Carmen's Closed

Carmen's (steak) has been closed for the summer to celebrate their 50th anniversary.
I called today to make a reservation and the owner has decided to close permanently.
Can anyone recommend another steak house with similar price range/value.

The servers *are* paid minimum wage which (in Canada anyway) is less than 'non-hospitality' staff.

Stating 'Suggested Gratuity' on the Menu - Good Idea? (or not)

As I mentioned in other posts, my son is a manager, trainer and server at a national chain here in Canada.
MY GF and I were in his restaurant last night and 6 young men (perhaps late teens to early twenties) were thoroughly enjoying the all-you-can-eat diner at one of his tables.
We were watching and listening to my son very carefully and he was friendly, provided prompt service, etc.
Their bill was about $150 and the tip: $6.
My GF's theory is that maybe these young men just do not know what a 'reasonable' gratuity should be, assuming that you are satisfied with the service.
She is suggesting that maybe the chain should implement some sort of polite and obviously well thought-out suggestion in a predominant location on the menu.

How long is it supposed to take for an instant readout BBQ thermometer to provide an accurate display?
The temperature on my 'Marathon Safe T Fork' is still climbing after 30 or more seconds.
Should I purchase a different model?
If so, recommendations for a model that is available in Canada are appreciated.

I have an 'instant' thermometer which isn't very 'instant'.
After about 30 seconds in the bird, the temp was still climbing.
That is when we decided to make the small incision.

We *finally* tried the beer-can chicken using the folded heavy-duty aluminum foil.
I would estimate that the foil (with the chicken stand) occupied about 80 percent of the cooking surface.
It was really good but had lost some of its juiciness.
When we cut into the meat to check for doneness, a lot of juice escaped.
Also, I preheated the Q to 350.
However after I opened the hood and closed it again the temperature (according to the built in thermometer rested at about 250 for the full 1.25 hours.
Any suggestions?

I think that my post was overly complicated. Sorry.
What I was saying is that in my opinion, the spicy *now* at Popeye's here in Canada was much milder than maybe a year ago (in Canada).
So, if you were saying that the Popeye's now in Toronto is slightly milder than in New Orleans .... then maybe a year ago up here, the spicy would have been hotter than down south.

I think that it really depends on whether the restaurant is a 'one-of' or a multi-chain.
I forget the exact buzz words that this type of industry uses but basically...and this is a hypothetical example ....
The head office will suggest to the regional managers that they should try to increase the ratio of appetizers to patrons.
IOW - sell more appetizers with each entree.
This 'suggestion' will then trickle down to the general managers of the restaurant to the managers to the servers.

Think of it more as a 'goal'.

Well, I will speak for my son who is in his mid 20's.
He has been a manager, trainer and server at a one location of a nationwide chain here in Toronto, Ontario.
We have talked many, many times about this topic and tipping in general.
He says that he never provides inferior service due to a lack of ordering alcohol.
His tips, most weeks, are all over the map with and without alcohol being ordered.
His dad, of course, is one of the better tippers :).

My girlfriend and I both think that service is 'better' (friendlier, faster, etc) when we order alcohol before/during the meal.
In other words, we are being partially ignored if we do not order alcohol.
Another person's comments are that if anything ... the service would be faster because they want the patrons to finish quickly so that the table would be available sooner for clients ordering low-cost and high-priced items like alcohol.
