If you had one night or were looking at your (knock on wood) final meal and it had to be in Palm Springs or Palm Desert... where would it be and why?

My wife and I will be there for 6 nights and I'm looking for that "can't miss" meal (preferably dinner, but really any meal will do!)

Astoria Dining

Where should we eat in Astoria?! We'll be there 2 nights. She loves seafood - I love steak. What about a nice place to grab a cocktail (without 20 somethings running around)? Open to all suggestions, regardless of what it costs! Thanks!

Oregon/Washington Road Trip

Wife and I are taking a road trip from NorCal to Seattle for a wedding. What suggestions do y'all have for our stops:

Seattle, WA (2 nights)
Portland, OR (2 nights)
Jacksonville, OR (2 nights)

For each town, I'm looking to fill the blanks in the following categories:

Eating in Oregon/Washington

My wife and I are taking a vacation in June and are driving from our home in Northern California up through Oregon to Seattle, then turning around and coming back. Question I have is what restaurant suggestions due y'all have? Our itinerary has us staying in:
Eugene, OR
Astoria, OR
Seattle, WA
Portland, OR
Jacksonville, OR
I'm particularly interested in a very nice and romantic establishment in either Jacksonville or Medford, OR as it will be our anniversary while we're there. We love all types of food. My wife LOVES seafood - crab in particular, while I'm a big steak guy so a good suggestion for each would be much appreciated. Also, any good wine bars or place for cocktails (not a young adult hip club type place, but something a bit more professional and refined) would be great as well.
