Logs for BBQ smoking?

Here is a shot from my smoker, lump charcoal is loaded in there, lit charcoal at the top and burns down and is very manageable. I bought from above. Google charcoalbasket and you will see...I get 4-5 hours out of a full basket and then replenish it.

Where to eat in Revere

Hi all...staying at Rodeway Inn on 309 American Legion Hwy in the next few weeks and looking for somewhere within walking distance to have dinner with my wife. We like Mexican a lot being from Toronto there are not many Mexican places up here..not many decent ones anyways. I see on a map a Margaritas Mexican Restaurant half a mile away, decent?
Otherwise anything Cracker Barrel or other chain would be great...nothing seems too close though..is it in an industrial or residential neighbourhood? We will be without car...thanks bob

Short BBQ/food tour of Memphis, TN

Ok..I will next time I visit Memphis...it was one of those things you see it getting rave reviews and you try it and you say HUH? Was like when I planned my 2009 trip and had 80 or so restaurants to choose from, and only 3 days, what to do what to do...my wife decided as we landed 'ask the locals' Airport, Kroger, Hotel Staff...all answered INTERSTATE so we quickly changed plans and were glad for it. Their sampler plate was fantastic!

Is Corky's BBQ really that bad? [Memphis]

Poplar Avenue location was great for me..I ordered a 'custom' 4 meat order which for a popular place they accommodated me on...wet ribs, dry ribs, chicken and brisket...and even their brisket was good which the waiter admitted 'we don't get many people ordering this' sort of thing...had run a string of places of dry pulled pork so skipped it at this stop because of that and glad I did as I was happy with the meal.

Short BBQ/food tour of Memphis, TN

Hi..I visited Memphis back in '09 for MiM...wanted to hit Cozy Corner but it was closed on the Sunday...so went to Central BBQ...to me the pork was dry and flavourless but, before I get flamed, I was happy to have Mac and Cheese and Onion rings as the sides and the turkey was very good..which puzzled me as being an avid backyard smoker type of dude turkey is tough to get right and pork you can get right in your sleep..so I may have caught them on an off day...fellow behind the counter was very polite, oh and the great choices in side sauces, had vinegar sauce (yes!) as well as the spicy sauce...now, time for me to get flamed...what is the deal with people going ga ga over Gus's? I had some the same day, or after as I had a blur of 4 days of eating down there...think I had ribs 3x one day alone at Leonards Rendezvous and Corkys...but I was not impressed at all with Gus's fried chicken..it was ok, seemed like it was soaked in Franks Red Hot Sauce before battered and fried..my wife and i looked at each other and said 'ok, so what' sort of thing....but speaking of fried, the one thing I flipped over which was totally unexpected hit me on the side of the head surprise down there was at Leonard's lunch buffet had fried catfish..OMG that was so good I ate more of that than the dry ribs, which were very good at Leonard's...and I am not a huge fish fan...sorry off topic...but for BBQ in Memphis if I go again and had one place to go...Interstate...that would be the long and the short of it.

Logs for BBQ smoking?

I have an offset smoker 1/4 inch and I have tried many things..first i tried the logs, two across and two across again Xs and Os style, light with log lighter burn down and try to produce some decent food...did not work...hard to manage temperature wise and over smoked with that white puffy smoke that makes food taste bad..tried briquettes stacked Minion Method and logs..still over smoked but temperature was well maintained, till the briquettes burned down and started choking the fire...then I got a square charcoal basket and used fist sized wood chunks and lump charcoal..presto...above average product, rave reviews from friends, an easy to manage fire for 4 hours till you pour more charcoal in, lift your firebox lid to let white smoke out and continue. Wood I use is primary cherry or apple with hickory chunks that I buy from WalMart across the border and some hardwood I got from a woodworking shop which is kiln dried untreated and great to bump up the heat if the fire is burning down as it burns super hot...hope this helps..took about 5 years to produce some decent Q and lots of surfing and reading and bad tasting food along the way.

Just was at a Loblaws and same cut available in Mississauga area for $3.50/pp if anyone interested. Definitely the same cut as I have used from my other posts.

I actually cooked these at 275 average temperature for about 3.5 hours wrapped in foil at same temperature for 1.5hours then sauced them at the end with the dampers closed and fire petering out for another half hour. I made these for a work lunch meeting and started them at 6am and was done by 12. I figured the thickness I could bump the temperature up from typical 225-250 and get away with it plus outside conditions were ideal warm and sunny with a breeze...and seriously I would do it that way standard as people flipped out over them.

Hi Italo, I can only find these type of ribs once every few years, in fact the last sale I got them in July I went a second time to get more and the shipment they got in were the 'shiners' like everyone else has...I will make sure I will post on here if I see them again on sale. Last year I bought some on sale and they were not so good, shiners and tough. My wife and friends like baby backs so that is what I have standardized on for now as I used to make side ribs for they are cheaper, but observed that people were eating more 'sides' than 'ribs' and was not getting the WOW Factor that I was hoping. When on sale for $2.88/pp for more meat than bones, to me it is a no brainer.

Holy crap...I cannot believe the prices I am seeing posted here...I always wait for either SuperStore or No Frills to put the meaty baby back ribs on sale for either $2.88 - $2.98 per pound. Then fill the freezer with them. Get the ones where you cannot see the bones on top, almost looks like a pork loin from top view. You will forget side ribs or anything else after you tried these puppies, before and after shots attached. Anyone I have made these for on my backyard smoker tell me they are the best they have ever had, like they freak out over them. Two rack for ~20 bucks and can easily feed 4.

Tandoori Flame--Holy Cow!

Anybody ever try India's Taste on Ray Lawson Drive @ Mavis Road just North of the 407 on the East side...I have taken a few 'Tandoori Flame' ravers there and they all say this place is better...excellent service, excellent food, large buffet that I have never tried half of the items due to it's size, and the food excellent...and fans of sweets will see a large selection there as well.

Haven't been there in a few years when i frequented it working nearby. That is too bad, they were enthusiastic when first opening, that is a cheap price for sale, I trust that does not include the Southern Pride smoker in that price?

Just don't call in with anything but rave reviews as the woman owner there will just argue with you...we were underwhelmed as per my review below but all she did was talk over me...offered me free pizza and I turned them down as I could not be bothered with such attitude. Rather wait till I go to Chicago again for REAL Chicago Style Deep Dish, that is 'Deep Dish' not 'Deep thick Dough' pizza as Mickeys is.

Mickeys Pizza for deep dish lovers. Worth the drive to Clarkson.

Hi..just as a note, unless you have raving reviews about them, don't call them to give feedback as they do not want to hear it. Wasn't overly thrilled with the doughiness of the pizza and did not stack up to the ACTUAL Chicago Pizza I had years back..which I still rave about even travelling several times to Italy. Sandy the lady who took my call wasn't thrilled I wasn't fawning over her pizza and putting words in my mouth..so based on her attitude and not the product I will never do business with them again..product was decent, I like thick dough pizza like Palermo Style (but round not square), but toppings were a little light for the high price paid and higher expectation.

Tried it, had deep dish from Chicago in the past, was more like deep dough...Real Chicago style has thinner crust deep in toppings, this one was reversed, thin toppings deep thick dough...tasted good but should be re branded for people who actually have had the real thing IMHO. If it wasn't so expensive I would try again, but probably will not.

Wood burning smoker, nice...I will give it a try next time I am in the area..I usually try a new restaurant with brisket, one of the hardest things to make right...pulled pork is pretty easy and idiot proof..as for the twang, you probably did not experience as it is pretty apparent when you do..hits the tip of the tongue sort of like when you have bad orange juice, that sort of thing.

Interesting, I may like the ribs based on above..question was it too smoky like acrid or twangy smoky, don't know a better way of describing it..I used to oversmoke my ribs the bad way with tons of white smoke coming out of both ends of the offset, knew I was doing it wrong when my friends left the ribs and ate the sides :-).... did not know any better so started undersmoking for others but love it on the smoky side myself....question just so I get a better idea, as hate blowing 20 or so bucks on something i like..do you like ribfest style ribs or swiss chalet? I find them undersmoky but just wanted to get an idea...thanks

Thanks for the follow up..I felt bad after posting as I thought afterwards I was on the rude side but its just I have been there many many times, actually went for first date with my wife there so sentimental I guess..but don't slam it unless you ordered something of core competencies not something on the menu for the legitimate reasons you stated above. Now for the Schnitzel, I have never ordered the bland or plain one, but the mushroom or cordon bleu ones and always happy, as plain one will be that, plain...now my wife who is of Polish descent will make schnitzel but jazzed up with Tony Chachere's creole seasoning mixed in which is darn good...try with potato pancakes too...oh yeah!...but bland seasoning wise S&P are typical....I remember a Restaurant Makeover where they were in some Polish place and the cook was saying 'now adding some spices' and the celeb chef said 'that's salt and pepper, not spices' That is Polish cooking, garlic yes, but other than S&P no...and if it was just warm and not hot, if that person did not send it back for another one than shame on that person, your own fault..you are out paying good money for dinner, if you are to accept cold food without sending back for proper that is your fault and do not whine afterwards about it.

Hi..sorry, got to ask..why go to Amber and order chicken? You could have had Kotlety, pierogies, anything Polish/Ukranian...which are all good as I have been there many times, but its like going to Pappas Grill in Greektown and ordering Asian stirfry, or Swiss Chalet and ordering a hot dog..why bother going? My advice is common sense, go to a specialty place and order what they are known for, if you are going to go off base which IMHO you did, you got what you asked for. Not every restaurant is good at everything..I have had their schnitzel and still like it better than Polonez...
