Nitrate Free Bacon- what's the difference?

Here's an article that links environmental nitrates, such as those in food, to Alzheimer's, Parkinsons and diabetes. Read down to the fifth paragraph to see that it isn't just cooking nitrites that causes them to become nitrosamines (that evil cancer-causing substance), but also just plain old eating which exposes it to stomach acids that convert it to nitrosamine.

I've been buying nitrite free bacon for the past few years. Whether it's Applegate Farms, the Whole Foods brand, or Oscar Meyer, it tastes fresher to me than nitrite cured bacon. Maybe it is shipped more conscientiously? There's nothing wrong with eating a little pork and pork fat, there is very little evidence, despite popular untested hypothesises, that eating even saturated fat will raise your blood cholesterol. And there's even less evidence to suggest a direct causal effect of high blood cholesterol on heart disease. New studies indicate that the protective effects of cholesterol lowering drugs (which, according to their own literature is neglegible), is due to their reducing of arterial inflammation (which makes the inside of the arteries rough and sticky). I'd like to see a study that compares these expensive drugs to plain old over-the-counter anti-inflammatory drugs like aspirin and NSAIDs.

There was an excellent article a couple of years ago in the Sunday New York Times Magazine that outlines my case very well, and at length, but I can't seem to find it anymore. Conspiracy? haha

Soulard St. Louis

Off Broadway on Lemp (3509) is a couple of miles south of Soulard. No food there but a decent selection of beer and liquor. It's known more as a small concert venue. Great live acts, good sound system: www.offbroadwaystl.com. Um, disclaimer: my husband and I own the joint, I'm biased.

Don't miss The Venice Cafe for some good food, drink and a tremendously fun patio. Have to see to believe. It's at Lemp and Pestalozzi. No affiliation, just a great local place. I have celiac disease, so don't eat out, but my friends always like their food.

Pasta with Caramelized Tomatoes and Sausage

I've been looking for a recipe I got in one of those little grocery store recipe books at least a decade ago. It consisted of hot breakfast sausage, sour cream, tomatoes, onions and pasta. If anyone can remember the particulars, please let me know!

I tried making it this morning, with just those ingredients, but something is missing. I tried adding cheese...that isn't it. I do love the sour cream taste mixed with the hot sausage taste...the cool versus the hot! yum!

Why Do People Always Order Ginger Ale When They Fly?

I have to offer the opposite argument. Although the last ingredient in gingerale is "natural flavors," that is where the ginger is. Calling the manufacturer will prove out that, in Canada Dry's case, nat. ingredients listed contains ginger.

I've read that commercial ginger ale contains enough real ginger to be more effective than Dramamine for preventing motion sickness.

When the flu hit someone in my family, I'd make a decoction of 1/2 cup boiled for 10 minutes with 2 inches of chopped ginger root, then add it to a 2 liter bottle of ginger ale for my kids, to give an extra kick. It seemed plenty fizzy too. Ginger is not only soothing to the stomach, but is also anti-viral, antibacterial, and anti-inflammatory.

What is Your Favorite Non-Foodie Thanksgiving Dish?

I have celiac disease, so unfortunately, have to make my own mushroom soup and onion rings. I think my version is better than the old one, overall, but I do miss that crunch.

I don't bother battering the onions, I just slice them thinly, let them sit out a while on paper-towels so they aren't too wet, and fry them in peanut oil until crispy...then salt them.

I use parmesan cheese in there too. Pretty damned good but very time consuming. Still, once a year, has to be done.

Your mom's weird cooking ... and other stories? (recipes encouraged)

Okay, I'm from St. Louis and I don't think anyone else has posted this way of making chili because I actually did a search for the phrase "chili brick" and didn't find it here. My mom wouldn't know cumin from cinnamon so she got all her chili spices from something frozen called "chili brick." Chili brick was complete with fat and meat and some tomato sauces, so theoretically, you just added beans. Thankfully, my mom also added a pound of ground beef, and used Brook's Chili Hot beans (which I haven't been successful at finding everywhere in the country). No onions, no garlic...and the gristle from the chili brick made you wonder whether you were chewing little erasers. I think Wendy's introduced me to more proper chili and I learned to make REAL chili with beans from scratch myself.

My poor mother would make the most awful 50s style convenience food you can imagine. Creamed beef on toast (again, no onions!), beef stew without herbs or extra broth flavored with ketchup, and of course, vegetables would be boiled into near-paste.

Homemade Yogurt using Lactaid Milk?

Just chiming in with butterfat. I am guessing she is on the Specific Carbohydrate Diet, as I am, and the whole point of the 24-hour yogurt is that it is lactose-free. So many of our recipes are based on it, and our diet will simply not work if we ingest lactose (ie, we get sick).
The SCD diet is used to treat Crohn's disease, celiac disease damage, Small Intestinal Bacterial Overgrowth (SIBO), ulcerative colitis, and autism. It even being used to treat mental health issues since the revelation of the head-gut connection just coming apparent in medicine.

I agree with you if you are looking for quantitative empirical evidence in which to establish a cost-benefit situation or make a cost-based value judgment, etc. Here is a baseline standard you may find more reasonable: If the soil is healthy enough to support earthworms, the benefits to the product are manifold, and the risk is self-limited.

That said, I couldn't tell you whether a commercial organic farm DOES support earthworms given current standards. I do know that properly ripened manure will encourage their growth, and that's the harshest fertilizer I've used in my small garden (1/3 acre).

I think instead of making wild allegations, Wally World should list his references. It's impossible to argue with a rumor.

One huge advantage of organic farming is that organic pesticides, fungicides and fertilizers break down much much faster so don't leech toxins into the water table.

Organic farming practices actually BUILD the quality of soil instead of tearing it down with high sodium fertilizer's which disturb the soil structure and inhibit the activity of beneficial insects (like earthworms, which aerate and fertilize the soil just be living their squiggly little lives.

The crops themselves are actually structurally different on organic farms. If you have ever worked an organic garden, you'd see those odd white fungal threads that attach to root systems and create a beneficial liaison between soil nutrients and plant roots. Do you think it's purely by accident that organic gardens have stronger, healthier plants and taste so much better than chemically enhanced food?

There are a few questions that come to mind. Is the Salmonella that comes in eggs so specific that we can develop an immunity, or does it mutate into other potential gate-crashers?

Does chemical-free feed better protect the chicken's immune system and make it more likely to be free of disease mr/ms scientist? Did you think of THAT...hmmm? And how can anything have nothing to do with anything anyhow? Not much divergent thinking going on there.

I'd also like to know what the average age of an egg is by the time we get it in our fridge.
