The Best Chocolate Chip Cookie Recipe
oh my gosh! i have a quadruple batch of this dough sitting on my counter right now ready to scoop and freeze. :)
i deleted the expletives when i printed the recipe up as i would be very upset if my grandchildren ever read something like that printed at the bottom of their grandmother's recipe. since the oldest of my 3 daughters is only 14, i'm still quite a ways away from grandchildren, but one can't plan too early! ;)
Pressure cooker cookbook
i always buy cook books on half.com. it is an ebay company and i have gotten some GREAT books on the cheap.
also, santa brought me an electric pressure cooker for Christmas and i have taken to the googles for some great recipes. i made osso buco the other night in it using short ribs instead of veal. i probably saved the cost of the pc by buying said short ribs vs. the veal! haha! anyways, it turned out great!
another great thing to do with the pressure cooker is steam "hard boiled eggs". if you are interested, put them in the pc with cold water and as soon as the pressure sets (this is what i call it when my lid can no longer be opened... without an ax.) let them go for 6 minutes. i swear i got the shell off one of the eggs in one (cracked, obviously) piece! that is opposed to the 3,497,240 pieces i usually pull off of a hard boiled egg. ;)

no. :( i went into the hospital for diverticulits (which i didn't know i had) and now i can't eat nuts!!!! wah!
but i did print the recipe out and hung it on my "i'm getting ready to make this" hook in my kitchen. my husband has asked me about them no less than a half dozen times. to which i always reply, loudly and with a look of mock annoyance "I CAN'T EAT NUTS!" haha!

Balsamic vinaigrette recipe
that is pretty close to what i do for my balsamic vinaigrette. i sometimes use honey instead of sugar and most often add some anchovy paste. and if i don't have shallots, i'll use garlic. or should i say i always use garlic except when i have shallots. ;)

i was going to suggest something completely different: lemon garlic DILL aioli. ;)
Raw Almonds - Some Ideas?
i toss them in beaten egg whites, sugar, cinnamon and salt. toast them on low heat for 2 hours, tossing every 20 minutes. i also do this with pecans. but my hubbin loves the almonds. :)

i coated it in dark chocolate and sprinkled them with a little bit of fleur de sel. i used cream cheese in all 3. they really were a big hit! :)

one year i made them 3 ways: with oreos, with blond oreos and lastly, with nutter butters. the nutterbutters were the favorites. :)
Tiramisu
i've done it both ways and i prefer the consistent creaminess of the dusted powdered cocoa than the added flavor of the grated valrhona. but that might be because that is what i am used to. :)

i made the cooks illustrated recipe yesterday and it turned out fabulous. VERY easy and straightforward directions. i subbed out the rum for jack daniels as my hubby's family is from tennessee and jack drinkers. :) it was as good a tiramisu as i have ever had, if i do say so myself. ;) haha!
Homemade mustard for holiday presents
as usual, i have nothing constructive to tell you about this.
however...
we received homemade mustard last year for Christmas from one of my neighbors and i still dream of this mustard. it will go down as one of my all time favorite food gifts i have received. right in front of the banana bread that was so good i threw it in the trash. and then took it out of the trash and put it down the garbage grinder to be safe. ;) i was pregnant. haha!
so i guess the moral of my story is... GREAT GIFT!!!!
Using up Halloween candy in baked goods, or, "brownies with benefits"?
i make something similar but use a peanut butter/ oatmeal cookie dough and chop up the candy bars and incorporate them into the dough. i call them chunky junkies. :)
What to do with feta cheese? Help, please
i just bought some feta to make beet tzatziki. even though the recipe doesn't call for feta, i fold in about a cup of crumbled feta. it is truly divine! i serve with naan.

Can't remember the last time I cried chopping onion
i just wear swim goggles. 8) my kids think it is hilarious (except when they have friends over) and it keeps my peepers tear free! i even bought some (a couple of years ago) for the ladies who worked in my kitchen and had to cut ALOT of onions. they (also) thought i was nuts until they tried it! ;)

i made a coconut cake today as well as cook's illustrated's old fashioned chocolate layer cake. i also made their frosting but didn't really like the consistency so i added it to the leftover buttercream i had and it was perfect after a little stint in the fridge. ain't nothing like removing everything in your fridge so that you can take out all of the shelves to fit in a 4 layer cake. :) wah.

and if you make them in silicone muffin tins (this is the only application i like the silicone for), it makes them a cinch to pop out!
