground beef doesn't thrill you, how about shredded pork, shredded chicken, or shredded beef? With add-ins like cheese, tomatoes, lettuce, guacamole, sour cream, green onion, rice, black beans, assorted salsas, and on and on, it's a great meal for meat eaters and vegetarians alike. You can serve warm corn and flour tortillas, rather than crisp shells. And, everything can be done in advance.


Steve Wynn is a vegan, and features vegetarian and vegan options at all his restaurants in the Wynn Hotel. I believe he has the same policy at The Encore as well.

Mushy Chinese Eggplant Dish?

It's called Strange Flavor Eggplant. The original recipe is from the China Moon Cafe in San Francisco. Their version has the eggplant puréed after cooking. Martha Stewart has a version where the eggplant is cooked, then torn into strips. The recipe is on Google...not the prettiest thing you've ever seen, but absolutely delicious!

Cinnamon-sugar almonds: best preparation method

I use the egg white/ cinnamon sugar version on walnuts and pecans, and really like it. They are good for eating out of hand, as well as on salds, etc. I usually bake them, cool, and freeze in zip lock bags. They don't get soggy when defrosted.

Need ricotta cheesecake recipe

Google Carmela Soprano's Ricotta Pie. She made it in an old episode of the Sopranos - no cream cheese, but ricotta, heavy cream and eggs. You can do it in a pie plate, with a graham cracker crust, and crushed pineapple topping.

Seafood Main Course for 8 That Doesn't Break the Bank?

How about a Nicoise Salad, made with fresh salmon, instead of tuna. Everything can be prepared ahead, and just assembled on a large platter for service. Ina Garten has a great recipe. I've recommended it many times. Google Ina's roasted salmon Nicoise Salad. Serve with some great bread, chilled wine, and it's perfect.
