healthy pulled chicken

Hi,
I am looking for a healthy version of a pulled chicken sandwich. My last attempt was pretty good, but it called for a lot of sugar (molasses) and salt and my hubby needs to watch his waistline.

Any good recipes you might have that are packed with flavor but low in calories? Thanks.

I found a tortilla soup recipe I want to try .... I'm a novice cook, so I need some help finding some of the ingredients. It calls for dried pasilla chiles and ancho chiles. Where to find in Calgary? And what would I substitute with if I cannot find them? Thanks.

I saw a post on a food blog that called for potato wedges dropped into cold canola oil, then brought to a boil. I want to try this, but am a bit anxious about boiling oil on my stove top. Is it safe? Have you made fries using this method before?

which tassimo model

Hi,
I am looking at a T20 Tassimo model that is on sale ... but then I find out there is a T45 and a T65 model. From what I can see, the T45 looks like there is a water filtration system. For the T65 it appears there is something special about the cup holder. And also a display screen on the T65.

Does anyone have any information on the different models with Tassimo?

I'm making a fairly heavy meal for a dinner party and would like a nice, light dessert at the end. Any ideas? I love lemon mousse, but I haven't checked recipes yet and am assuming it is made with cream.

looking for turkey giblets

I found a recipe to make gravy (I'm getting ready for Christmas already!) that calls for a turkey broth which you make using the contents of the giblet bag (heart, gizzard, neck). (it says not to use the liver). Is it possible to purchase this in a package (probably frozen) without buying the turkey yet? I wanted to make the broth ahead of time (says you can make it up to 1 month ahead). I checked Safeway and they only had a package of frozen chicken gizzards. There were a lot of gizzards in the pack, so I was wondering how much to use, (if I can't find anything else) if the original turkey recipe called for one of each of heart, neck, gizzard and tail.

should my slow cooker be doing this?

I was making a stew recipe which called for 6-8 hours cooking on low. After 4 hours, the stew was starting to lose a lot of the liquid. If I had left it on for 8 hours (which I wanted to in order to soften the meat), I'd have had a dry, burning mess. Yet my sister made the same recipe and had no problems. Could a slow cooker get too hot on a low setting? I have only three settings, warm, low and high. Any suggestions for a good brand to buy? It looks like I might need to get a new one. I checked the brand and it says general electric. I've had it for years with no problems.

help me buy a food processor

hi everyone,
I am an average cook who is slowly learning in the kitchen and getting better. But nothing stellar so far! However, I think I would like to invest in a food processor. While I make a good wage, I am somewhat cheap at the moment as I am paying off debts. I would like your opinion on a fairly decent food processor. I certainly don't need a top of the line model, even if I can afford it. I don't want to spend more than 150$ if possible. What advice can you give me? (if I need to spend more to get a good one, I will relent and pay out the bucks).

thank you goodhealthgourmet! I will definitely try your suggestion. They do have some dijon mustard in them and a mashed potato as well so I hope they will still be moist when I cut back on the fat.

making salmon cakes healthy

I made Melissa d'arabian's salmon cakes from the food network site. I thought they were delicious but I would never serve them to my husband since he needs to lose weight. They contain mayo, bacon, bacon fat and an egg, among other ingredients. Then they are fried in oil. (no wonder they were good). I do not understand why people commenting on the recipe kept saying how healthy these were. Aside from the fish, I thought there was nothing healthy about them. I will try low fat mayo, egg white instead of the egg, one strip of bacon instead of two and no bacon fat .

My question is, how do I get that crispy golden crust on the cakes without frying them? They were coated with bread crumbs, some parmesan and pepper before frying ... I can only come up with spraying each side of the bread crumbs with Pam and then grilling on the barbecue... ??
