Sauce (Hot) Recommendations

I don't typically roam hat sauce stores so I end up with what can be found at the grovery store. I love this thread though and will seek out some of the ones that were mentioned. For a common, everyday Louisiana-style I've been diggin lately RED ROOSTER.

It has more heat, although a similar flavor, than Frank's and what seems to be more paprika. I love my paprika, maybe that's why I like it so much.

I've seen those windshield wiper blades and I have always wondered if they worked well. I just don't know how much baking she does... nor what type of mixer she has... Maybe the egg topper chopper!

I love Harold McGee, Julia, etc. but Alton nails the most basic applications of heat to food in his book "I'm Just Here For the Food." For mags, I would start with "Cook's Illustrated."

Beer Can Blunder !!

I think as long as liquid remains in the can, everything is going to work out fine and no one will die. Beer vs. Soda though? The only thing it really does is prop the bird up. I don't think any flavor is imparted into the meat - and especially not by any light beer in a can.

What's your favorite hot sauce?

"Crystal" for pizza (Lousiana style, vinegar-based, not hot)

"Valentina" for Mexican/Southwestern/South American food (very flavorful)

"Srirachi" for anything Asian (sweet heat)

"Dave's Insanity" for when I'm feeling a little masochistic (pure heat)

Nothing compares with the compatibility of Srirachi though; it can be used on nearly everything. Also, I always keep Cholula and Tapatio around but I prefer Valentina.

Perfume smelling sugar

Just kidding.

If you use a scoop for the sugar, maybe some of the soap from washing the scoop or measuring cup came in contact with the sugar. I'm not a chemist by trade, but virtually nothing malevolent grows in sugar. It is just too hygroscopic.

Oh well.

Washing vegetables and fruits ...

I'm a BIG fan of Dr.Bronner's Pure Castile soap because it is really mild and all natural. His original "18 in 1 uses" states:

"3 dashes in water rinse most Sprays Off fruit & vegetables!"

Has anyone tried this?

Bulleit? Bulleit. How do you say that?

My friend Colin Cook manages Bulleit for Southern Wine and Spirits and told me that more cases of Bulleit are sold in San Francisco than in LA and San Diego combined.

He told me about the Bulleit Revolver:

2 oz. Bulleit Bourbon
½ oz. of Tia Maria
2 dashes of orange bitters

Cocktail is stirred over ice (not shaken!) then strained and served up with a flaming orange peel.

Kombucha

I bought a starter scoby off ebay for less than $10 and have been making it for a couple months at home. I don't drink more than one a day, but I don't know if could even be bad for you if you drink more.

I've added ginger and mint when I bottled (on separate occasions) and both have been wonderful. I highly recommend a little DIY Kombucha for everyone! Here are some pictures...

Kombucha

I'm no doctor but I don't think it can be toxic over time. It is a live yeast culture (similar to what's in unfiltered beer) and a live acetobacter culture (like what's in unfiltered vinegar).

I have been making my own and drinking some almost daily for about 6 weeks. It will settle an upset stomach, but other than that I would believe any health claims you hear.

I tried making a scoby from scratch using Bragg unfiltered vinegar and brewers yeast. It was a total failure and I ended up buying one on ebay. There are pictures of what happened here:
