Vegan Fluffy Buttercream Frosting

It may be a misnomer, but I rather think not because it is the flavor we're after, not necessarily the actual dairy ingredients, and this recipe fits the bill. Besides that, vegan buttercream by any other name would be harder to find for those of us looking for a good substitute! :)

In my opinion, the shortening adds stiffness to counteract the melty-ness of the Earth Balance soy-free buttery spread that I use.

Vegan Fluffy Buttercream Frosting

After over 7 years, this frosting recipe is still my go-to for my homemade frosting "needs". I most often use it with cupcakes made with Namaste Chocolate Cake Mix, which I prepare with EnerG Egg Replacer, extra virgin olive oil, and water. No one ever knows they're not "normal" and are free of gluten, dairy, soy, and eggs, and there are usually none left for me to bring home.

Regardless of previous comments about how sickeningly sweet they are and how disgusting shortening is, I've had no complaints about the frosting from people who like sweets. For the benefit of the family member with a defective sweet tooth, I subbed about 1/3 C of the powdered sugar with corn starch and added a little more or different flavoring - lemon, vanilla or almond extract. It isn't the same buttercreamy flavor, but it's decent and meets a need in a pinch.

The one drawback with this frosting is that there's not enough saturated fat in it to keep it from melting when the kitchen gets a little warm. I make sure that the Thai Kitchen coconut milk that I use is cold and that the cupcakes are completely cool when I frost them. I don't have the space to store them in the fridge or freezer, so the frosting sometimes looks a little melty, but that does not affect the flavor at all and people like them.

I'm curious to hear from others who have been using this recipe for a while. Have you made any alterations? If so, how did they work out?

Vegan Fluffy Buttercream Frosting

I have made this recipe for special events at least a dozen times since I first came across this recipe more than two years ago. Everyone who has it really likes it.

I have made it in several different ways. I've made it with Crisco and Earth Balance Soy Garden, with Crisco alone, and with Soy Garden alone, and most recently, with Spectrum Organic Non-hydrogenated Vegetable (Palm) Shortening and Soy Garden and then with solely the Spectrum shortening. My niece and I made it with only the Spectrum shortening this afternoon and it ttastes great. It wasn't smooth, creamy and fluffy this time (not sure how creamy and fluffy are mutually exclusive?) but usually does when I'm able to use a mixer. Unfortunately, I no longer have a mixer.

I use Rice or Almond Dream with it. I've even made it with water for the liquid and it has turned out great.

This recipe has become a staple at our house. :)
