Looking for caponata recipe

Here is my absolute favorite recipe for caponata. I don't bother to salt the eggplant, and I do precook slices in the microwave, then follow the recipe using less oil. I also use a bit less sugar, but that's a personal taste. Don't let the use of cocoa fool you - it's absolutely necessary for that "earthy" flavor. Don't know where you're located, but try a restaurant or grocery supply store. In L.A., it's Smart and Final. If all else fails, ask your local bakery if they will sell you some.

What to do with all this carrot puree?

Try this:

Carrot Souffle

1 pound carrots
4 ounces butter
3 eggs
1/4 cup sugar
3 T. flour
1 tsp. baking powder
1 tsp. vanilla
Pinch of salt

Peel and slice carrots, or use one pound bag of baby
carrots.  Cook in salted water until soft.  Drain
well.  Melt butter.  In a food processor, put all
ingredients except the carrots.  Blend well.  Add
carrots and blend until the mix resembles a milkshake.
Do not completely puree the carrots.  Bake in an 8X8
greased glass dish at 275 degrees for 45minutes, just
until the center is firm.  Or, bake at 300 degrees in
a metal pan for 40 to 45 minutes till firm.  You may
double the recipe and bake in a 9X13 dish, adding 5
minutes or so to the cooking time.

Dieting during work travel

I know you said that you dislike processed foods, but I find that sometimes, in difficult situations, I have to make some concessions in order to stick to the plan. I can get cranky without some salty, chewy, creamy, or crunchy elements during the day...especially on a trip where I can't take advantage of my own food supply.

Any chance your hotel rooms have a microwave oven available? I like to snack on the small microwavable popcorn - each bag is just a portion, and low in points. Also, I travel with low point crackers and Laughing Cow Lite cheese. It's spready, but I haven't had any problems with TSA. I just put them in my quart size zip lock bag with allowable tubes, etc. They can go without refrigeration for a while. A company called Walden Farms produces a fat free, calorie free salad dressing - my favorite is either the bleu cheese, or bacon ranch. They produce it in individual, single serving pouches, which are perfect for travel. Again, I put some of these in my zip lock bag. That way, I can have any salad selection on the menu and use the diet dressing along with some balsamic vinegar and not feel sorry for myself. Trader Joe's sells pretzel sticks that are about 10 per serving for 3 or 4 points. They're filling and crunchy. If you have one of the WW points calculators, bring it to the store with you and check out the points value on crackers and snacks. There are ways to travel and stay on the meal plan, but it takes advance planning. Good luck!

When a recipe calls for 'chili sauce,' what do you use?

I use Homemade Brand Chili Sauce. It comes in a round glass jar, and is available at most grocery stores.

Trying to make Rao's marinara sauce, close but seem to be missing something.

In my family, we always put a pinch of baking soda into the sauce to help with the acidity of the tomatoes.

Tzimmes with Flanken recipe

A Gahntze Tzimmes from Love and Knishes

3 to 4 pound boneless brisket
2 T. schmaltz
3 large carrots
1/2 pound pitted prunes
1/2 pound dried apricots
1 lemon, thinly sliced
3 large sweet potatoes
juice of 1 orange
5 cups boiling water
1 1/2 T. brown sugar
2 T. flour

Sear meat well in hot fat in Dutch oven or heavy frying pan on top of stove. Transfer it to a roasting pan. Peel carrots and cut into 1 inch round slices. Place them around the meat and add prunes, apricots and lemon slices. Peel sweet potatoes and cut into 1 inch pieces. Place these over meat and fruit in the roaster.

Add orange juice to boiling water. Combine brown sugar and flour, and add enough water to make a thin paste. Add this paste to the orange juice mixture. Pour over the tzimmes. If necessary, add more boiling water to bring the liquid to the top of the tzimmes. Cover the pan and bake at 400 degrees for 1 hour. Reduce heat to 325 degrees and continue baking 4 1/2 hours. Uncover and bake 30 minutes longer. This recipe serves 8 to 10.

FMP- Spicy Eggplant takeout (moved from Ontario board)

The following recipe is Martha Stewart's, and is called Strange Flavor Eggplant. Not sure it's what you're looking for...

3 pounds firm, ripe eggplant (small seedless Italian or Japanese variety)
2 T. finely minced garlic
1 1/2 T. finely minced fresh ginger
1 tsp. dried red pepper flakes
6 T. chopped green onions
4 T. light soy sauce
2 tsp. rice vinegar
4T. brown sugar
2 T. hot water
4 T. vegetable oil
2 tsp. sesame oil

Preheat oven to 450 degrees. Lightly oil a baking sheet and put the eggplants in the oven, lightly pricking the skin with a fork. Bake for about 30 minutes until the eggplants are soft to the touch. Cool and peel the eggplants tearing the flesh into small strips.

In a small bowl, mix the garlic, ginger, red pepper flakes and green onions. In another bowl, mix the soy sauce, vinegar, sugar and water.

Heat a wok until hot. Add the vegetable and sesame oils, and heat over a high flame. Add the garlic mixture and cook about one minute - watching to make sure it doesn't burn. Add the soy sauce mixture and bring to a simmer. Then add the shredded eggplant. Cook over high heat until the dish is hot. This can be served hot room temp or cold. You can also adjust the amount of sugar and red pepper flakes according to your taste.

Here's a recipe for Carmela Soprano's Ricotta Pie. It has a graham cracker crust, crushed pineapple topping, and is baked in a 9 inch pie pan, rather than a spring form pan. But, it sure is tasty...and reminiscent of the 60's.

Light desserts that are assembled rather than cooked and are pretty :) ?

Haven't made these for a long time, but used to use chunks of bananas, rolled in sour cream, then rolled in shredded coconut. They may sound odd, but are really delicious. They can also be used on a small bamboo skewer with a whole strawberry and a chunk of melon... a plate of these fruit skewers are pretty and festive, garnished with a bouquet of fresh mint and a few daisies.

That Crockpot Meatball Recipe that Has Grape Jelly In It

Nope, I've never tried store bought frozen meatballs in this recipe. However, in my experience, they are a denser product than homemade, and therefore will probably hold up well. That said, I like the homemade variety specifically because they are tender and light, and I like the kind of simple flavor that adding only onion, bread, and s& p give. The sauce has enough going on. If you have a frozen variety that you like that doesn't have Italian spices, give it a try. Also, when cooking these, stir them gently during the cooking time...you're less likely to have breakage.

That Crockpot Meatball Recipe that Has Grape Jelly In It

Okay - here's my recipe - probably 50 years old. The chili sauce I originally used is no longer available, so I substitute Homemade Brand Chili Sauce. It comes in a small round jar, and is generally found near the ketchup. The recipe is as follows:
1 jar Homemade Brand Chili Sauce
1/2 jar of water
2 heaping tablespoons grape jelly
1 Tablespoon lemon juice
Mix wet ingredients and place in pan. Stir to combine. I've never made these in a crock pot - only in a stove top pan.

Meatballs
Mix together 1 1/2 pound ground beef with 2 very wet slices (warm water) white bread (do not squeeze dry)
1 small grated onion
1 egg
salt and pepper to taste
Roll meatballs into small cocktail size (you'll get about 34 of them from 1 1/2 pounds of meat)
Drop them gently into simmering sauce ingredients.
Cover, and simmer on low for 2 hours
Enjoy!

The Cookies at Dennis Park Bakery

I second this request. I was a customer of Dennis Park Bakery for over thirty years...still missing them! Also loved their German chocolate cookies, and small assorted dinner rolls. Still think fondly if those square honey bran muffins!
