Scrapple

My family had a meat packing company and one of the things they made was scrapple. There were never any strange cut of meat in it. Pork shoulder, fatback, liver and cornmeal. It was put in huge iron pots of hottub size and cooked over night with seasoning and ground the next day and chilled in blocks and wrapped that afternoon and sold the next day. We fried it I like it not scrispy. Most people like it scrispy. I put it on toast with mayo and sliced tomato. Now my family business is no more but the recipe is inDelaware at Haas butcher shop. No lumps of chewy strange things in it.

Can't get my Le Creuset interior clean

I use a recipe of 1 cup bleach one cup water and one cup baking soda. Heat 15 minutes in ppot. It will be clean and nice. Also use to relab my non stick stuff. So it can be 1/2 c of all three things. But someone else said lower the heat on you LeC and I agree with that.

Lefty needs a knife!

Mail order chocolates?

I had one candy 1/2 inch by 1/2 square from http://www.dianekronchocolates.com/. It was a dark chocolate as smooth as the best velvet and so dark like strong expresso but creamy. The flavor was more complex than a fine glass of wine. It was rich and jammy with a hint of coffee. There was a bit of toast and earth. It was lovely. And very chocolate at the same time. A wonderful experience.
Neuhaus chocolate is also a very good choclate.

baked russet potatoes: what is the function of oil and foil?

We like our potatoes washed and wrapped in foil and put in the fireplace to cook on the grate and then cook out steaks there also. Sweet or white potatoes are great that way. Also in the summer on the grill but in the coals. Have not oiled them and then wrapped them. We like the crusty skins. I wonder if they will srust? Will have to try that way now.

Tanks a lot: shopping for a live crab or lobster

Lively lobsters are better and we like the wider tail. That is a female.and they have roe if we are lucky. Also we prefer they not be paper shell. Crabs we catch our own.

Looking for decent Chef knife & Paring knife

Well not sure. When I get a knife it never stays sharp and no I put no knife in my dishwasher. If I can find one that can be sharpened like knew price would not be a big problem. But over a couple hundred dollars I would say would be to much.

The only difference is my water is at 145 I like hot for pots dishes and utensils. Yes out of the tap it's about the same. And no my boys never burned themselves. I always fix the water for a first timer in my kitchen and warn them it's really hot and they will always test it. But the DW does heat it's own if needed. Of course the different settings have other temps. But I think you have the correct formula for clean dishes, utensils and pots.

Some of the problems with spots is the fact that you have hard water. Miele DW has a place to add rock salt to soften the water. I have no spots with anything I use. I also use less detergent then it tells you to use.

well working in a cooking shop for years the sales people that come in to promote the sales of their wares still recommend to us to push hand washing. just saying what i am told to recommend.

Stand mixer: Bowl lift or tilt head?

Personally I like the lift. I have one in my house and one at my vacation house. Gave my daughter in law one for her shower gift before she married my son. The other sons girlfriend already had one. We all have the toys to go with them. I call it the work horse of mixers. One of my sons is now making pasta with his. I use them for bread kneading all the time since I have arthritis in my wrists. You can even grind meat.
