Is there anyway to tell when an egg has 2 yolks?

My mother does the same thing - she taught me that is has the added bonus of giving you a chance to sniff the egg/check to see if if is rotten before you accidentally ruin the rest of your good ingredients.

If the nephew is a vegan, will he still eat nutella crepes?

Two suggestions I have, though neither are particularly cheap (for a student budget, that is):
"Les Cinq Saveurs d'Anada" at 72 rue du Cardinal Lemoine - you can get a vegan plate here with tofu, seitan or tempeh alongside steamed and fresh vegetables, brown rice, and the grain of the day (quinoa, polenta, or others) for 15 euro. You can get fish, chevre salad, and other non-vegan foods here as well.
Chez Marianne, 2 rue des Hospitalières-St-Gervais - Middle Eastern food; you can get a plate with four items (like hummus, marinated eggplant, tabouleh, baba ganoush, etc) for around 12 euro. There are non-vegan options too.

As for expressing what he can't eat: "viande" covers the meat, so he can say something like "pas de viande, de poisson, de lait, des oeufs" (meat, fish, milk, eggs). Soy is "soja," tempeh and seitan are the same in French I believe.

I have lots of vegetarian/pescetarian student budget options (I've made it my entire semester here without meat) but unfortunately I know fewer vegan places.

Where to picnic in Paris, if at all?

My experience has been that in most parks/gardens, the grass is off limits. I think there are some places where you can sit on the grass, but I've also been chased off the grass in even small parks by the guards (I actually felt kind of bad for them: everyone was breaking the rules and enjoying the first spring day and here's this guy who has to ruin everyone's fun in the sunshine!).
However, you can picnic on Champ de Mars, next to the Eiffel Tower! It's not uncommon, every so often I get an invite on Facebook to impromptu, "everyone come picnic on the Champ de Mars" events. Another advantage is that it's not far from rue Cler.

Both of the stands are on Boulevard Montparnasse. The one I go to for savory crepes (it must not be the same one you're thinking of; I watch the guy make them fresh each time and though I haven't had a sweet crepe he uses the slightly darker, buckwheat galette batter for crepes salées) is on Montparnasse between Rue Vavin and Rue Peguy (but on the other side of the street). The sweet crepe stand is on Montparnasse between Rue de Rennes and Rue de Vaugirard. Let me know if you try them!

I go to school near montparnasse, and i have two favorite places on the boulevard.
For sweet crepes, I go to a little stand between Rue de Rennes and Rue de Vaugirard, north side of the blvd. It has a brown awning that says "crepes" and "paninis" and is just to the right of a place called something like Pasta PaPaPa. Each crepe is made fresh with generous amounts of toppings (nutella is my favorite, 3 euro). No water to thin down the batter; this is an intense crepe.
For salée, I go to a place on the south side of the blvd just east of Boulevard Raspail; it's a yellow stand that has a lot of paninis, and you can sit down too, but I usually just get my crepe and go. Like the other, each one is fresh made with a generous amount of filling. Average prices; I think egg and cheese is 3 euro 70.
Best part? The owners of these stands are really nice; both of them remembered me the second time I went and they're really friendly and talkative.

a few favorites from a college student in the area:

Minar - an Indian restaurant with a great buffet, their chicken tikka masala and mango lassis are the stuff of legend on campus.

The Phoenician - Lebanese cuisine. I especially love their tabbouleh.

A fun place in Vernon (a little ways away) is The Only Cafe; it's tiny, and the menu changes every day based on what the owner has in his kitchen. Really good gourmet pizza and sweet potato burritos.
