Thanks - my error last night was not giving it enough time to cook. I'll take your counsel! Do you you use Bob's exclusively when you make polenta? I thought I would try another brand, just to compare.

Yes, thanks. We are able to slice Bob's Red Mill. The problem is in the texture of the Red Mill product. i need another brand that comes out smooth, not chunky, that holds up.

I am looking for a course ground cornmeal for a traditional polenta. One that holds it shape on the Christmas table so that it can be cut in slices. I've tried buying cornmeal at Italian stores, but it seems to be finely ground - and mushes when you turn it out. I bought Bob's Red Mill and tried it - but it was too thick and too "chunky." My polenta needs to be smooth - no big pieces in it - and hold its shape. Thanks everyone!
