Come hungry. Wear comfy shoes. Don't be afraid to talk to the chefs, you'll find most of them are more than happy to chat. And be prepared to have an incredible time... this is arguably the best culinary event in town!
Pizza in Vegas
I agree with Metro Pizza & Settebellos. Also, Northside Nathan's in Summerlin for deep dish pizza, and Montesano's near Silverado Ranch for their smoky 5 cheese pizza.
driving from vegas to LA - where to stop for a delicious meal?
Along the I-15, I tend to stop at either Peggy Sue's in Yermo for their burgers & onions rings, or the Mad Greek in Baker for a gyro.
Las Vegas - Lotus Expansion Coming
In other expansion news... Raku is in the process of expanding/doubling in size. It's great to see these two restaurant gems doing well enough in this economy to grow!
Las Vegas - Station Casinos 2/1 entrees
It worked at LBS for me last weekend... we paid in cash, though, so I can't say whether you can use credit cards or not.
Moving to Las Vegas, looking to get the lay of the culinary landscape
I'm out in the NW (Centennial) area as well. I love that some parts of the area are still a bit more rural, and it's far enough away from the craziness of the strip, but not too far of a drive to get there for the restaurants, shows, etc.
A few restaurants in the NW area you might be interested in that haven't been mentioned yet: Bob Taylor's Ranch House, which is an 'old school', mesquite grill steakhouse, and quite good; Buzz BBQ, which is a bit to the south and has the best bbq (IMO) in Vegas; Sushi Loca, which has a nice variety of sushi rolls and other Japanese dishes; Indian Curry Bowl, which is the only Indian restaurant in the NW, but fortunately a good one; Market Grill Cafe, which has good Mediterranean food, gyros, etc.; and the Cracked Egg, which is one of my favorite breakfast spots.

Where for best cold noodle dishes?
If you're in/near the Southbay, I highly recommend Otafuku in Gardena. They make their own noodles, and all that I've tried have been fantastic. My fave is the Seiro soba, which is white and quite smooth. Not exactly the cheapest noodle house, but worth it IMO!
Vegas—coolest food shops?

Just thought I'd put in my 2 cents on this topic. In addition to the International Marketplace, there's a great little Japanese Market on Sahara and Rainbow, Nakata Market of Japan, as well as a few good Chinese markets on Spring Mountain Rd. I also agree that Mariana's is a great market; they make an awesome dulce de leche cake which you can buy by the slice.
If you're looking for great off strip restaurants, I'd say head to Chinatown (aka Asiatown). Raku, Ichiza, Tofu Hut, Pho Kim Long, and China Mama (which has the best dumplings in town IMO) all come to mind. There really are plenty of great little non-chain restaurants here in Vegas. I guess the thing to keep in mind is that while we have a disproportionate amount of celebrity chef restaurants, Las Vegas is still a fairly small city, which is probably why there are so few of us bloggers! Things are changing though.. even in the few years I've been living here, I've seen a better quality of local restaurants. And of course with the state of the economy, there are tons of great deals to be had, even at the high end strip restaurants.
